I love making a special breakfast on the weekends. And I always love finding ways to trick Kevin into eating spinach & broccoli. And for breakfast? That’s a major win!!!
Easy Tortilla-Crusted Broccoli & Spinach Quiche (inspired by my favorite blogger @ CNC)
INGREDIENTS:
- Four 7-inch whole wheat tortillas (I used 2 because mine were pretty thick)
- 1 cup broccoli florets
- 2 tablespoons extra-virgin olive oil
- 1/2 red onion, finely chopped
4 ounces sliced mushrooms (about 1 1/2 cups)1/2 cup of fresh spinach, chopped
- 1/2 cup feta crumbles (or mozzarella)
- 3 eggs
- 1/2 cup plain Greek yogurt
- Salt and pepper
DIRECTIONS:
Preheat the oven to 375* F. In a greased 9-inch pie plate, overlap the tortillas to make a crust; place on a rimmed baking sheet.
Meanwhile, steam broccoli until crisp-tender, about 1 minute in the microwave. In a skillet, add the olive oil and heat over medium-high heat. Add the onion and spinach, season with salt and pepper and cook about 3 minutes. Stir in the broccoli; season with salt and pepper.
Spread evenly in the tortilla crust, then crumble the cheese on top.
In a medium bowl, whisk together the eggs and yogurt and season with salt and pepper; pour into the tortilla crust.
Bake on the baking sheet until just set in the center and lightly golden, about 30 minutes. Let rest for about 10 minutes before serving.
So. That was easy! The tortilla crust was a little crispy to cut but tasted delicious. Of course, Kevin had to add the crushed red pepper & hot sauce, but still a winner!
Last night…
I think SMOOTHIES are the answer to one of my life’s great problems. It’s called — we generally don’t eat dinner till almost 9PM. Meaning I haven’t eaten in about 9 hours. 5 if I managed to sneak in a yogurt or something at work. I’ve struggled with getting really bad headaches and stomachaches while making dinner/waiting for it to cook. And then raging post-dinner hunger (that’s like 11PM – not cool!). So I’m hoping if I have a quick smoothie after the gym it can help control my blood sugar anger and hopefully I won’t be so hungry later on. I just have to be careful not to rack up an absurd amount of calories and cancel out my workouts. NO ADDED SUGAR. Yeah, I said added. Fruit has SUGAR in it, people!
This is a very green post! I made a little pizza for our Friday night in. The sauce was made in the blender with Greek yogurt, GARLIC, basil, and spinach! It was so good. We scarfed it while watching a few episodes of the West Wing.
In super important news: I think I’ve decided on my first race of 2012!!
I, of course, have chosen to do the 10 miler! It’s in 2 weeks, so I had better get crackin’. I’m excited because I don’t do very many races, and it will be good motivation for a nice long run! I think I’ve almost decided on what my first marathon will be!!! I’ll keep you posted.
Do you like quiche? Seems like a weird senior citizen kinda food to me, but this one with the tortillas is pretty good!!!

Love quiche, but don’t ever make it because I try to stay away from dairy. No January races planned, just too cold and I’m a baby about that! It’s about 42 deg here today, and I’m thinking about running outside, we’ll see:)
Mmm I LOVE quiches. They’re everything I love in a tasty baked good. No races this month for me, but I’ll be heading to LA the first week of February for one!

Oh, I love quiche and miss them so much. Cheese is such a key component.
We love quiche! Have you ever made “individual omlettes” in muffin tins. That one is a hit because everyone can doctor theirs up however they want.

Yummmm that all looks so good! I definitely vote yes for the smoothie idea – I could never go 9 hours without eating! I usually keep mine pretty simple…frozen fruit, milk, and some kind of protein powder typically.
