Mint Oreo Stuffed Chocolate Chip Cookies
2 sticks softened butter
3/4 Cup packed light brown sugar
1 Cup granulated sugar
2 large eggs
1 Tablespoon pure vanilla
3 1/2 Cups all purpose flour
1 teaspoon salt
1 teaspoon baking soda
10 oz bag chocolate chips
1 bag Oreo Cookies, I used the mint
1. Preheat oven to 350 degrees F. In a stand or electric mixer cream butter and sugars until well combined. Add in eggs and vanilla until well combined.
2. In a separate bowl mix the flour, salt and baking soda. Slowly add to wet ingredients along with chocolate chips until just combined. Using a cookie scoop take one scoop of cookie dough and place on top of an Oreo Cookie. Take another scoop of dough and place on bottom of Oreo Cookie. Seal edges together by pressing and cupping in hand until Oreo Cookie is enclosed with dough. Place onto a parchment or silpat lined baking sheet and bake cookies 9-13 minutes or until cookies are baked to your liking. Let cool for 5 minutes before transferring to cooling rack. Serve with a tall glass of milk, enjoy!
I’m thankful for my furnished apartment, but worst wire whip on the face of the planet! The wires just get completely bent out of whack after one cup of flour. Probably would help if I stirred with my hands instead of my feet. Just kidding. That’s just my freakish thumb!

I’m feeling super happy. My apartment is all cleaned. The laundry is all done. My house smells like freshly baked cookies. I ran a little over 7 miles this morning. And my husband’s about to be home for the weekend! Hooray! No word on the jobs yet though. I’m doing my best to be patient. And I truly have no problems at all keeping busy. It’s shockingly, really.
What’s your favorite alternative Oreo flavor? I used to love the coffee kind!! What happened?!?! I also saw the triple stuff in the store with both chocolate and vanilla stuffing. Wow!
What else would you stuff in cookies? I saw recipes using Reese’s that I thought would be fun. Or Rolos for the carmael lovers. My personal preference is sandwiches stuffed with CHEETOS! Or fro-yo!

I am going to have to keep this recipe in mind. I don’t really eat oreos. ever. not that I don’t think they’re good. I just don’t buy them or eat them. I think my husband would like these cookies though.

I’m going to try that recipe. That’s HILARIOUS that you asked about fitbit because I just was reading about it the other night. I’m curious about getting a fitbit or bodybugg someday just to use for a while so I can get a better gauge on calories burned – especially if I train for a marathon someday soon. It’s actually really common for women to GAIN weight when they are putting in high mileage because it makes you be STARVING. I’m actually interested in personal training. I think it woudl be fun!
