I didn’t waste any time getting to my recipe to-do list! Pancakes were the perfect dinner after running over 10 miles throughout the day yesterday.
(Recipe adapted from Sunset magazine via MyRecipes)
Ingredients
- 1 cup all-purpose flour
- 1/2 cup wheat flour
- 2 tablespoons sugar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 cups skim milk
- 2 large eggs
- 2 TBSP lemon juice
- 1/3 cup part-skim ricotta cheese
- Cooking spray
The original recipe comes with some more intricate directions. For example, you are supposed to beat the egg whites with a mixer I didn’t have that option available to me so I just went with it and made pancakes in the normal way. I mean what kind of furnished apartment doesn’t come with a Kitchen-Aid???
I learned pancake frying zen from Jenn, a friend from the DR. I was so impressed with the way her pancakes turned out perfectly that I try to channel her patience whenever I make them at home!
The patience paid off! Every single pancake turned out beautifully. I NEVER remember that happening to me before! I usually have at least one horrific flip or one burnt at the end. Yay!
It turns out that the strawberries were just for show! I actually slathered on the Sugar-Free Blackberry Jam!

What’s your favorite pancake topping? Mine is probably whipped cream. And sprinkles. But if I’m trying to maintain some semblance of nutrition – definitely jam!
