White Chocolate Mocha Cookies (via How Sweet Eats)
1 cup butter, at room temperature
1 1/2 cups sugar
1 teaspoon vanilla
2 cups flour
1/2 cup cocoa powder
2 tablespoons instant coffee powder
1 teaspoon baking soda
1/4 teaspoon salt
1 cup white chocolate chips
Preheat oven to 350.
Cream butter, sugar, eggs and vanilla until fluffy. Add flour, cocoa powder, coffee powder, baking soda and salt and mix until combined.
Fold in chocolate chips. Roll into balls and set on baking sheet.
Bake at 350 for 8-10 minutes.

And this young man peeled apples like a champ! We were a baking dream team! He even gave the ultimate sacrifice of a bloody finger!! That sounds a lot like his aunt’s poor toes!
Caramel apple pie (based loosely on this version from AllRecipes)! I knew this pie would be a hit with Kevin James because he loves apple crisp so much! Perfect fall treat! I’m not a crust fan, but the crust was barely noticeable in this masterpiece. I used a recipe Lisa had lying around which used canola oil instead of the traditional shortening method. It was much simpler, and the result was fantastic!
What a week! Last week I was making Reese’s Pieces Cookies and getting ready for my interview! I start Monday morning @ 8AM. *Yawn* That’s a thankful yawn. Lol.
