Yesterday’s chocolate nutella cookies became today’s Nutella Stuffed French Toast with Strawberries. I’m a big fan of supersetting key ingredients. In this instance, I wanted to use up the Nutella because that’s just something that calls your name from the cupboard and then becomes a catastrophe that takes a half-marathon to burn off!
I was inspired by this recipe, but as usual, I made my own adjustments:
Nutella Stuffed French Toast with Strawberries
Ingredients
sliced bread
Nutella
2 eggs
1/2 cup milk, half and half or cream (I actually used coconut milk because that’s what I had on hand)
1/4 teaspoon vanilla
1 tablespoon agave or honey
olive oil or butter for cookingAdditional Ingredients
Fresh Strawberries for garnish
Method
1. Preheat a large skillet over medium heat. Combine eggs, milk, vanilla and agave or honey in a large bowl. Whisk well. Spread Nutella on bread and make a sandwich. Dip in egg mixture and coat completely on both sides.
2. Drizzle olive oil or melt butter in skillet. Brown French toast on each side.
3. Top with strawberries, preferably arranged in the shape of a smile or a heart!

Look at that bite! Kevin didn’t even use syrup and had to take a little break to supplement the overwhelming Nutella-ness with some extra strawberries. Yuck! I hate fruit on pancakes or cake or french toast. It ruins it for me.
Not that I ate any. I estimated Kevin’s meal to be over 1,000 calories! Good thing he’s been extremely active today working on some of his “old man projects” and cleaning the basement.
I actually had some Better Oats for my lunch. I’m a huge fan of them! I ate them for my lunch every Mon-Fri in the months of March, April, and May this year. I imported several suitcases full into the DR. Right, Yo-yo? I would have a double packet bowl, and it would power me through the day. Once it hit May, I couldn’t handle the HEAT and I switched to kettle corn! Which was a problem, because once I introduced it to the teacher’s lounge, all my Dominican friends LOVED IT and went bananas. So I’d end up popping 3-4 bags every lunch hour. What I wouldn’t give for another lunch with Yo-yo in Rafael’s office playing hangman.
This was actually lunch for us because we’d been going at some Saturday projects and decided a little brunch would be nice. (Here’s a related article: Why Boring Is Good When It Comes to Shedding Pounds.)
Boydy-boo won some brownie points with the mistress of the house last night. There was SOMEONE LURKING IN OUR BACKYARD around 1AM. I was so proud of Boyd because he barked his little head off. I knew something was going on because, despite his MANY faults, Boyd is not much of a barker. I sent my dashing husband off to investigate. The next thing I knew, I could hear TALKING downstairs. It ended up being a cop. He just knocked on the door because he saw Kevin go down and close the blinds. They were investigating a call they had about the unoccupied house next door. They said they were also looking for a missing person (sad! – I hope they find her soon). A little staring out the upstairs window revealed that there were actually 3 cop cars next door! They ended up leaving in a hurry – I think they probably got another call. Of course, that convinced me that there’s most definitely a stalker or serial killer squatting in the haunted house next door. That’s why I never watch scary movies or read thrillers. My imagination doesn’t need any more fodder. So I had to force Kevin to talk about boring stuff like budgets until I could fall back asleep.
Anyways, Boydy-boo was a hero in my eyes for alerting us about an”intruder” so I fed him some of Kevin’s turkey bacon. I’m SURE he understood the correlation between his job performance and the reward.
