Oh, they may be flourless, but what they lack in flour, they make up for in butter and sugar!
Well, you know Kevin is the one who eats all the cookies and rates them. But I definitely eat more of the dough. And this dough was fantastic! That’s an important factor in a cookie recipe, right? It totally tasted like chocolate frosting. Mmmm!!
Flourless Mexican Hot Chocolate Cookies (via little bitty bakes)
- 1 cup powdered sugar
- 1 teaspoon ground cinnamon
- 1 cup unsalted butter, softened
- 1 1/2 cups granulated sugar
- 2 large eggs
- 1 tablespoon vanilla extract
- 2 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 2 cups unsweetened cocoa
- 2 teaspoons ground cinnamon
- 1/2 teaspoon chile powder (Corrie Anne used cayenne pepper…)
Heat the oven to 375 degrees F. In a shallow dish, stir the powdered sugar and 1 teaspoon cinnamon. Set aside.
In a large mixing bowl, beat the butter and sugar with an electric mixer on high speed until fluffy. Add the eggs and vanilla and beat until mixed. In the same bowl, add the baking powder and salt and beat until mixed. Add the cocoa cinnamon, and chile powder, and beat on medium speed until mixed well.
Roll the dough into 1 inch balls, then roll into the powdered sugar mixture (if dough becomes too soft to roll, refrigerate it for 15-20 minutes). Place two inches apart on ungreased cookie sheets.
Bake 10-12 minutes. Allow to cool 2 minutes before removing from cookie sheets and setting onto wire racks to cool completely.)
My boss’s family just got back from vacation in Mexico and brought back a bunch of vanilla. She gave one to me since I’m always bringing in the baked goods! So of course, I had to use it in these cookies. It’s only fitting!:)
These really turned out beautifully. They’re totally soft and chewy inside, but just hard the outside that you can pick them up. Otherwise they taste like a brownie!!! So good. These are definitely the kind of cookies that taste the best fresh out of the oven. But I took a bite this morning… they were still good. I totally take a bite out of cookies and put them back in the cookie jar. Haha. Kevin doesn’t mind. It’s usually just to test and see if I deem them good enough to share with other people. I don’t really test Kevin’s judgment in that area since he thinks that anything with sugar in it isdelicious.
Friday afternoon WOD:
I typically get to have Friday afternoons to myself and work out with Kevin later, but tonight, we’re going to a Rockies game!
First, I ran 3.63 in 28:20. That’s a 7:48, but ugh, I was feeling it. Of course, I chose to run at about 2PM when it was 80+ degrees. I wanted to muli-task and work on my tan. Haha. Those freckles are going to be popping tonight!
Afterwards, I scrubbed the tub (to cool down from my run!) and did ZWOW #16.
15 Minutes AMRAP
- 10 renegade rows
- 10 weighted overhead lunges
- 10 squat jump burpees
- 10 crab touches
- 10 sumo deadlift high pulls
I made it throughalmost3 rounds. I was only up to 6 crab touches of round 3 when the timer went off, but I finished the round anyways.
Boyd is super helpful when you’re working out on the floor. He comes over and licks of sweat. I don’t even need a towel!

Happy Weekend, Homies!! Oh. And one piece of good news. All my endorsements for CO teaching license are finally through!! I can’t remember if I mentioned it on the blog, but they messed it up the first time around and I ended up having to pay again and wait again. So now I’m licensed K-6 Elementary (general classroom) and K-12 Music. I am never changing states again. Haha. Yeah, right.













Oh my gosh! I promise you, that entire batch of cookies would be gone if I made them! No self control!!!
I’ve had to start putting the dogs in a different room when I do yoga at home. Otherwise there’s usually one licking my face and one laying down on my yoga mat! I can’t do downward dog around a dog!
These cookies look SO good! And yes, the cookie dough has to taste good too.. duh!

Transferring teaching licenses is such a pain. You definitely deserve a cookie after that! I judge my cookies based on the dough too, and these ones look fantastic

Congrats on the licensure! That is a huge accomplishment….I hate dealing with the red tape, bureaucracy, and mistakes! I am not looking forward to getting that process going when I change states this summer.

hmm.. spicy is probably a strong word here. they more just have a hint of the flavor if that makes sense.
