Mini OMG Pancakes (with Coconut Flour) + Kettlebell Trip


 

I’ve been in the habit of buying bananas lately. I straight up hate eating plain bananas (slimy, stringy, disgusting), but if you blend them up – they’re wonderful. I was happy I had them on hand tonight to make these pancakes. I adapted the recipe from Carrots N Cake because after reading this post , I’m not crazy about using almond flour.

Why the mini? I’m a really bad pancake flipper.

 

OMG! Pancakes with Coconut Four (via CNC)

Ingredients:

  • 3 bananas
  • 3 eggs
  • 1/4 cup almond butter (I used Earth Balance Coconut Spread)
  • 1/4 cup coconut flour
  • 1/2 tsp baking powder
  • 1/2 tsp vanilla extract

Directions: It’s easiest to blend all the ingredients together in a food processor so you get out the gross banana lumps. Cook like normal pancakes. Note: they were a little trickier than normal to flip, but not terrible.

This is the same jar I’ve had all along. I really know how to hoard sometimes!! Boyd keeps hoping & hoping this jar will be empty! Not yet!!

Let’s talk about today’s workout.

I think we all know where I started after yesterday’s bitter defeat. That’s right. I felt the need to beat the 7:15 mile on that leader board.

 

Done. With 1.0 incline. Lol. And I’m still not happy with that time. I blame it on the treadmill again. It takes so long to start up!!!!! I wish I could combine all my favorite features of treadmills into one. Three gyms ago, the treadmill would tell you your MPH average as you went along. I loved that!!  Don’t get me wrong. It’s just still not a great number for me. I’ve run a 5k with a faster average pace than that so it stings.

And I’m still not on the board. I have to ask at the front desk what the protocol for that is. You can expect that it will take me up to 2 months to work up the courage to do that. Lol.

I also brought a GPP Fitness workout with me to do:

Our gym doesn’t have a rowing machine (what?!?!) so I subbed the sdhps! Those were no joke with a 30lb kettlebell!  But other than that, I totally completed it rx (as prescribed). I was proud of that because I can hardly ever do that with the GPP workouts.

 

Boyd has a new hangout. He can be so hard to find sometimes because he gives zero response when you call his name. Between the glass door and the curtain is my new place I have to look for him!

Is there any fruit you hate? Mostly just bananas. Oh. And watermelon. But I could eat it. A banana I don’t think I could choke down.

Which would be your favorite: rowing, running, or jumping rope? Running is definitely the easiest for me, but I really like jumping rope too. I almost did the first set of 300 unbroken!!

    I eat a banana nearly every day. We had a banana crisis here a couple years ago – a hurricane wiped out something like 90% of our banana crops, so they got really expensive for a while. People from my state are often referred to as banana benders!

    I’m always good with random facts…

    I only like cavendish bananas, and they have to be at the PERFECT state of ripeness for me to eat them though!

    I love all fruit, but the thought of cooked broccoli or white potatoes makes me gag.

    loving that pic of Boyd per usual. I used to HATE bananas as well but one day I forced myself to eat them and now I kinda like them. HOW IS IT THAT YOU HATE WATERMELON??? that seems crazy to me! lol. I could eat it all day every day. I would probably have to pee 18 times a day but to me it would be worth it.

  8. For some stupid reason, I’ve been up since 5:30am, which is wayyy too early to eat breakfast. But now that I’ve been lounging on the couch for 2 hours, those pancakes look SO good.
    I’m not a fan of papaya, I think it tastes like soap. I like bananas, but I do know what you mean. Their texture can be icky. I have to say that I almost never eat them solo but they go great with other stuff!

  10. Awesome job on the workout! I really like that workout and SDHP are no joke with KB’S! I’m going to have to try your version of those pancakes! I don’t love almond flour either but am obsessed with coconut flour! They look really good!

  11. I cannot stand honeydew melon. Yuck. I pick it out of fruit bowls. Ewww.
    And my favorite is definitely running–I hate jumprope, and haven’t really ever used rowing for cardio. Maybe I should try it.

  12. These pancakes look so good and for what it’s worth, everything tastes better in miniature form! I love bananas but HATE papaya- ick just thinking about it grosses me out and the funny thing is that it’s my mom’s favorite…she needs to eat it every night!
