Southwest Turkey Meatball Skillet & Smiling in the Snow

Yeah. I know. Meatballs. To me they sound gross and I don’t think I’ve ever eaten them before, but I saw this dish on the cover of Cleaning Eating magazine while we were in line at King Sooper’s and my heart did a little flutter. That was the start of my love affair with Clean Eating. Take that, Cooking Light! Unfortunately, CL has a lot more issues so I’m sure I’ll resort back to them someday.

Southwest Turkey Meatball Skillet
Ingredients
1 lb ground turkey breast
2 lg egg whites
1/4c whole wheat bread crumbs
1/4 tsp salt
1/4 tsp pepper
2 tsp olive oil
1c frozen corn
15oz can black beans, drained and rinsed well
2c diced tomatoes
1/2c chicken broth
1 Tbsp fresh lime juice
1 tsp ground cumin
1/4c chopped fresh cilantro
Directions
1. In a large bowl combine turkey, egg whites, bread crumbs, salt, and pepper. Mix well. Shape into 16 meatballs, each about the size of a golf ball.

2. In a large skillet, heat oil on medium high. Add meatballs and cook 3-5 minutes, turning frequently, until browned on all sides. Add corn, beans, tomatoes, broth, lime juice, and cumin. Mix well. Reduce heat to medium, partially cover and cook for an additional 3-5 minutes, until meatballs are cooked through. Stir in cilantro and serve.

Of course, we all know that I didn’t actually touch raw meat with my bare hands. I made the man of the house do it. While wearing this sticker:

Kevin will attest to the fact that I teared up a little because I WAS SO EXCITED when I saw this sticker on an apple last night. I’ll spare you the schmoopy details, but we like the words “honeybear” and “honeypie” in our household. Mostly inspired by one our favorite Weepies songs.

I’ve HAD IT with people telling me Denver winters were going to be better. The tree out our front door has been so covered with snow that we can’t really even use that sidewalk anymore! Ridiculous! :)

I’m not crazy about having to go outside in the snow now just to get to the treadmill. Doesn’t that crinkly eye just say it all? My paleness is starting to kill me. Seriously. What can I do? I don’t want to start tanning. It’s totally addictive for me. (TANOHOLOICS!)

I had just run for 6.04 miles in the gym or there’s no way I’d be smiling out in THAT weather! :) But look how pretty! Ugh. It’s seriously not supposed to snow before Thanksgiving. THOSE ARE THE RULES! But, I will admit that the sun is finally BLAZING right now. Woohoo!

I am still internetless at home until tomorrow night (boo!!!), but tonight is date night so I have to go Google some restaurants. I mean, what else would we do besides eat? Haha.

What do you like to do for date night? I’d also be open to running a race. And I saw that Rachmaninoff and Tchaikovsky concert this weekend that I’d love to go to… but we should probably work on unpacking for once in our lives.

Did you keep your wedding dress (if you’re married)? Just curious. I heartlessly put mine up for sale today. I’m sure I could also be suckered into giving it away. It’s taking up a LOT of space in our 1-bedroom right about now! :)

  4. Oooo- brrrrr! Mother Nature has broken the rules all. year. long. Next year maybe she’ll get her act together…. As for the whole tanning thing, I do lotions and it works like a charm! Facial tanner + body tanner has been the key for me.
    I did keep my wedding dress- it is hanging up in my parents house.
