Cookie Friday: Butterfinger Cookies

I just think they’re flat. But I’ll leave the judgment call up to the man who eats at least 25 cookies per week.

Butterfinger Cookies (via Life’s Ambrosia)

Ingredients:

  • 2 1/4 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon iodized salt
  • 1/2 cup (1 stick) butter, melted, cooled
  • 1 cup packed brown sugar
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 1 cup chopped Butterfinger candy bars (about 8 “fun size” candy bars)

Directions:

  1. Preheat oven to 325 degrees. Line baking sheet with parchment paper. Set aside.
  2. Sift together flour, baking soda and salt. Set aside.
  3. In another bowl beat together butter, brown sugar and granulated sugar until creamy. Beat in vanilla. Beat in eggs 1 at a time.
  4. Slowly mix in dry ingredients until well combined.
  5. Fold in chopped Butterfingers.
  6. Drop rounded teaspoonfuls onto prepared baking sheet. Cook 8-10 minutes or until edges start to brown and cookies are set.
  7. Allow to cool for 2 minutes on cookie sheet. Transfer to cooling rack to cool completely.

Now these WERE super easy to make (love that), but I was a little disappointed by their extreme flatness. This could possibly be because I don’t have a mixer (two weeks until I get all my kitchen stuff back!!) or perhaps I should have also added baking powder. I need a kitchen science class. I seriously think those are two classes girly girls need – Kitchen Science and Wedding Math. 

A lot more useful than Biology and Algebra.

Dinner last night…Fettucine Alfredo With Broccoli

I made a lightened up, veggies added version of fettucine alfredo via a Prevention magazine recipe. It looks beautiful and colorful, but my cheese sauce was incorrect. I did not like it. I did not finish my plate. After running 7.2 miles. So you know it was not good. Of course, Kevin ate it up. Faker. I’m sure this would be delicious if you actually followed the recipe. I had the wrong kind of cheese which made it kind of weirdly gritty, and I’m very texture sensitive. Lol.

Butterfingers on the brain…

I want to try making this “homemade version” – maybe with my sisters this week.

Ingredients:
  • 3 cups candy corn
  • 1 cup peanut butter
  • Chocolate for dipping

That’s gotta be good, right?

I have to get myself to work. I have to be responsible today and clean the entire apartment. When I told my mom that last night she was all like,”Well, at least it’s just two adults. It shouldn’t be that dirty.”

Ha. Ha.

Someone in this house likes to come home from the gym and prop their feet up on the wall. A girl’s gotta STRETCH! :)

What’s your favorite candy bar? I really do love Butterfingers. Although they do like.. stick to your mouth.But they remind me of the neighbor lady we used to shovel snow for when we were kids. So sweet.

And I love the mint 3 Musketeers.

What are you doing this weekend? Spending 14 hours in the car with somebody super handsome naming our (very) future children. Spoiling my sisters, nieces, and nephews like crazy. Seeing “real fall” in Minnesota. Going to Kwik Trip and running with my dad. Getting our insubordinate dog back.

If you lived for 90 days out of a suitcase, what would you be most excited to get back?

  • Our Fiestaware. My wise husband even named this as the item we would be MOST upset about if it got lost on the moving truck. Wise, wise man.
  • My mixer and rolling pin. These things really make life easier
  • Yoga mat, hand weights, and scale. And the rest of my workout clothes.
  • My big coffee mugs!

I think you can see where my priorities lie: cooking, running, & coffee!

    • oh my word. We have like 40 cookies. And no tupperware or ziploc bags. Of course. :)

  6. Corrie, if you don’t want flat cookies, try refrigerating the dough for an hour or so before you bake them. The butter resolidifies and makes the cookies more plump.

    • Wow. That totally makes sense. I love it. That’s right. I remember. You’re an amazing baker! You would know!
