In case you haven’t noticed, I love to cook. However, I don’t love to cook when I’m starving. I have a serious hunger-induced anger management problem. Kevin and I are not morning people which means we put off going to the gym until the evenings. That works for us right now because we are losers without children or social lives.
Extremly happy losers. Anyways, my point here is that we eat dinner on Dominican time – around 9PM. Even later if we have errands to run. By that time I’m totally not in the mood to start Googling recipes!
Cooking Light to the rescue!
The 1 List, 5 Meals feature is awesome for people who are not natural-born listmakers. I struggle even with my baby iPhone by my side! I chose the Vegetarian Week mainly because I’m a picky eater. Most of the other weeks include some type of seafood (YUCK!!!!) or other red meat that I’m not fond of. Plus the huge pot of taco soup kinda wore me out on meat!
Farfalle with Spinach, Garbanzo Beans, & Feta
Ingredients
- 8 cups coarsely chopped spinach
- 8 cups hot cooked cavatappi (about 12 ounces uncooked spiral-shaped pasta)
- 1 cup (4 ounces) crumbled feta cheese
- 1/4 cup olive oil
- 2 tablespoons fresh lemon juice
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 (19-ounce) cans chickpeas (garbanzo beans) or other white beans, drained
- 4 garlic cloves, crushed
- Freshly ground pepper
- Lemon wedges (optional)
Preparation
- Combine first 10 ingredients in a large bowl; toss well. Garnish with lemon wedges, if desired.
Don’t you love the preparation steps for this one? My tweaks: swapped for farfalle pasta, swapped lemons for limes, and I only used one can of chickpeas.
On the side: leftover foccacia with hummus.
Sabra Roasted Garlic Hummus is my FAVE! Kevin thinks it’s gross that I can eat with a spoon. But it’s sooo yummy!
Plain chickpeas? Now that’s a different story. I tried my best not to pick them out of the pasta, but I still ended up with this little pile. Kevin threatened to put it in a Ziploc bag and make me eat it later. Hehe. Lucky for me I’m the one who does the dishes!
By the way, I think I could deal with the realities of winter if I could get my hands on Kate’s Burberry trench. I’ve been dreaming about it for no particular reason. I’ve seen some copycats at NY&Co. and Express, but they have sold out extremely quickly in my size. Seriously. Within days. I know my online shopping. C’mon, ladies. Wait for the sale price!
What’s your favorite kind of hummus? I said it. Sabra Roasted Garlic. I don’t even like to try other kinds because I’m always disappointed.
Favorite cooking sites/magazines? Cooking Light, Pioneer Woman, and Eat Live Run. And many others.
Kate or Pippa? I love them both. So so much. I just can’t choose.

Yeah, I thought the olive would be black olive (Yummy!), but it was very GREEN olives instead! Yuck!!

You so sold me on the Sabra hummus. I don’t think it is gross at all that you eat it with a spoon. The stuff is just THAT good. I also totally love the roasted red pepper variety. Skip the olive kind. It is sort of gross. Not sort of, it is just gross.
Oh yeah. Roasted Red Pepper is my second fave. I actually hate olives so I wouldn’t even be tempted!
The pasta dish looks really incredible. On a side note: Kate.
