Faithful + Indian Chicken in Cashew-Cilantro Sauce

I was feeling industrious this Monday morning and got all my “chores” done so I could hit the gym at 9 to see my close personal friend, Kelly Ripa. I ran a nice 6.75 miles in the mid 8′s, and did a Nike Training Club quickie. Lunch was leftover crunchy crust mac ‘n’ cheese so I had a bit of extra time on my hands. I picked up Faithful by Kim Cash Tate. Not to throw her under the bus, but Deidre and I were just discussing the fact that Christian chick lit can be super lame. How many Amish love stories and mail order bride romances can a sister read?? This title caught my eye in the library because of the risqué topics it covers including unbelieving spouses, adultery, and fornication. Those are tricky to tackle, but I loved that the book portrayed real people with real problems and pain. That’s life! It reminded me of a Christian version of The Heart of the Matter. The difference being that, in the end, believers have a living hope. Good read. I read the entire thing before Kevin got home. The cover stinks though, right? They could’ve at least used pansies!

Dinner was another recipe from the Flat Belly Diet Family Cookbook.

Indian Chicken in Cashew-Cilantro Sauce

Directions
1. Place the cilantro and cashews in a food processor or blender and process to a paste. With the machine running, add the broth. The mixture will be runny and grainy.
2. Transfer the mixture to a medium nonstick skillet and add the salt. Bring to a simmer over medium heat. Add the chicken and spoon the sauce over it. Simmer, stirring occasionally, for 12 to 15 minutes, or until the chicken is no longer pink. (Cooking time will depend on the thickness of the tenders.)
3. Remove from the heat. Stir in the lime juice. Serve with red-pepper flakes, if desired, at the table.
Super simple! Except that we don’t have a food processor so I had to dangerously chop those cashews with a dull knife! I love easy recipes like this one. Do you see it actually CALLED for crushed red pepper? Nice. Kevin and I enjoyed it over basamati rice.
Good news! I have a chance to temp at Kevin’s office! It’d be a pretty sweet deal because it pay well, and I can quit any time I want. Just boring computer work, but it would give me some boot money! :) I’m also looking forward to buying some professional clothes for interviews and whatnot. I have my eye on this number from J.Crew:

What’s the most boring job you’ve ever had?McDonald’s was actually pretty fun. Probably working at DB&T inputting mortgages! Although I still managed to have a blast with Ella and emailing Deidre 100x per day. Who’s going to be my email buddy if I get a desk job for a bit? (It’s not going to be a lifer!!! haha!) 

Are you a fan of Christian fiction?  If so, what’s a fave? I loved the Christy Miller series growing up, but these days I find it more difficult to find “Christian” books that appeal to me. I also enjoyed Something Beyond the Sky and Reconstructing Natalie = less cheese & preaching + more reality, humor, & life.

  2. I basically really hate Christian fiction. It is lame and the plot is usually so shallow that I can feel my brain rotting away as I read it. I hate when I’m reading poolside while the kids are swimming and someone I know from church comes up to me and says “Oh, I see you’re reading (place name of a non-Christian book here). Have you tried reading Christian fiction?” Yes, I have and it’s poorly written (mostly), unrealistic and boring. But I can’t tell them that!

    I also used to love the Christy Miller series! I also was a big fan of “The Best Friends Club.” It was a Christian version of the Babysitter’s Club and I was obsessed!

    I also find Christian fiction a bit too preachy at times and a bit unrealistic. I wish life could be so easy and uncomplicated! I will have to pick up Faithful! It sounds interesting.

    • I miss Christy & Todd! Lol. I saw that the author has a “new” (I have no idea how new) series about Christy’s friend Katie. I was so tempted to pick that up, but I resisted. Lol.

I think we could all learn more about how to walk our Christian walk by reading more serious books like biographys of those Christians who have gone before us, or other such books that would inspire us on. Fictional books are good too, if they have some kind of moral or lesson wrapped up in them somewhere.

  6. I buy all my work clothes at the Gap or Ann Taylor Loft. The most boring job I ever had was at a salad shoppe. I had to pour dressing into little Dixie cups then put them in the huge walk in. I spilled on the first day and I poured all the spilled ranch back into the tub to hide it and it was then used all summer…. yeah, no shame. I haven’t read too much Christian Literature other than The Narnia series.

    • I’ve been dying to order some Ann Taylor online, but not sure of my size at their store. I really should just go in one and try some stuff on. I’m such an online shopper!

  7. First, such a cute office outfit! I want it. Second, I’ve been eyeing that cookbook at the bookstore for months and what you made from it only makes me want it that much more!

    • Maybe you could find it @ the library? It’s pretty good, but I’m a picky eater so I only really like a few recipes. I hate seafood, and I know I’m not going to grill so those sections are out. Haha. I guess Kevin might grill sometime.
