Easy White Chocolate Eggnog Fudge (via food.com)
- 1 3/4 cups sugar
- 1/2 cup butter
- 3/4 cup prepared dairy eggnog
- 1 (12 ounce) package premium white chocolate chips
- 1/2 teaspoon grated nutmeg
- 1 (7 ounce) jar marshmallow creme
- 3 tablespoons Captain Morgan’s spiced rum (or 1 teaspoon rum extract)
Directions:

Bring the sugar, butter and eggnog to a full boil in a heavy medium-size saucepan.

Continue to boil for 8 to 10 minutes over medium heat, stirring constantly to prevent scorching.

Remove from heat and stir in the white chocolate chips and the grated nutmeg, stirring until the chocolate is melted.

Add marshmallow creme and the rum or rum extract; beat until well blended.

Pour into a buttered 8 or 9-inch square pan.

Cool at room temperature, then cut into squares

Store in an airtight container in the refrigerator. May be frozen for up to three weeks.
So festive!! I decided to make this for the treat exchange for our Young Marrieds group at church. Kevin hates eggnog, and I’ve been dying to try a few eggnog recipes. They randomly took a poll last week in class to see who liked eggnog so I knew about half the people would be excited for it!! It was really simple minus the ten minutes of stirring! I was nervous it wasn’t going to set. It did. It just took a long time!!
I decided to double-soup it at Panera for lunch today after church. I always want the black bean soup, and that’s what I always have in mind when I go to Panera. But the Sonoma Chicken Stew with Dry Jack Cheese Biscuit caught my eye!! I love trying the seasonal offerings in restaurants! Soup is probably my favorite thing at Panera, partly because the calorie count in their sandwiches/salads is pretty high. Speaking of calorie counts, love that they list them on the board right next to the prices!!! It really does help you make an informed decision instead of just feeling like you’re eating healthy because you’re at Panera!!
I loved the stew, but they tricked me by adding peas. You better believe i picked every. last. one. out.

I spent a lot of time multi-tasking on the treadmill this weekend. I’m taking the Praxis II on Tuesday. Can’t say I’m looking forward to that. Since I’ve only taught “specials” (music, P.E.) before I hadn’t been required to take it. Now I need to brush up on my science/math. Definitely not my strong areas!!!
I was actually studying while stirring the delicious eggnog fudge. Kevin was sitting on the couch in the other room, and I was asking him questions about subtracting negative numbers. After he finished answering, he was like,”That sounds like a very complicated recipe you’re making!!” Ha. Ha. Ha. I guess he didn’t realize I had my book over there. I found that my area of strength in math is DECIMALS. It’s because I’m always doing running mileage stats!! That cracked me up. Anyways. It’s Tuesday morning. I hope I pass. I think I had a pretty decent shot of passing without studying at all, but let me tell you — that science stuff was just not in there any more!! So I’m glad I’m reviewing.
We got our Christmas tree this weekend. Isn’t it darling? Hope we get to have a big real one next year, but it’ll be fun to try to keep this one alive. Especially since we’re leaving for a week!!

I got a new pair of running tights! When I was supposed to be Christmas shopping for other people!! Oops!! To be fair, I REALLY have been needing them. I only have one pair of running pants and they are like — hyperwarm. Plus I accidentally shrunk them a little bit so they are hyperwarm highwaters!! Not an effective combo.
I’m ashamed that I wore these to the grocery store — my Dominican friends would be appalled. But I just wanted to try them out!!!!! But I actually made a LIST this week so we are so golden! I’m excited!
Kevin was feeling super helpful and prepared the baked potato bar of deliciousness while I was at the gym. Meatless chili, green onion, Greek yogurt, cottage cheese, crushed red pepper, jalapeño, and teeny bit of mozz on mine! I loved it so much. We made double so we’d have some for leftovers! Woohoo!!
I really hope you had a great weekend!! It’s almost Christmas!! As soon as I have this lame test behind me, I’ll be hyper festive!! Can’t wait!
Favorite kind of fudge? Eggnog and peanut butter.
Least favorite subject in elementary school? Math. Followed closely by science. I probably hated science more in college. Favorite? English. By a lot.
Favorite thing to order at Panera? Soups!! I also liked the BBQ chicken salad they had over the summer. Not sure if that’s year round or not since we don’t really hit Panera that often. I wish they were open later, because we’re generally not ready for dinner till 8 or 9. We’re so bad.
When’s the last time you rode on a grocery cart? I know I can’t be the only one!
Oh yeah. And do you like my blinged out blog header for Christmas? That was a colossal waste of time, but there are glitter and sequins. It can’t be helped!



















That fudge sounds SO yummy! I am definitely partial to peanut butter fudge. I also LOVE pumpkin fudge, but I have not had it in forever.
Also, the double soup idea at Panera is BRILLIANT! Why have I never thought of that?! What did you think of the new soup (minus the whole pea situation)? I have been contemplating trying it.
My favorite subject was ALWAYS English! Gosh, I could not get enough of reading! What was/is your favorite book?!
I did REALLY like the soup, although I will say that one of the winning factors was the little dry jack chees biscuit. So I don’t know if you would be a fan of that aspect.
I always loved girly books like A Little Princess, Little Women, and Anne of Green Gables. I still like girly books. I really like the Time Travelers Wife, and I get into nonfiction as well.
I always envy the people who can read while on the treadmill. I guess I’m excessively bouncy or something because I just can’t do it. Love your winter outfit! Although I hope you’re not freezing. And egg nog is one of my favorites of the holidays. I love the egg nog fudge idea, so genius.
4.0 was the max i could go with that book, but at least I wasn’t just sitting there!! The eggnog fudge is awesome. And it’s super easy to make minus the 9 minutes of continuous stirring. But just listen to some Christmas music!!

The fudge was awesome. I was so happy to get it out of my house right away though. It was super rich so if you over-induldged you would definitely feel sick! I have leftover eggnog so I need some more recipes!!
That fudge looks so yummy. I’m a fan of egg nog, so I’d be all over it! I love soups from Panera too! In NYC all restaurant that have over a number of locations are required to post calorie info on their menus. It comes in really handy when I go to Starbucks and am tempted to grab a cookie.

I remember when I took the Praxis. It was so easy. Even the math part. And I don’t have anything near math skills. I remember thinking that the test was only to keep complete idiots out of the classroom. Of couse that was like more than a decade ago so maybe they caught on to how easy it was! Good luck!
