Peanut Butter Caramel Corn (via Cooking Light)
Ingredients
- Cooking spray
- 2 tablespoons canola oil
- 1/2 cup unpopped popcorn kernels
- 1/2 cup sliced almonds
- 2/3 cup packed brown sugar
- 2/3 cup light-colored corn syrup <—- I somehow lost mine between Target and my house. I subbed extra sugar and water. It worked out!
- 2 1/2 tablespoons butter
- 1/2 teaspoon salt
- 1/2 cup creamy peanut butter <— I added extra pb to make sure the flavor came through!
- 1 tsp vanilla extract
Preparation
- Preheat oven to 250°.
- Line a jelly-roll pan with parchment paper; coat paper with cooking spray.
- Heat oil in a large Dutch oven over medium-high heat. Add popcorn; cover and cook 4 minutes, shaking pan frequently. When popping slows, remove pan from heat. Let stand until popping stops. Uncover; add almonds.
- Combine sugar, syrup, butter, and salt in a medium saucepan; bring to a boil. Cook 3 minutes, stirring occasionally. Remove from heat. Add peanut butter and vanilla; stir until smooth. Drizzle over popcorn; toss well. Spread mixture out onto prepared pan. Bake at 250° for 1 hour, stirring every 15 minutes. Cool completely.
Do you see this genius idea I had? I didn’t have parchment paper so I cut a paper bag in half! Hooray for easy clean-up! I can’t wait to surprise my husband with this when he gets home. I’m such a little geek. I’m going to have to delay posting this so he doesn’t see the post title on his phone!
I did a little too much taste-testing on the pb caramel corn so I wasn’t hungry for lunch. Even after 6.61 miles on the treadmill. The gym was really sunny this morning! There were two blonde chicks “working out” with sunglasses on. I tried to take a surreptitious photo for you, but no luck. Lo siento!
I couldn’t resist this book’s cute cover, and the first couple chapters do not disappoint. I also like that the cover reviewer promised “a serious feel-good factor.” I mean, I liked Hunger Games as much as the next guy, but I felt miserable and anxious the whole time I was reading it. I can’t believe I haven’t read the other two yet. But I really prefer happy books!
Speaking of happy! I got a phone call, and I have a job interview tomorrow! It’s the part-time temp work at my husband’s office I mentioned the other day, but it’s pretty perfect since they’ll be flexible while I job search. I’m going to do a “shopping is my cardio” workout tonight, and if I’m lucky, eat a mall food court dinner!
We also had some positive news about selling our house in Minnesota! I’m not really sure of the details yet, but here’s hopin’!
Most of you guys weren’t fans of tassels on men’s loafers (sigh), but what about these? I’m dreaming of these on the patio of my new apartment! There’s a great DIY on Prudent Baby as part of an awesome backyard makeover she did. Maybe I should make some in candy corn colors! Haha.
If you had a tub of white, cheese, and caramel corn – which would you eat first? The cheez!

What else would you add to caramel corn? I thought about adding some chopped cashews, but I was too lazy. And what about chocolate? Kissables? Sprinkles!

I always pick books based on the cover and the pretty factor! Haha! That is how I read the Emily Giffin books, because the colors are so beautiful!

You didn’t like The Hunger Games, don’t front. When I poured my heart out about (spoiler alert) Rue dying, you pitched a fit about how you didn’t like that book.
