I don’t think this card is going to get to him in time, but I’m so looking forward to my family visiting. They’re all going to be here in the beginning of July. Just in time to unpack all my boxes.
Kevin was pretty upset he didn’t get anything from Boyd. He kept saying how proud he was of Boyd. Oh my.
We can’t get ENOUGH of buffalo sauce this weekend.

We went biking last night in Cherry Creek Sate Park — a nice 7ish mile loop. I’ve been keeping track on an app, and I’ve already put over 25 miles on my bike! You know I can’t resist tracking things.
We split an Almond Joy candy bar that we won in a friendly Sunday School competition (our adult Sunday School class — lol — we didn’t compete against the kids we teach). Actually I had 3/4, and Kevin had 1/4. He ate his Mounds bar long ago!
So I’m a slacker sometimes. Kevin wanted choc chip pancakes for dinner. “Normal” pancakes. When I saw this packet for 99 cents, I couldn’t resist. He always grumbles when I try a version with Greek yogurt, PB2, or some such nonsense.
While Kevin was scarfing down pancakes, I had this little power dinner. Spinach + Alexia sweet potato fries, topped with 1.5 fried eggs. Kevin seriously makes the best fried eggs. He mixes the yolk in so it’s not all drippy and gross, and he put in tons of hot sauce. I could smell the hot sauce from the other room. I want to eat these eggs every day now.

One of my favorite dinners is scrambled eggs with fresh spinach and mushrooms. Yum!
Yum, that salad reminds me that we’re having salad for dinner too! I hope it turns out as delicious looking as that one.
I’ve been reading so many buffalo sauce recipes lately. And I LOVE buffalo sauce. But I cant eat the blue cheese with it so… I’m in a major dilemma.

I like them just about any way. I just learned how to poach an egg, too! It’s sort of weird how eggs can be cooked 10000 different ways.
