What up?
This is my third night following the Cooking Light 1 List, 5 Meals plan. Monday was Farfalle with Spinach, Garbanzo Beans, & Feta. Last night was the delicious Veggie Fried Rice.
Black Bean Burrito Bake
Ingredients
- 1 (7-ounce) can chipotle chiles in adobo sauce —-> I just used my friends, the jalapeños!
- 1/2 cup reduced-fat sour cream —–> subbed for nonfat Greek yogurt - I have no use for leftover sour cream.
- 1 (15-ounce) can black beans, rinsed, drained, and divided
- 1 cup frozen whole-kernel corn, thawed
- 4 (8-inch) flour tortillas
- Cooking spray
- 1 cup bottled salsa
- 1/2 cup (2 ounces) shredded Monterey Jack cheese
Directions
- Preheat oven to 350°.
- Remove one chile from can. Chop chile. Reserve remaining adobo sauce and chiles for another use. Combine sour cream and chile in a medium bowl; let stand 10 minutes.
- Place half of beans in a food processor; process until finely chopped. Add chopped beans, remaining beans, and corn to sour cream mixture.
- Spoon 1/2 cup bean mixture down the center of each tortilla. Roll up tortillas; place, seam side down, in an 11 x 7-inch baking dish coated with cooking spray. Spread salsa over tortillas; sprinkle with cheese. Cover and bake at 350° for 20 minutes or until thoroughly heated.
Note: Half of the beans are finely chopped to give the filling a thick, creamy consistency. This dish can be made up to 8 hours in advance and chilled; just bring it back to room temperature before baking.
I’m not always crazy about tortillas mainly because I’d prefer to “spend” those calories on tortilla chips. These Life Balance Mission tortillas caught my eye so I gave them a try in this recipe. Loved them. At least the have some nutritional value.
We also experimented with this Tambo Bamba rice. The rice was a real winner. It had some flavor! I was a little apprehensive because a lot of the text – especially on the back of the box – was written in what appeared to be Papyrus font. Papyrus is always a sign of boring, self-published books. But it’s probably a good thing in rice. More organic. Something like that.
As a side note, Kevin recently found out that I’m not the only person in the world who despises Comic Sans font. I think he just thought it was one of my cute little quirks.
He noticed a sign mocking it when he was in the IT area of his office the other day and came home to tell me about it. So sweet.

I inadvertently used hot salsa to top our burrito bake. It made our eyes sweat. (Sometimes my ears sweat too!) Isn’t he the best husband ever for letting me photograph his creepy little eye? It’s probably because I cook for him so much.
It’s no Grey’s scene, but we got sweaty elevator love. After work, Kevin and I hit the gym. I am extremely sore so I was exiled to the b-oring elliptical for 35 minutes. Lucky Kevin got to run 4 miles. I jogged 5 miles this morning, but I’m sooo stinking sore from the Endurance Master workout that it hurts to bend my legs to reach the bottom drawers in the refrigerator. That’s where all the produce goes. I guess I’m going to have to stick with ice cream until they feel better!!
Do you have a preferred font? Plain for internet stuff, but I obsessed like crazy when I was designing the wedding invitation suite. Of course, I ended up with fonts there were practically illegible, but bridezilla was happy.
What do you when you’re sore? I know. I should be doing the ice bath thing. I just never know when it’s going to hit me or when I’m accidentally going to run like 10 miles. So I’m just not mentally prepared for that sort of thing. I’ll do it when I start officially marathon training. Someday. Maybe I should make a deal with Kevin. Either he trains with me or my Vizsla does. It might be a faster way to get my puppy!!
P.S. I’m getting overwhelmed by the deluge of recipes on the blog lately too, but I’m just cooking a lot of new things this week so I can’t help it. I’m sure I’ll find some other fascinatingly trivial aspect of my life to chronicle sometime soon. xoxoxoxoox
