The truck with our stuff from Minnesota FINALLY came today. Our apartment looks like this:
Silly Kevin should know that he can’t hide from his stalker wife. Guess what??? My crazy husband tricked me into moving into an internetless apartment. He said he was hoping I wouldn’t notice. Ha. Ha. Ha.
Yeah. We’re at Yogurtini. Can you believe BOTH of the Sbux in our neighborhood close at 8. That’s ludicrous. How am I supposed to get home from work, run 5.55 miles, make dinner, and get to Starbucks before 8 to borrow their internet??? Yogurtini totally bailed us out. And the pumpkin spice + birthday cake remix is delicious!!!
Last night we went grocery shopping for the entire week! This job is really cramping my style, but I buckled down and planned out the whole week’s menus on Sunday. I’ll warn you ahead of time that most of them are from Clean Eating. I was so proud because I’ve always read that healthy people shop the edges of the grocery store. WE TOTALLY DID THAT. Minus canned & frozen vegetables. The only thing we ruined it with was a little Diet Coke!
This recipe is from a paleo website! I thought I would make some friends proud. Apparently I ruined the thought by serving it over brown rice. I did little Googling and realized that grains are banned. That must be tricky.
Coconut Curry Stir Fry (via Paleo Diet Lifetsyle)
Ingredients
- Cooking fat;
- 1 lb tender chicken cut in thin slices;
- 2 cups broccoli;
- 1 can coconut milk;
- 1 1/2 tsp curry powder;
- 1 tsp grated ginger; (SKIPPED! I hate cutting ginger. It makes my hands smell!)
- A good bunch of fresh spinach;
Technique
Prepare the sauce by mixing together the coconut milk, curry powder and grated ginger. Set aside. Stir-fry the chicken in a hot wok. Remove the chicken from the wok, set aside, reheat the wok and stir-fry the onion with more cooking fat for about 2 minutes. Add the broccoli and stir-fry another 3 minutes. Return the chicken to the wok, add the coconut curry sauce and the spinach and cook until the spinach is just wilted and the whole preparation is hot. Optionally garnish with some coconut flakes.
It was definitely too cold for this dress today, but I was dying to try it out and not in the mood to break out tights yet! I picked it up at the Banana Republic Outlet the other day. Total steal. I love one-piece outfits. I paired it with my old lady shoes. I really need to work on my accessories, but the dress is pretty on its own too!
I suffered and injury today that renders my left pointer finger useless so I don’t feel like typing any more. So I’ll save that dramatic story for tomorrow. We have plans to hang out in the apartment lounge like the cool kids we are and watch Biggest Loser.
Do you plan your meals out ahead of time? Low-tech or high-tech? I want to make some sort of system where I copy/paste things from favorite meals, but I really haven’t got there. Plus I always want to try something new. I can’t help it!
What’s your favorite food magazine? I like to read my mother-in-law’s Bon Appetit. And I am loving the Martha Stewart Thanksgiving issue. I forget how I convinced Kevin I deserved that. Probably something to do with working 3 8-hr days last week!

Totally plan out my meals….almost an entire month is advance. Not that I stick to it perfectly, but it really helps. Oh, and I do it totally low tech. I print of calendar pages, fill them in and tape them to my kitchen wall.
I think low-tech is sometimes the best. But I do sooo many recipes from the internet, I need a way to copy/paste!! But it will have to be on the weekend!

The frozen yogurt would totally help heal my wounds about no internet (for a few days at least, and I would need the frozen yogurt every day…)
