My mama always used to make fruit pizzas and veggie pizzas in the summer. Trust me when I say I always preferred them to the alternative cold dish — tuna salad. Yuck! Haha.
I had refreshment duty for our Marriage + class, and I was in the mood to bring something other than a sugary dessert.
Start with:1 Quick & Easy Whole Wheat Crust. I let it sit for quite a while because I hit up the gym and showered before coming back to it. I tend to be impatient with bread dough so this was for the best. My yeast grew so much that I had enough for this whole pan plus some random bread sticks to go with dinner!
“Sauce”: 1 packaged reduced fat cream cheese + a few tablespoons nonfat Greek yogurt (to desired consistency) + 1 packet Simply Organic Ranch Mix. The sauce was amazing!! We were licking the sides of the bowl like it was frosting.
Toppings: I used broccoli, cauliflower, carrots, and green onions. I probably would’ve added more, but I didn’t want to scare anyone off.
This was the first time ever I was hoping for leftovers. I’m forever trying to pawn cake off on people, but this was a different story. It made a great weekday lunch today!
I had a slice along with some of the leftover salad jar fixings. For some reason I couldn’t stomach the salad today! I didn’t like the black beans so cold, and I felt grossed out by the tomatoes because I saw some of them moldy. So I made Kevin finish it!! Boyd got a few of the tomatoes. He can use the antioxidants.
Here’s a little peek into our every day lives. This is exactly what happens when we tell Boyd to “kennel up!” so we can go back to work after lunch.
He immediately rolls over on to his back to be petted and eventually has to be dragged into the bathroom. The bathroom is spacious. It’s not like he’s in a crate. And all he wants to do is laze around anyways. What a big baby!
Today’s workout:
We found a posh park the other day when we were biking around. It’s seriously plush. Get this. I’ve probably run past it 50x!! But I’ve never seen it because I don’t run with glasses/contacts. Hilarious!! But it’s beautiful and super quiet. It even has this world trail thing with different workout stations!! We plan to try it out someday soon.
We ran 4 miles in 32:51. A decent 8:12 pace!!! I was pleased with it. Guess what?? Kevin and I exchanged some initial planning emails for a possible fall marathon! We decided that once we are in our house, we will register! And that will be that!! We figure if we have a house, we’ll be reasonably settled and likely to still be in the area!! Hah! So we’re pre-pre-training!! Can’t wait to have an exact date!
Running together outdoors is a little trickier than on side-by-side treadmills so this will be an adventure!! Especially since we will be treadmill-less come mid-July!! At least it’s summer!!! I wouldn’t be doing so well if it was January!
Kevin grilled up some burgers tonight which we enjoyed with double sauces. I ate almost all of my sweet potato fries before the burgers were done. I was just starving!!!
I’m totally sold on the Frank’s BBQ sauce! It’s amazing. I prefer to put it on the side and dip it so I don’t make myself sweat!! And both have them have extremely minimal sugar/calories. Hooray!
Totally random question, but Do you like to fly Southwest? Kevin is watching a video on it for his master’s class. It was actually very distracting while I was trying to blog. Lol. They were talking about how they tested different seating methods. I hate the no assigned seating. It makes me anxious. I think I would probably do better if I was flying alone, but when I’m with Kevin I’m always so disappointed if I don’t get to sit with him!! Lol. That sounds even more ridiculous when I type it.
Ever had a cold veggie pizza? I was surprised by how many people had never seen one. I thought it was super common. Especially to make them out of those pop tube croissant crusts.

















My dog used to always do the same thing until she suckered is into bribing her with treats. Then she suckered us into getting another dog and letting them both roam the house together…
I have always flown Southwest. A group of girlfriends and I sat in the very back of the plane one time and chatted with the flight attendants. They liked us enough to let us speak to everyone over the intercom and welcome them to St. Louis and then Oklahoma City. It was the best flight I’ve ever been on, and I’m actually really scared of flying.
And cold veggie pizza is my jam.
That’s so fun!! I want to welcome people over the intercom! We’re getting suckered into another dog too. Hopefully soon!!
I love southwest! The people are so nice, they almost always land early, and give you fun drinks and peanuts. What more could a girl ask for. Never had cold ranch pizza – sounds interesting?!
I put hot sauce on everything, or at least I would if I could!

Greg and I ALWAYS fly Southwest for a few reasons. #1, they’re usually the cheapest. #2, you can check 2 bags for free. #3, you can change your flight with no fee or cancel it, and just use the money for a future flight. ALSO- if you book your flight and ticket price drops, you can use that money towards a future flight! The no-assigned seating can be a pain, but I think Greg and I have only had to sit apart once (which really isn’t a big deal!) and we probably get on at least 10 different planes a year. The boarding process is SO much faster than others with assigned seats, too!
Also- Southwest flight attendants and captains are ALWAYS friendly and fun. Sometimes they sing and tell jokes.
Okayyyy! I better give it a second chance!! That’s definitely true about the bag checking!! I didn’t know that about changing flights!!! That’s really good to know!

That pizza sounds amazing! I love flying Southwest! As long as you check in 24 hours ahead of time you will probably 98% of the time be able to sit together. They board you in groups A, B and C and if you are in A or B you really wont have problems finding two seats together…C on the other hand…prob not. I like it though!! Its pretty much all I fly…

I haven’t flown Southwest, but I did buy my boyfriend a ticket with them as a gift once! He said it was fine. (Minus the fact that the same weekend they had a couple problems with planes having to make emergency landings because of problems, it was all over the news! He wasn’t too excited about that, haha.) It makes me nervous though so I always opt to go with a different airline. I don’t know why, they usually are so much cheaper!
This definitely looks like a better alternative to tuna salad…I love tuna steaks but just can’t get on board with the canned stuff! And for what it’s worth, I kinda prefer cold pizza to fresh out the oven

I do like flying Southwest. But I do get really anxious that James & I might have to sit apart! I always make him check in really early so we get a lower number and get to board nearer to the front of the line. We’ve never had to sit apart, so I don’t know why I get so nervous about it!
