As we were preparing dinner for the family tonight, I knew there was something missing. I could just tell there wasn’t going to be “enough food.” That’s how the idea of making a healthier a type of baking powder biscuits popped into my head. Bread + potatoes were always big meal stretchers in our family of six kids!
My lovely assistant, Hannah was kind enough to measure out 14 TBSP of Earth Balance (yeah, we had to double the recipe!).
Earth Balance Flax Baking Powder Biscuits (adapted from Spark Recipes)
- 1 1/2 Cups Flour
- 1/2 Cup Ground Golden Flax Seed
- 1 TBSP baking powder
- 2 packets of Truvia
- 7 TBSP Earth Balance Spread
- 3/4 Cup of 1% Milk
According to the Spark Recipes directions, you were supposed to mix the Earth Balance with the dry ingredients – some pastry blending action, followed by rolling out and biscuit cutting. But my sisters and I aren’t the most patient people in the world, so we just mixed it all together and opted to create drop biscuits! Not quite as cute, but delicious!!!

Ooops! I got up with Kevin this morning to make his little sandwich and lunch bag. I started my coffee, but it was soooo early. So I got back in bed and snuggled with Boyd for a little bit. I see this becoming the real routine.
Today’s workout was with this sassy little muchacha!! Doesn’t she look sweet in all pink on her little Barbie bike?
Yeah, really sweet until she rear ends you on the first block!! Ouch!! I made her ride in front of me after that, and we successfully covered over two miles!

No one is exempt when I’m around – Hannah’s first burpee!!!
Coaching Josiah through some burpee deadlifts! My little brother is a great xc runner and baseball player, but I think I have him in weights so far!! Unless I keep up my awesome training!
Both my little sisters did an entire 26-minute yoga dvd with me. I was proud of Hannah’s side plank! AJ was a little more inventive with her poses, but it was a blast! We locked Josiah out so he couldn’t mock us.
Soooo… the piano is coming tomorrow! Hooray!! We had the genius idea to rip out the carpet in our front bedroom AKA my piano studio/office. We want to take out the carpet in all three bedrooms, but that one seemed the most logical place to start since it had wood underneath. We’re having the piano professionally moved so we figured we might as well have them move it all the way into the correct room.
Well, check what we found:
Two types of wood!!! Bummer. And a lot of painted footprints!! Haha.

I have one creative idea. I’m waiting for the right moment to present it to my more practical husband.
How do you encourage family to workout? We’re naturally a pretty active family although a middle sister who will remain nameless is a little tougher to get involved. We have a hike planned for Saturday as well!!
Do you use any butter alternatives? Just curious. Melt organic buttery spread is my favorite, but our new nearest grocery store doesn’t carry it.


















Hmmm…I’m gonna suggest making two rooms in one. Use the different wood for different areas of the room, Make it obvious by painting the wall different colors for each floor type. Or add in a third type of wood to make it look like you meant it
LOVE the family workout!! I wish I could get my family to work out like that. My mom did a little bit with me (I did have her do her first burpee also) when we went away last week… it was a start!
I love a good high-quality butter- there’s some great Icelandic ones at Whole Foods!. But I use Earth Balance on occasion too.
I love the family fitness thing! My family wasn’t like that growing up, but my husband’s family is! I love that we are always doing active stuff with them!

I use smart balance, but have never tried baking with it! Were the biscuits any good? They look nice! So cute you got your little family members to yoga with you. I got my parents to do the same today…haha. Pictures to come in tomorrow’s post.

Your siblings are so cute…love that they are growing up so active! Fortuantely my family is quite into working out too (my mom is a big fan of her daily walks) so that alone is motivating! Much of the time, my sister and I end up discussing the workouts we completed earlier on in the day..and how sore we are as ar esult hehe!
