Congratulations to my smarty-smart husband for his new job in finance!! He starts tomorrow. Same company. Still in Denver.
Maybe it’s because I started his day off right?
I told Kevin to remind me in the morning that I was planning to make this dish or I’d never get out of bed o time!! It takes 20ish minutes to bake so that’s definitely earlier than usual for me!
Pineapple Upside Down Baked Oatmeal (via Munchin with Munchkin)
3 tsp. brown sugar
¼ fresh pineapple, peeled and cored
2 cups rolled oats (not instant)
2 Tbsp. maple syrup or agave
1 cup unsweetened applesauce
½ cup cashew cream (or any milk of your choice)
½ cup water
12 raspberries or cherries (optional)
1 Tsp. vanilla extract
¼ tsp. almond extract (optional)
¼ cup almond meal (apparently this is optional because I totally missed it)
Preheat oven to 375
Spray a muffin tin with cooking spray.
Add chopped fresh pineapple. Sprinkle each mould of the muffin tin with ¼ teaspoon of brown sugar.
Place the pineapple circles in the muffin tin moulds. You can optionally add a cherry or raspberry to each as well.
Combine remaining ingredients in a medium bowl.
Fill the muffin tin to the top with oats, covering the pineapple. Press down to ensure the oats are surrounding the fruit. It should make about twelve oatmeal cakes.
Bake uncovered for 25 minutes. For a light crust, broil for an additional 3-5 minutes until lightly browned.
Cool on a rack for ten minutes. Circle the edges of each oatmeal cake with a knife to separate from the tin. Flip the tin onto a large plate to remove the baked oatmeal.
I used fresh pineapple, and it was so wonderful!!!!!! I forgot the almond meal. And the cooking spray! It was fine! I wasn’t quite awake yet!
Here’s Kevin blinding Boyd… he gets a little too excited when we allow him out in public. We took him to swim with the other cool dogs in the fountain again! He loves that place. We love it because all the other dog owners compliment Boyd’s swimming abilities. The ONE thing he’s good at it. Seriously. Boyd couldn’t catch a ball (or a piece of food) to save his life!!! We were out and about for 2.5 miles and called it a day. We had a LOT of office gossip to fill each other in on!! It’s for the best. I’ve been crazy sore and haven’t taken a break in a while.
Last night Kevin was so confused because I was in the bedroom being super quiet, but my Macbook was sitting out by him in the living room. Silly Kevin – I was reading!! This book seems like it’s going to be sooo good. I’m through page 100 or so. I quit reading because I knew it was going to upset me too much before bed. And I was right — I did not sleep well at all!! I was tossing and turning for hours. I know I take things WAY too personally in books, and I generally avoid WWII books for this reason.But I know I’m going to finish it!! I have to see what happens!! Anyone else missing Summer Reading programs from when we were kids?!!!
We went to lunch with some of Kevin’s co-workers today, and one of them spotted a woman using one of these phones!! In the restaurant. Would you use one in public? I guess she just had it hooked up with her iPhone. She had quite the Legally Blonde type setup going on with some very expensive hand bags an accessories. Go girl!!!
Would you use the pink phone? Lol. I have no idea why I would in public, but I could see it at home.
What’s your favorite genre to read? Or a good book that you’ve read lately. I think I’m going to make a summer reading goal of some sort! I might have some “transition time” between jobs this summer so maybe I’ll have more time to read!!
