(Inspired by PB Fingers Banana Protein Pancakes)
Tropical Protein Pancakes
Ingredients:
- 1 cup old fashioned oats
- 1 banana, mashed
- 1/4 cup cottage cheese (Mine had pineapple chunks in it. That was a surprise!)
- 1/4 cup Greek yogurt (You could use all Greek yogurt or all cottage cheese.)
- 3 eggs
- 1/2 teaspoon cinnamon
- A few sprinkles of shredded coconut
Directions:
- Spray pan with cooking spray and heat to a medium heat
- Combine all ingredients in a small bowl and blend with an immersion blender until batter is relatively smooth and all ingredients are fully mixed
- Pour batter onto the warm pan to form four medium-sized pancakes
- Allow to cook until edges start to harden, about three minutes
- Flip pancakes and allow to cook until batter is no longer runny, about two more minutes
I ended up adding an extra egg because I couldn’t get them to stick together! I’m not sure if that’s good cooking science, but it worked pretty well!
After church, Kevin James and I stopped by Garbanzo Mediterranean Grill for a bite to eat before heading out shopping.
I enjoyed my plate (especially the hummus!!!), but I definitely prefer the Saj Mediterranean Grill meal we had a few weeks ago.
In the car, I snacked on some candy corn I won for being a good girl in Sunday School!
Kevin was the ultimate shopping attendant, but today was another failure. I really AM going to be wearing that Lululemon jacket every day. I have serious wardrobe issues! I got rid of most of my clothes before moving back to the States, and I got rid of all my winter clothes when I graduated from college!!
I’m having kind of an issue with being in between sizes. My Buddha belly does not jive well with the rest of my insanely fit runner’s physique. Clothes actually fit me a little better when I’m a little chubbier to balance it out. Boo. Of course, winter clothes are really expensive this time of year so I can’t really bring myself to spend $60 on a sweater I don’t even really care for. And I don’t have a job yet, so I’m really not thrilled about the professional clothes department.
I’m looking for some good plaid/flannel shirts, but they must be out of style this year? I like looking like a lumberjack so any hints where I might find some cute ones? Preferably with ruffles?! C’mon! Be my personsal shopper!
Are you a candy corn fan? I can’t believe i like it now because I wasn’t too crazy about it when I was younger. I also really like the little pumpkin candies. But not the ones with brown in them. Seriously. That brown flavor is gross. It’s pure sugar so I probably wouldn’t have eaten any, but hey, you win a prize you gotta soak it in.

Try Land’s End for a flannel shirt. They usually stock the basics and I know I’ve seen them there in the past. I hate candy corn. Something about it gives me an immediate headache. I used to love it as a kid, so I keep getting suckered into trying it. Total failure. I thought you were coat shopping? Then why is Kevin holding a dress? It’s not for him is it?!
Lol. I know. I tried that dress on. It was so ridiculous . I couldn’t resist. Leopard print and short in front/long in back. So weird.
I get all my flannels usually second hand at thrift shops. I really like pendelton and I can’t bring myself to pay 120 for a shirt! When I go to Chicago I usually wear a thermal top under the flannel and it’s wonderful! I hope this helps
You’re totally right on the thrift stores!! I don’t have good patience with them, but I bet they are a GOLD MINE for flannels.
