I had two bananas hanging out on my counter today. I hate bananas so I wanted to use them before they started turning black. I bought them this week to use in the tropical protein pancakes and ended up with two leftover. I Googled around a little bit, but didn’t find anything that was quite right. So I ended up doing a little experimenting with several Cookie Friday leftover ingredients.
Monkey Granola Cookies
Ingredients – all measurements are APPROXIMATE
- 2 bananas mashed (three probably would’ve been even better)
- 1 1/2 cups old-fashioned Quaker Oats
- 2 tbsp all-natural peanut butter
- 2 tsp vanilla extract (to mask the banana taste)
- 1 tbsp honey
- A few sprinkles of coconut
- A few sprinkles of sliced almonds
Mix all ingredients together. Bake @ 350 for about 15 minutes. You can mix and match with ingredients. I think these would’ve been really good with chocolate chips. But chocolate chips don’t tend to last too long in the Kreisel household so there are never any just hanging out in the pantry.
I loved these cookies. They’re practically like granloa!! See. I’m embracing Denver after all! I sampled several while waiting for Kevin to get home from work. I think it’s the almonds that make the flavor really special. These are going to be excellent fuel for my evening workout! Do you like my cookie name? Have a better suggestion?
