We had some b-a-n-a-n-a-s leftover from teaching Children’s Church yesterday. I personally despise the little yellow fruit so I had to find a way to incorporate them into something. I’d usually go with pancakes, but I was in the mood for something a little fluffier and fancier!
Banana Wheat Waffles
Adpated from Better Homes and Gardens New Cookbook
1 cup all-purpose flour
2 ½ cups whole wheat flour
2 tablespoon baking powder
½ teaspoon salt
¼ teaspoon freshly ground nutmeg
4 egg yolks
3 cups milk
¼ cup canola oil
1 ½ cup mashed banana
2 egg whites
Combine all-purpose flour, whole-wheat pastry flour, baking powder, salt and nutmeg in a large bowl. In another bowl, beat egg yolks slightly, and beat in milk and oil. Add mashed bananas. Pour the egg mixture into the flour mixture and mix just until combined.
In a small bowl beat egg whites until stiff peaks form. Gently fold egg whites into the batter being careful not to over-mix.
Pour ½ to 1 cup of batter into lightly greased waffle iron. Bake according to the directions of your waffle iron. Repeat with remaining batter. Makes 12 4-inch waffles. Serve with maple syrup and sliced bananas.
Warning: The recipe above makes TONS of waffles!!! We were chained to our tiny wafflemaker for what seemed like hours! Lucky for you, they can be nicely frozen and turned into healthy DIY Eggos.
Today’s workout: 6.26 miles in 1 hour, 2 minutes. That was quite possibly the slowest 10k of my life. My muscles were a little sore from yesterday’s excessive dive into cross training so my first mile was an excruciating about 12 minutes. Yes, I even WALKED a little. Once I got warmed up, I was good to go, but I had to run over 6 miles just to compensate for my slow pace at the beginning and get my pace below 10 minute miles!!
Next stop: STARBUCKS! Did anyone else score one of these awesome mugs? It entitles me to 31 days of free coffee at Sbux just by presenting the nice numbers mug. We also gave a few as gifts, but only to really awesome people!

Banana waffles sounds like the best breakfast ever!! I love banana pancakes, but I’ve never tried it in waffle form. Since I like waffles better than pancake in general, banana waffles must be EPIC!
You would LOVE them. It’s a little fussy because you have to beat the egg whites separately, but definitely worth it!
Nice job with running even though you were sore! When I’m feeling like that I tell myself to at least try and run a mile. After the first mile or so it usually gets a little easier – half the time I end up having an unexpectedly great run!
I know, right. My first mile is always lousy, and then I have to try running faster at the end to get a better overall pace!!

Wha?? I so did not know about those Starbucks mugs! What a brilliant idea. My husband would have loved that, haha! Also, I’ve never thought about making extra waffles to freeze and reheat just by popping them in the toaster – I seriously love that idea. Brilliant!

I wish I could run a speedy 10K. I’m still a new runner, so I can’t wait for the day I can consistently run sub-10 min miles for more than like…2 miles hahaha.
