Buffalo Chicken Lasagna + Squat Party!

We were soooooooooooooooo happy to stay in tonight!!! Nothing I love like staying in on a Friday night! While we were hanging on the couch tonight, we were reminiscing about our crazy long LDR when all we could do was sit and talk on the phone. Even though Kevin has to do homework practically all weekend, I’m still thankful we get to be together.

Buffalo Chicken Lasagna  (via gourmand mom)

Ingredients

  • 2 Chicken Breasts, cooked and chopped
  • 1/2 cup Celery, chopped
  • 1 1/2 cups Blue Cheese Dressing* <—– I hate blue cheese so I subbed a little pasta sauce + extra buffalo sauce.
  • 1/2 cup Frank’s Red Hot Sauce (or other hot sauce)
  • 1 cup Ricotta Cheese
  • 1 Egg, lightly beaten
  • 2 cups Mozzarella Cheese, shredded
  • 1/2 package No-Boil Lasagna Noodles

Directions

Preheat oven to 375 degrees. Combine blue cheese dressing and hot sauce in a bowl. Set aside. In another bowl, stir together the ricotta cheese and egg. Set aside. Combine the chopped chicken and celery in another bowl. To compose the lasagna, coat the bottom of a small baking dish* with a thin layer of the dressing/hot sauce mixture. Place two lasagna noodles side by side over the sauce. Spread 1/3 of the ricotta/egg mixture over the noodles. Scatter 1/3 of the chicken and celery over the ricotta. Drizzle 1/4 of the blue cheese/hot sauce mixture over the chicken. Sprinkle 1/2 cup of mozzarella cheese over the sauce. Top with 2 more lasagna noodles. Repeat the layering process until you’ve used all of the chicken, celery, and ricotta. Top the final lasagna noodles with the remaining sauce and cheese. Cover the baking dish with foil and bake for 45 minutes. Remove the foil and bake 10 minutes longer. Cool for 10 minutes before cutting and serving.

Oops! Mine ended up super dry. What did I do? Poured on some more sauce. Put on some more cheese & put it back in the oven. I’m CRAZY for the buffalo chicken flavor so I loved this! I’m also dying to try Tina’s recipe for Buffalo Wing Lasagna which calls for Buffalo Wing Pretzel Crisps!! I love those things!

Served with a side of homemade whole wheat parmesan garlic bread! Perfect dinner for a cozy night in!

We actually threw the lasagna in the oven before we headed down to the apartment’s gym! Lasagna takes forever to cook so it worked out really well. Except that some chick ruined my plan of watching Jeopardy by hogging the cardio machines. She was leaning on the elliptical. Not just HOLDING on. Leaning on her forearms so she could watch a a tv show on her iPhone. Lol. I realize that I am just one lazy day away from that, but I still begrudged her the machine since she was really just wasting time! Lol.

I already ran 5 miles this morning so I relinquished the only working treadmill to Kevin while I did a Nike Training Club workout. Nothing like a squat party on a Friday night!!

By the way, my “interview” went really well. It was mostly just like a little chat about the job and what kind of hours I wanted to work.

The funny part is how hard I worked on my outfit when everyone else in the office was in JEANS for casual Friday. Haha. At least I was forewarned because my husband left in jeans this morning! I’ll be starting as soon as they can do the background check and whatnot, working about 20-30 hours a week. Hooray!! I’m thankful for the opportunity to work a little bit while I continue to work on getting some more CO credentials and looking for my dream job.

What’s your favorite lasagna recipe? I tried Pioneer Woman’s once, but it was just far to meatylicious for me! Of course, I love the lasagna I grew up with made my Amy’s mom! :) And you can NOT east lasagna without bread!

What’s the toughest interview you’ve ever had? I realized something funny today.  I’ve never had like a real serious interview for any job I’ve ever had! For my last job, I had a phone interview since it was in the Dominican Republic. It was really rushed, and I think at that time they were just pretty desperate back then. I know the interviews would be a lot more thorough there now with all the improvements that have been made. :) I can only remember interviewing for one job that I didn’t get – at a bank when I was in college. I’m sure my next interview for a school job will be the hardest!
