Turkey-Spinach Mini Lasagnas + The 1-Mile Block

Turkey-Spinach Mini Lasagnas (serves 4)

Ingredients

Lean Ground Turkey (browned)

Yellow Onion

Baby Spinach

Italian Seasoning and Garlic

Low-Fat Cottage Cheese

8 Whole Wheat Lasagna noodles

Part-Skim Mozzarella Cheese

No Sugar Added Pasta Sauce

Directions (for the multi-tasker)

  1. Start boiling the water for the noodles with a pinch of salt while you begin to brown the turkey.
  2. Dice onion & chop up baby spinach to add to the browning turkey. Add Italian Seasoning and garlic.
  3. Cook the noodles completely while the turkey finishes browning.
  4. In a bowl, combine browned turkey mixture with cottage cheese and pasta sauce. The porportions are up to your discretion/mood.
  5. Place two cooked lasagna noodles in each ramekin. Spoon in turkey mixture. Fold the noodles over the top.
  6. Cover with mozzarella cheese.
  7. Bake @ 340 until hot and cheese is melted!
  8. Hide the 2 extra ramekins to make sure you have leftovers for lunch tomorrow!

You will ADORE this dinner if you love lasagna, but you don’t have hours & hours for it to cook. And trust me, I have a million variations in mind to spice things up! And I’m so happy to have two leftover for lunch tomorrow. Really it’s a genius plan for a couple. I had another broccoli fail! I bought some more tonight, but I forgot to microwave it. By the time we sat down to dinner @ 9, we were too starved to wait any longer! Tomorrow!

I’m excited about our massive new container of garlic. We love garlic almost as much as we love jalapeños! Hopefully that pesto is decent too. I seriously need a food processor so  I Kevin can make some homemade. Kevin almost never does much in the kitchen, but for some reason he is THE MAN with food processors. Pesto. Hummus. He owns them. I think it’s because our last food processor was such a terrible monster, and I could never get it to work!

Boyd was being such a stinking PAIN when we got home from work. I decided he REALLY needed some exercise. So much so that I was willing to sacrifice my body to the November elements (in shorts!!). I know it was nice today, but after the sun went down…. That was such a bummer today. I went out with some co-workers for lunch, and it was gorgeous. But every one of those gorgeous moments was squandered in the office!! But hey, you get a really nice view of the sunset from the 12th floor. I kept thinking today that I should’ve just taken Lisa to my office. We have a mountain view AND a city view.

We were planning to just run around the block once with Boyd and then hit the gym. But when we finished our lap, I realized I just wanted to keep running outdoors. We discovered that we have an awesome 1-mile around block with all right hand turns!! There was one spot that was super icy so we had to spot and walk for 20 seconds time around, but other than that it’s also very well-lit for Blind Pants (me). We did 4 loops at a nice, chatty pace for a total of just over 4 miles. I’m totally pumped about discovering that loop. And I’m pretty sure it’s not infested with wild animals of any sort. I think I’d be more likely to have problems with cars going on to the sidewalk. :)

Isn’t this a cool DIY Christmas tree idea? The Bright Life has an anthology of these “Christmas tree alternatives” especially for those who travel a lot and wouldn’t be home during the holidays to enjoy a real tree. I think some of the ideas are super cute, but I’m pulling for a real tree! We’ll be going to Minnesota, of course, but only for a week. I say we get one ASAP!!

Do you plan to get a real Christmas tree? Yes. I mean, I think I have to. There’s a Christmas tree farm in the McMillin family. I don’t want to be voted out of the family.

Would you rather exercise indoors or outdoors in cold (30′s-40′s) weather? I would have never gone outside tonight if it hadn’t been for Boyd, but I was glad I did. I tend to waste more time fiddling with treadmill and drinking water in the gym! But most of the time I can’t get myself out in the chilliness. The anticipation of coldness just kills me. I can’t see the tv from the treadmill in our new apartment’s gym so that’s a big downer. No more Top Chef: Just Desserts. That show is probably over anyways.

  9. Thank you for the great recipe idea- I have tons of ramekins that hardly ever get used so it’s time to bust them out!
    Good job on your run- that’s really cool that you discovered the loop and kept going despite the cold weather.
    Growing up my family always had a fake tree. Ever since I moved out about 5 years ago I’ve been getting real ones! It’s one of my fiance and my favorite days of the year when we get to go out and cut down our tree!

  10. Real Christmas tree all the way! We usually cut one ourselves, but sometimes have to pay for one already cut. Mattie’s b-day in December convieniently squeezed in there between Thanksgiving and Christmas makes the cutting of our own tree sometimes impossible.
