So far so good with the Salad Week. I liked tonight’s even better! I seriously cleaned my plate down to the last leaf. I have a hard time accomplishing that with a salad!
- Spring salad mix
- Cherubs (or other mini tomatoes), salted & peppered
- Turkey bacon
- 2 TBSP Light Balsamic Vinaigrette
With a side of Udi’s toast, spread with Melt!
Those little Cherubs were seriously amazing. Not mooshy at all. I had mooshiness in fruits/vegetables so tomatoes are iffy to me. But these were so good even with just salt & pepper! It made me want Caprese salad sometime soon!
I paid an unexpected visit to my husband’s office today… Although we work for the same corporate headquarters (for now!!!), his office is a few blocks away from mine. It was beautiful in Denver today so I volunteered for the task of delivering a new company credit card to one of the VP’s. Of course, I couldn’t resist stalking Kevin. It was so much easier to sneak up on him in his Winona office!! I think his chair is more comfortable than mine, and hey, we have the same stapler!!
While I was there, I conducted a random trash can inspection.
Busted!!! Is that Peanut M&M wrapper I spy??? Not to mention all the Diet Cokes!!! I need to start stopping by more often!! Haha.
Guess what? I had Kevin walk me out to the elevators when we were about to leave. There’s this little space with only the elevators. You have to use a badge to get into the doors so there’s a little waiting area. We were saying our goodbyes, and I leaned in for Kevin to give me a kiss on the cheek. Haha. No one was there!!! He hesitated. He would! And by the time he worked up the courage, two guys came through the door while he was halfway to my cheek!!! Haha. I laughed so hard. Especially since they were two IT guys I recognized from my building! The scandal!! I’m sure they had no clue my husband works for the same company, but they had to have recognized me. They see me every day since my “cubicle” backs to IT. Of course, then I had to get on the elevator with them. I wish I had known where the stairs were! He only works on the third floor. Lucky (I’m on the 12th!!).
Okay. I can’t got on Kevin’s case tooooo much about those M&Ms. Tonight I realized that we downed an entire bag of Red Hot Blues in less than 24 hours!! I did some quick calculations (in the car on the way to the gym, no less!), and if we both ate an even half — that’s 1,280 calories. I never even really sat down and ate any! Obviously, the nighttime snacking was a little rampant. Can I blame it on the Salad Week? Nope. I wanted to prescribe an extra 30 minutes at the gym tonight, but I’m working on being a little more levelheaded about those things. It was better for us to get home so Kevin could do homework so we can actually see each other for a few minutes tonight! Nonetheless, I did 2.31 miles of stairs + 3.37 miles during Jeopardy! Done and done. I heart cardio days!
Do you like BACON? I’m not a huge fan, actually. But turkey bacon is okay in small doses like this.
Are you a nighttime snacker? I’m sure it’s our #1 worst habit. Dinner at 8:30PM and snacks at 1030PM. I know, I know!!!!! Abs are made in the kitchen and all that.
Are you a morning person/night owl? Oh man. I totally woke up on the wrong side of bed today. But I generally start to get really energetic and inspired around 10PM (when Kevin & Boyd would like to be sleeping).
