Oh por fin. Something Kevin’s been waiting for since we got married. And I’m not talking about me learning that Boyd is, in fact, unteachable.
We made crepes!
Almond Meal Crepes Recipe by Me!! Can you believe it? That never happens. Inspiration via every crepe recipe on the internet.
- 1/2 cup almond meal
- 1/2 cup whole wheat flour
- 1 1/2 cups unsweetened vanilla almond milk
- 2 egg whites
- 1 whole egg
- 1 tablespoon unsweetened applesauce
Coat pan with nonstick spray before each crepe. Pour 1/4 cup of batter into pan and spread it out with your spatula. Cook about 1.5 minutes on each side. Top as desired.
I’m not going to lie. They were a pain to flip, and I made Kevin man the pan the majority of the time. I let him eat basically all of them since who knows when he’s going to get them again. And they evoked this sweet chain reaction:
It’s worth noting that Kevin told me he how much he absolutely loves having his picture taken as he eats.
Monitoring crepes (or pancakes!) takes a little patience at the griddle. I recommend this app to keep you busy:
Thank goodness the answer wasn’t Pachabel’s Canon in D! Nothing like a little Classical Music Quiz. They should make these into Jeopardy questions! The quiz is a little bit too easy since there’s typically only one piece in the correct genre in the multiple answers, but I still had fun.
Crepes or Pancakes? Kevin definitely prefers crepes. I like something a little heartier. I’m a runner!!
