Pot Luck Picks & Family Fitness Fun

Our Sunday afternoon was filled with pot lucks! I decided to do something totally unusual and make something I would ACTUALLY EAT for the church picnic. I love making cakes & cookies, but I try not to eat too much of them. This salad was totally different story. I was inspired by this recipe for Sweet Corn Salad on Two Peas & Their Pod.


3 ears sweet corn, husks removed
2 medium tomatoes, chopped
1 red pepper, chopped
1/2 red onion, chopped
1/2 bunch fresh cilantro, chopped
1 small jalapeno, diced, seeds removed
Juice of 2 limes
1/3 cup feta cheese
Salt and pepper, to taste


1. In a large pot, bring water to a boil. Gently add the sweet corn to the boiling water. Cook 2-3 minutes. Remove from water and let cool. Once cool, remove the corn kernels with a knife. Discard the ears.

2. In a large bowl, add the tomatoes, red pepper, red onion, cilantro, and jalapeno. Stir in the sweet corn. Add the lime juice and stir again. Sprinkle salad with feta cheese, salt, and pepper. Gently stir.

3. Serve cold.

Remember when you saw Kevin husking the corn? That’s what it was for. I also made the addition of a can of rinsed black beans to make it a bit more hearty.

For pot luck item #2 (a going away cookout) I attempted the Chewy Brownie Bundt Cake from How Sweet Eats. Unfortunately, my results were a little disappointing. I was nervous about the bundt cake pan, but I thought I would give it a shot.

It came out of the oven looking like this! B-lack! Yuck! I managed to salvage it by flipping it over, doing a little scrape, and plastering it with some frosting! I do what I can! I’m not sure what I did wrong since I actually cooked it for 15 minutes less than the recipe called for, but I want to try it again. I just know it would be amazing if it came out right because the very center was just chewy & fabulous!! It made me think of Aunt Dianne! I just know she would love these. And Mom and Grandma Mary Kay too. I can just imagine them all sitting around eating it. Getting crumbs all over the floor. Aren’t brownie crumbs the WORST?

Look at Kevin James up on the “stage” at church. Kevin and I did a little backup singer action for the family fun service at church today. Doesn’t he look like such a rocker??? I know his eyes are closed, but there are limits to how nerdy I can let myself look in front of people I barely know in one day. I think the singing and Zacchaeus motions put me over the top for today so I couldn’t bear to be seen taking more photos.

But here we are together. So sweet. Can you even stand it? You can’t see it, but I was sporting my Toms as well.

My lazy Boykin was hoping that I was too stuffed and sweaty after the sunny pot lucks to take him out for a jog. No such luck!

I rounded up my two best boys and went for a jog. Kevin played the role of a race biker and forged a path ahead of us. It was a little sketchy in a few places for me to be running in the dark, but we had a good time.

Did you know Kevin did the Trinona last year? What a studmuffin!! He couldn’t this year because of wedding business conflicts, but I have a SWEET PHOTO of him in a swim cap that I should definitely share sometime!

You can actually see the sweat glistening on my legs, right? Ewwwwwwwwwwwwwww!!! There was a wet spot when I got up off the deck. We tried to photograph it, but that was some tricky lighting! Boydster and I ran 3.51 miles in 27:57 – that’s a 7:57 pace. Hooray! I made it to 35 miles this week! Maybe I’ll try to hit 40 next week if the weather cooperates.

What’s your favorite thing to bring to a pot luck? I always love trying new recipes! A pot luck is perfect place to dump something I want to bake for fun, but I don’t really want to actually eat! :)

Do you like to do fitness activities with your family? I’m so lucky that I get to run with my hot husband a lot as well as my dad, my mom, and even my teenage brother who’s in cross-country.
