Isn’t Sunday just extra sweet when you know you don’t have to go back to work on Monday?
We had a fairly leisurely — minus the excitement that always comes with teaching first graders in Sunday School. We made Joseph’s coat of many colors paper bag puppets!!!!
Skinny Blackberry Cobbler (adapted from Southern Living)
- Large package of fresh blackberries
- 1 TBSP lemon juice
- 2 TSP vanilla extract
- 1 large egg
- 2 TBSP agave nectar (or sweetener of your choice)
- 3/4 cup almond meal
- 1/4 cup all-purpose flour (could probably use only almond meal)
- 6 TBSP Melt buttery spread (melted)
Divide blackberries among four ramekins. Mix all other ingredients together. Spoon cobbler mixture over blackberries. Bake at 350 for approximately 15 minutes.
We went to see What to Expect When You’re Expecting this afternoon. At the Landmark Theater because you get complimentary popcorn and Diet Cokes! I know we’re going a little bit crazy. This is our second movie of the year but I kind of can’t resist the J-Lo. She was my favorite character too! Maybe because she’s the one who adopted a baby from Ethiopia! Cameron Diaz’s character was pretty funny too because she basically played a pregnant Jillian Michaels type. Ha! A little too much delivery room footage for my delicate sensibilities, but nothing gross-out.

Are you in? For one or both challenges? The Soul Detox reading plan passages are super short. I’ve been reading them in bed while Kevin is shaving. The running is just a MILE. More than likely 10 minutes or less. Even if it takes 15! I actually thought the RW challenge went through Labor Day! Ha! It’s just 4th of July!! That’s not bad — even Kevin said so!
P.S. I mentioned in my last post that we put in an offer for a house. Well, they had another bidder as well (first day on the market – those lucky ducks!) so they asked us to both put in our highest number. We did, but the seller still rejected both offers saying that they were too low for such a short time on the market. Boo! We’ve refused to budge so we’re seeing if they come back to us. Otherwise, we know that it’s not the place for us! Although it does have literally the most beautiful refrigerator I have ever seen and a treadmill room AND a piano room. Haha.
