The Ultimate Cozy Food: Chicken Noodle Soup Casserole


Chicken Noodle Soup Casserole (via Tasty Kitchen)

  • 4 whole boneless, skinless chicken breasts
  • 12 ounces, angel hair pasta
  • 1 whole Onion, Chopped
  • 2 cloves Garlic, Pressed
  • ½ cups Carrots, Chopped
  • ½ cups Celery, Chopped
  • ¼ cups Butter
  • 1 can Cream Of Chicken Soup (10 Ounce Can)
  • ½ cup Reduced Fat Sour Cream
  • Salt And Pepper, to taste
  • 1 Tablespoon Dried Parsley
  • 1 package (1 Sleeve From A Standard, 16 Ounce Box) Ritz Crackers, Crushed

Directions:

In a large pot of boiling water drizzle some olive oil and 1 tablespoon of salt. Boil the chicken until done, about 20 minutes.

Cook the noodles in boiling water according to package instructions.

While the noodles are cooking, cut up the chicken into 1/2 inch pieces. Drain pasta and set aside. Finely chop onions, carrots and celery.

In a pot saute onion, pressed garlic, carrots, and celery in the butter. Cook until the onions appear translucent, add  chicken soup and sour cream. Mix well. Salt and pepper if needed.

Add the noodles, chicken, and parsley. Stir until fully coated. Transfer to a greased 9×13 pan.

Bake at 350F for 30 minutes or until bubbly.

Remove from oven and sprinkle with crackers and bake 5 – 10 more minutes.

Warm, bubbly, & delicious!

But we weren’t eating chicken noodle sick because we’re sick. Did you know?

I literally haven’t had a cold in YEARS so I’m nervous about living in a climate that includes winter again!

Kevin lied and told me it was “nice & sunny” out!!! BRRRRRRRRRRRRRRRR!!!

Head-to-toe goosebumps at every stoplight! I finally warmed up at around mile 2.5.

Although we are starting to get into that weather where you get a little tickle in your throat from the cold air. Or whatever scientific reason. I hate it. I remember running last year on Christmas Eve in Minnesota after being in the DR for 6 months and just dying!!! Hopefully this year I’ll be able to acclimate gradually.

We ran just over a 5k at an easy 8:52 pace. I also ran a nice 6.03 miles this morning in the gym to round out my super fit day! Haha. :)

What’s your favorite casserole? Kevin and I are like an old Midwestern couple at heart so we love them. Plus I love that I can have it all made and in the fridge and just toss it in the oven right when we get in from the gym. The crusty crunch mac ‘n’ cheese is my fave these days.

Do you like to walk/run/be in colder weather? Not really. But I learned to deal with heat pretty well running in the sun at 4PM in the DR so I’ll adjust… Or just stay in the gym.

Do you have any tips for layering? I’m not skilled in that area. I keep overdressing and underdressing. But I don’t know if I can handle tying long sleeves around my waist. I’m surprised Denver with its insane fitness culture doesn’t have like checkpoints for dealing with this. :) Haha.

  3. That casserole looks ace. On the subject of casseroles vs stews I am firmly on the casserole side of the debate – stews are just rubbish soups.

    I tend to get hot very quickly when doing exercise. I used to play football in the dead of winter wearing just shorts and t-shirt whilst everyone else wore hats, jumpers and gloves. This makes me a real man.
