To A Wild Rose + Angel Food Cake with a Simple Twist


I made this Pineapple Angel Food Cake for my double h this afternoon. I don’t know why. I was browsing After School Snack ideas and somehow landed on the idea of doing a variation on Angel Food Cake. I based it loosely on this recipe, but I did a total slacker version.  Cake: 1 box angel food cake + 1 large can crushed pineapple. Frosting: 1 container light cool whip + 1 package low-fat cream cheese. It was amazing. I just force fed Kevin two more pieces before bed. :) How’s the frosting look? Do you know that I’m horrible at frosting cakes? It’s because I have zero patience for the task. I always just try to make at least one side look good. :) Next time I’m going to try to allow myself some time and follow these directions from Real Simple.

Before lunch, I managed a 6 mile run at a 7:27 pace. Do you think it was the hot pink or the polka dots that powered me through? And yes, I also played my Wii game. I burned 197.8 calories practicing some Latin dance while Kevin mowed the lawn tonight and I was supposed to be making dinner. (And yeah, those are the evil stairs that tripped me.)


When I found out we needed to water the in-laws’ plants this week, I hatched a plan to get my little fingers on their grand. :) I was in total bliss playing some old high school faves while poor Kevin James slaved away on MBA homework. (I SPY WEDDING SHOES!!!)

I dragged him away for a while to make him watch me play To A Wild Rose by Edward MacDowell. I just picked it up tonight. It’s a simple, but gorgeous song. I was struggling playing the pp and ppp‘s on that piano. I choose to blame it on the piano although I’m sure it’s partially that I’ve lost the extreme sensitivity in the fingertips that comes with practice. I chose this piece to dedicate to Kevin. I always like to dedicate pieces to certain people and think of them while I play. I normally don’t tell them about it because it makes me sound a little cuckoo, but Kevin’s pretty forgiving of his super affectionate wife.

Kevin the Camel. Where was he when I needed him to lug stuff in college? I swear I’ve never seen a look this exasperated from my husband in my life, but he knows how to strike a pose for a good photo!

And if you have absolutely nothing else to do, here’s a little vid of myself playing the aforementioned piece. I post this only because I KNOW my old piano teacher does not frequent the internet. Yes, the sound quality is horrible. And yeah, I make a mistake around the end of the first page. And then I smirk about it because that’s my style. And yeah, I’m doing that thing where I make every possible criticism to myself first so that no one else can. Do you do that? :)

    • Haha. I had no idea. I suppose the task has been relinquished to the person with the most time on her hands. Lol.
