Today was dreary. It was rainy and freezing in Denver. On the way back to the office after lunch, I actually broke out my parka. Kevin was every the gentleman, picking me up on the side of the road by my office, and dropping me off right in front of the apartment door. Spoiled!
We were discussing chili over lunch as a dinner option. But then the sun broke out a little bit so we decided to go with lasagna. Yes, I plan meals based on the weather!
Individual Veggie Basil Ramekin Lasagnas: Boil 8 whole wheat lasagna noodles. Blend together one package of low-fat cottage cheese with basil, a few cups of spinach, and 10 baby carrots. Add garlic, Italian Seasoning, etc. Layer in ramekin with a little mozz cheese and a little pasta sauce. Bake at 350 for 20 or so minutes.
Boyd helped. But he didn’t get a lasagna. He’s a regular Little Red Hen around here! We were both tempted to eat two, but opted to save one for lunch tomorrow and have a little snack later instead.
Speaking of snacking…
We picked up this new flavor of Wheat Thins over the weekend. I procrastinated on letting Kevin open the box because I knew they would be gone within a matter of hours after we opened them. I love new flavors of favorite products. I’ve also always loved the spicy tabasco Cheez-Its! And don’t even get me started on the Cheeto variations!
I spent some down time at work this afternoon making a meal plan. Notice my red marker tool?? I haven’t been on top of this for what seems like weeks, and I just have to say. Poor preparation leads to unhealthy eating and unnecessary spending. I really believe that. If I don’t have it planned out, we’re more tempted to go out to eat. And if I’m trying to plan something at the last second, even I wil succumb to the Boring 3. So we hit up the grocery store right after work, and I was so proud to see that our shopping cart was a total rainbow!!!

I just barely made it through 3 rounds. I think we were still feeling the Spartacus! I ran 4.83 miles before & after that workout.
Haha. When we stepped out the door to go to the apartment gym, there was a girl about my age propping up a camera trying to get a self-timer picture with her boyfriend. Haha. I guess I should have asked her if she was a blogger. But she had no idea what good hands she was in. I, of course, took several shots, both directions to make sure she got something she liked. They were so happy! Haha. Nerds.
Second. A girl in our apartment gym asked me how to do a burpee!! I got to demonstrate. I was so excited. I demonstrated several variations. I think it was TMI. I also wanted to ask her to meet me at the gym to work out with me. But I thought that might be stretching it the first time we met. Haha. You know next thing. Remember in FRIENDS how Monica tries to get Chandler in shape? That’d be me. Jogging at the door. But it did make me realize again, man, I’d really love to train people. You know, I’m always hoping people think that I’m a personal trainer when I’m bossing around Kevin. “Knee over ankle! Chin up!! Don’t sacrifice your form!” Haha. I need to study for that test. Maybe this summer will be a good time? If I could just get laid off!
Ahhh… there’s nothing quite like Monday morning coffee, right? I usually take mine black, but I had some natural creamer on hand since I plan to start making my own iced coffee own of these days. I felt I needed it this morning!
Any proud moments today? I’m hoping somebody asks me demonstrate box jumps tomorrow. I’m going to start hanging around that little gym with a clipboard! Haha.
