Mexican Lettuce Wraps + HOUSE!!!


This would be great Monday night meal to detoxify yourself a little bit after a junk food hangover. I actually made it through this weekend without one, but I’d be lying if I didn’t say it took some effort!

Mama Pea’s Mexican Lettuce Wraps! Sadly, they were missing the avocado. So sad. We can’t find a decent one at Sooper’s! It was my first time ever roasting chick peas. Man, I am just not that crazy about chick peas although I do love hummus. However, I think they are much better roasted. A little crunchy!! But I think I’d choose black beans every single time. Kevin said it was a nice change of pace. I think I do tend to overkill the black beans a bit. Is that even possible?!! I’m not sure.

UPDATE: OMG. KEVIN IS EATING OREOS RIGHT NOW!!!!!! HE’S UNDOING ALL MY HEALTHY COOKING!! In his defense he only ate 2. And those have been in our house for at least 10 days now. Isn’t that crazy!? That’s only because he had the Chocolate Chip Cookie Dough Sandwich Cookies!

Straight from Bob!

I love his tattoo arms. I told Kevin that like three times in the car on the way home. Kevin apparently thinks he can outshine Bob because he’s taller.

The workout was a 20-minute circuit straight from Fitness magazine. I kind of thought it would be easy since workouts from girly magazines are sometimes a joke to me. Running intervals on the treadmill @ 6.5MPH doesn’t really challenge me. But this was unexpectedly sweaty!!!!

4 Rounds AMRAP of the following exercises – 45 minutes on, 15 seconds off.

I didn’t take the 15 second break – just enough time to switch between exercises. I used 10lb weights which wasn’t too bad since there was only one exercise that required the use of both dumbbells. And it was a dead lift! I want to do this workout again. I feel like you could do Jump 180s every day andnever master them. You can always do them faster. They killed at the end of each circuit.

Alright, alright. I’m sure everybody just scrolled right through that WOD babble to get to the good stuff.

We came to an agreement with a seller on our house!! The one we wanted last weekend. We stuck to our guns and after a week of no other offers, they were a little more ready to negotiate! We have the inspections tomorrow, and we should be in there July 8!!!!!!

A little preview?

I just had to lead with the fridge… a very crucial part of our house!!! And it’s gorgeous!!!

More kitchen. The pantry isn’t pictured, but I love it so much. It’s like walk-in! No more stuff on top of my refrigerator or above the cupboards!!!! I will be able to find the brown sugar and quit buying it every week!

Porch swing!

That’s all you get for now. But it’s the cutest little bungalow — 4 bedrooms. Lots of rooms for Vizslas, pianos, and treadmills. Or kids. ;)   If you’re familiar with Denver, it’s in the Highlands/Sunnyside area. And yes, I’ve already been researching nearby gyms, schools, and Sbux!

Can’t wait to close and hoping everything goes well with the inspection, blah, blah, blah, and business stuff. Trying not to get too too excited because things have a tendency to fall through for us. But if it works out, come visit me!!!! Now you have a place to stay in Denver. You can request anything from my blog for me to cook for you, you can play with Boyd, and go running with me. Okay, well, you don’t have to run with me if you don’t want to. As much as we’re excited about the house for our little family, we’re also hopeful to use it in ministry. I’m sure I’ll be sharing further about that at a later date… maybe when we’re actually moved in. :)

How many places have you lived this last year? Last year at this time, I was still living in the DR! I moved back with my parents for a few weeks before marrying Kevin James. We got the call about Kevin’s job on our honeymoon, and moved out to Denver in early August. We lived in one temp housing for 90 days (I MISS THAT GYM!!!), then another for a week, and we’ve been in this teeny tiny 1-bedroom since the end of October. At that point, we still hadn’t sold our house in MN (thank the Lord it sold in December!!) so we didn’t want to move into anything more expensive. I hope this next year finds me in one place… But if it doesn’t it’s not the end of the world! Every time I move, I downsize so it gets easier & easier!

What’s your favorite color for kitchen appliances? I just wondered this when I was house hunting. I like stainless steel, but white is okay too. Black is kinda not my fave. I kinda ruled out one house because it had new black appliances. Lol. Okay, so it wasn’t a great house anyways, but I wondered why would they do that? So maybe some people like it? Kinda like some people like gross things like bananas and ketchup!

  6. LOVE it! At first I was scared to scroll down because I thought maybe you were talking about the House series finale and I haven’t seen it yet… hahahah. :) I love stainless steel appliances! It has to feel great to finally get settled in. For the first time since I moved out at 18, I resigned a lease last year! :)

    I’m a stainless steel girl too. Ours are white- and they’re okay, but we are planning to switch them out one by one.
    CONGRATS on the house though- it looks beautiful!!! How exciting (and maybe I’ll get to see it in July!) ;)

  16. What a great kitchen! I want all my appliances to be covered by the same wood as my cabinents (except my oven and stove). I’m weird about kitchens…I want all white with a grayish/white granite.

    Oh my! It’s totally gorgeous! And I’m a little sad that we’re moving, considering you’re going to be in my part of town. We should hang out once before I leave so I can show you the ropes in the new neighborhood. There’s a Menchie’s & a great burger place (Park Burger) at 32nd & Clay, and my favorite Starbucks (where I’ve been hanging out since school’s out applying for jobs) is at 38th & Wolff.

      Kevin was relieved to hear that there’s a fro-yo lace nearby!!! Lol. And it’s important to know about the best Sbux in the neighbhorhood. We’ll have to talk – I need to know how much longer you’re in town!
