While I was snapping this photo I was cooing aloud,”Blueberry pancakes, I love youuuu.” It’s amazing how good pancakes taste after an awesome workout! When you know that you have EARNED them!
Adapted from AllRecipes
- 1 1/4 cups whole wheat flour
- 2 teaspoons baking powder
- 1 egg
- 1 cup milk, plus more if necessary
- 1/2 teaspoon salt
- 1 tablespoon artificial sweetener
- 1/2 cup blueberries
- Sift together flour and baking powder, set aside. Beat together the egg, milk, salt and artificial sweetener in a bowl. Stir in flour until just moistened, add blueberries, and stir to incorporate.
- Preheat a heavy-bottomed skillet over medium heat, and spray with cooking spray. Pour approximately 1/4 cup of the batter into the pan for each pancake. Cook until bubbly, about 1 1/2 minutes. Turn, and continue cooking until golden brown.
I also added a Chobani Champions yogurt. The banana one I didn’t like. I figured it would add some protein. I thought of it too late or I would’ve subbed some oatmeal. I love oatmeal in pancakes!
I enjoyed mine with a dollop of Vanilla Chai yogurt because I’m not really a syrup fan. Normally I would choose jam, but I didn’t want it competing with the fresh blueberry flava!
Before our workout tonight we had some anoying odds ‘n’ ends business to take care of at Sears – of all places! Let me throw this out there: don’t you ever order online from an old school department store. The dress that was supposed to be delivered to our apartment before my birthday somehow made its way to the Southglenn store! Lucky for them I love that neighborhood! Anyways we had to go to the store to return it because they don’t answer their phones. You know me. I have to be reallllll irritated to actually pick up the phone and call somebody. I couldn’t believe nobody answered. The whole POINT of ordering things online is so you don’t have to leave the convenience of your own bed. Okay, so most people would say couch but I love to snack in bed!
The situation becamse even more ridiculous because I bought the dress on a debit card with my maiden name. A debit card that was stolen MONTHS ago in the Dominican Republic. Haha. Try explaining THAT one!!! I haven’t gotten a replacement card because there’s only a few hundred dollars in the account, and I don’t plan on keeping it. Also I needed it for online transactions during wedding planning and I wasn’t in the USA to go into the bank office. Ooooh boy.
The good news it that I dropped by the optical department and the nice lady measured my PD so I can get my new glasses. Apparently my eyes are really far apart… Good thing I didn’t cheat like I wanted to and just use the average number!
I’m just so tickled that my Garmin works! I can’t stop geeking out. After staying up late last night watching Bart Yasso videos about mile repeats on Runners World, I couldn’t wait to try it.
Because I am so smart, I figured out how to get my watch to Auto Lap at half mile increments so my jogging intervals wouldn’t mess with my speedy pace.
My plan:
1 mile warm-up
1 mile @ 7:20
.5 mile jog
1 mile @ 7:10
.5 mile jog
1 mile @ 7:00
.5 mile cooldown
If you look at the chart, I totally smashed my last mile goal pace of 7:00 running the last half at a 6:45 pace! I’m pretty proud because I also ran a little over a 5k this morning at the gym so was anything but fresh! And I used to be so convinced that I couldn’t run a mile under 7 minutes!
I learned from this workout that I need to do MORE mile repeats 4-6 perhaps or FASTER repeats. The first mile was an absolute cakewalk. I was chatty. The second felt “normal.” The last wore me out, but did not really exhaust me. Yay! I’m so happy. I think Kevin and I are going to institute Track Tuesdays! There was a group training there when we first started. It looked really fun! I’m dying to joing a group or running club – just waiting to find the perfect match!
It was actually getting dark when we finished! The days are getting shorter! Boooooooo!
Do you like speed workouts? I think if mine would’ve been more difficult it wouldn’t have been so enjoyable. But it was delightful to run on a nice, smooth, flat track!
Where’s your favorite place to shop? Online. In bed. Okay. I also love Target. And now Lululemon! I’m also wild about stores like TJ Maxx.
How fast do you think I could run an all-out mile? Maybe I should offer a prize to the closest guesser. I’m really curious after today’s accomplishments. Sub-20 5k, I’m coming after YOU!!! If my dad and my baby brother can both do it, so can I!!
