Stuffed Red Pepper Soup + What Was in the Box


I can’t think of a more perfect January recipe.

Just Pinterest it right now, you know it’s going straight to the top of your to-cook-soon list. You have one of those, right?

It comes to us from the awesome blog of Skinnytaste. Where else? I know what Kevin would say to that. “Why don’t you ever cook anything from Fattytaste?”

Stuffed Pepper Soup

Servings: 6 • Size: 1 1/3 cups soup, 1/2 cup rice
Calories: 261.2 • Fat: 4.8 g • Carb: 37.5 g • Fiber: 4.7 g • Protein: 17.6 g • Sugar: 6 g
Ingredients:

  • 3 cups cooked brown rice
  • 1 lb 95% lean ground beef (or turkey)
  • 1/2 cup chopped green bell pepper
  • 1/2 cup chopped red bell pepper
  • 1 cup finely diced onion
  • 3 cloves garlic, chopped
  • 2 cans (14.5 oz each) cans petite diced tomatoes
  • 1 3/4 cups tomato sauce
  • 2 cups reduced sodium, fat-free chicken broth
  • 1/2 tsp dried marjoram  <— no clue what that is, did not use it!!
  • salt and fresh pepper to taste

Directions:

In a large pot or dutch oven, brown ground meat on high heat and season with salt. Drain fat if any, reduce heat to medium-low, then add peppers, onions and garlic. Cook about 5 minutes on low heat.

Add tomatoes, tomato sauce, chicken broth, marjoram and season with salt and pepper to taste. Cover and simmer on low heat for 30 minutes. Serve about 1 1/3 cups of soup in each bowl and top with 1/2 cup cooked brown rice.

Makes about 8 cups.

And now we got some more leftovers!! OH yeah.

I wasn’t really in that much of a mood to eat after the gym tonight.

Yeah. Something was NOT sitting well in my stomach. I run my best on a nearly empty stomach. You’d think I’d have this figured out by now. I didn’t eat my Greek yogurt until almost 5, and I think that threw off my game.

But I persevered. I said to myself,What would do you do if this was your marathon???”  Yeah. I seriously talk to myself like that. It’s actually a good trick. Also a good trick when you working out is to think,”Is this what I’d be doing if Jillian Michaels was watching?” You’re welcome!!!!

So. I know you are all wondering. What was in that box!??!?! Man, I wish it was a Vizsla puppy!!! But it was a….

Ninja blender/food processor. I’ve been whining endlessly for months about not having a food processor so we finally gave in. It’s one of the last things we bought in 2011 before we started being stricter about our budget. Haha. We’re also apparently going to become smoothie people. I know Kevin can’t WAIT for me to try out one of those smoothies with SPINACH in them!!

For tonight we kept it simple with frozen strawberries & blueberries, ice, plain Greek yogurt, and a little Truvia. Kinda tasted like fro-yo so that’s obviously a win.

Do you have a blender? Are you a smoothie person? I usually don’t like smoothies from like, say coffee shops. I just don’t trust them. I know they put like a whole CUP of sugar in there. Haha. Got a great recipe for us?

    Hey Corrie- I saw your comment on Ashley’s blog- I got married last summer too! And it’s funny- I was actually in Colorado when you got married to attend my cousin’s wedding! You’re so lucky to live out there- my hubby and I are literally obsessed with moving outside of Boulder.
    I got a Vitamix for Christmas and am obsessed with it. I think that the Ninja is supposed to do pretty much the same thing. I have used it at least once every single day since I got it- I love it!

  7. I have never been a smoothie person, until this year. However, I would never order one at a coffee shop, either! As long as I am controlling what goes into the blender, I am good! I love putting frozen bananas in smoothies–it gives the consistency of ice cream and a but of natural sweetness.

    Also, I totally talk to myself when I run…it is kind of ridiculous. I try not to talk out loud, but sometimes I forget!

    I was going to say that marjoram is some kind of mustard-y powder stuff, but according to the first commenter, apparently I’m so, so wrong, haha. I don’t cook much, obviously. I do have a Magic Bullet blender and I love it! I usually only make protein shakes in it, but it did come with a handy book of recipes that I should probably make use of.

    I love that you ran an extra mile to practice on tired legs – you are a champ!

  10. I’m definitely making that soup!

    we are smoothie people. we make them a ton, especially in the summer. Plain greek yogurt, a little milk, and whatever combo of fruit we have. Our favorite is blueberry, strawberry, banana. Sometimes I’ll get a mango pineapple frozen fruit mix. If I’m using frozen fruit I don’t use ice at all. Ryan enjoys his smoothies with frozen yogurt or ice cream instead of greek yogurt…but I only give in to that once in a while. ;) It’s very rare that we actually have frozen yogurt or ice cream in our freezer.

    you should get a juicer! we aren’t big time juicers because we still like eating regular food ;) and you need a lot of fruit just to make one juice, but orange, apple, ginger juices are awesome and good for you and make a great breakfast or snack!

      I would love a juicer… I was actually reading about juicing in that 150 Healthiest Foods book. Kevin would totally choose ice cream instead too!! But I’m kind of the dictator of the kitchen. Haha.

    The soup looks great; we may have to try it. And marjoram is related to oregano if you ever want to substitute. I usually see it in fall/winter soups; also garam masala and fennel. :) I’d love to make smoothies and to put vegetables in them without Kedrick knowing but the one plastic piece on our blender broke and we just haven’t gotten the replacement.

    Your workout = crazy but I’m pretty sure Jillian Michaels would approve. I love doing her workout DVDs because I feel like she’s watching me while I’m working out. Totally rocked the 30 Day Shred this morning which leaves me more exhausted than a marathon on the elliptical!

    We totally love smoothies. We use organic yogurt (whatever flavor you want-I personally like vanilla) and whatever fresh/frozen fruit you have handy, a handful of ice and like 1/8-1/4 cup of honey (depending on if you use plain yogurt or flavored). Very healthy! Do you think the flavor of your soup would be drastically affected by leaving the meat out?

      Good! We were trying to figure out the ratios so that helps!! I think the soup would be great without meat!! I didn’t even realize it was supposed to have meat in it till the last second. I did it for Kevin this once. I’ve been cracking the healthy whip in January!!
