Amateur + Coconut Flour Cheese Pizza


I can’t stop laughing at these pictures I just took of my dinner. I guess my goal for this blog is to be a little more amateur every day. There’s a million people out there with nice cameras and parchment paper in their drawers, but somehow you clicked over here…. Or you’re my mom. You’re so lucky.

 

As an extra treat for you, I even got my left knee in there. Don’t give me the link to PicMonkey. I know it. I just feel it’s adding to the flavor tonight. This is probably funnier to me because I read a lot of food blogs with gorgeous pictures. This is kind of like the time I made fun of myself and pretended to be a design blogger with balloons. Haha.

I better keep my day job. Haha. That’s funny too. :)

So in case you can’t read my second grader handwriting, I made coconut flour cheese pizza for dinner. Here it is a little closer with some mood lighting:

So I made the coconut flour crust recipe from PaleoOMG. I mostly followed it. I didn’t have coconut milk so I used skim. And I didn’t have parchment paper, so I regrettably used aluminum foil. For how much I bake, you’d think I’d have parchment paper?! Especially in my fancy new house where I have a drawer just for those little roller boxes. Probably half the crust stuck to the aluminum foil. That’s fine. Just a little thinner crust, right?

Oh. Let me tell you something else funny. I’m full of jokes! Yesterday, I got lost biking to my gym. This is really no big shock. I was seriously 0.1 miles away and couldn’t find it. Lol. That takes talent. And no excuses, because I had my glasses on. Anyhow, while I was meandering around trying to find it, I ran into this:

 

 

 

That’s OMG Paleo’s box. I’m actually not a stalker, I discovered that tidbit after I Googled CrossFit Jai. But do you think  this is a sign?? Maybe we should venture out of the gym world (where I dominate!!) for humiliation??? I had no idea it was so close. I wonder what it’s going to take to convince Kevin I need two gym memberships. Probably me getting a job. Which means I wouldn’t have time to go to both. Life is rough. But you might find us there shortly after Kevin graduates with his MBA. Speaking of which — Who wants to come to the party?!?!! I’ll have to ask him for the exact date, but it’s in about 5 weeks!!!  I’ll make cookies. Something I can handle. Lol.

 

Because I have to measure everything, it took 13:33 minutes to bike to the gym today. Great, now I’m going to be wanting a PR on that. I didn’t stop it for stop lights, however, there are 2 plus a few 4-way stops. City life!!! I find the Lululemon shopping bags to be what I use the most from their store. Haha. All my Lulu stuff is wintery!! It’s a lot easier to justify the expense for a jacket/pants than it is for tiny shorts/tank — am I right?

Okay. So I actually did do SOMETHING today. I did the new ZuzkaLight workout, ZWOW#27.

Pretty simple. Not easy. Simple.

Buy-in: 3 minutes of squats holding 10lb dumbbell overhead. I love buy-ins!! It’s like an excuse for a little extra  workout.

And then… 10 1 Minute Rounds

  • 3 burpees on the minute
  • Finish each minute with weighted lunges (I used 17.5lbs on each side. I didn’t know gyms had 17.5lb weights, but mine apparently does!)

I should have counted the lunges. Duh. Suffice to say it was pretty tough.

 

I’m working on ripping my burpee muscles back in. They got a little lazy in July.

I also ran 4.15.

Do you guys use the Arc trainer? I have to try all the new toys in the gym, but I don’t quite get this thing. It took me 20 minutes do a mile on it!?!! That’s NOT normal.

I was all like,”Am I doing this right?” Of course, I put both the incline and resistance really high. I wanted to see what that baby could do!! Haha.

Check that out — my gym has orange towels. That’s cute. And smart! I will probably steal less. I swear, it’s totally by accident but I have several towels from each of the past few gyms I’ve gone to! It’s just that Kevin is always waiting for me and I rush out straight off the treadmill.

Boyd wants to model for you the face he does whenever we call his name —-> Boooyyyd! Boyyyd!!!

 

Seriously. ZERO reaction. I took him on an “obedience walk” today in our new neighborhood. Doesn’t that sound fun??? Lol. He was starting to get into the groove in Greenwood Village, but there are so many exciting new things around here! A lot more yards! A lot more dogs!! A lot more trouble for Boyd to get himself into.

Well, Boyd Jose had better get his act together because Saturday is A BIG DAY!! The Colorado/Wyoming Vizsla rescue people are coming over to inspect us to make sure we are a fit home for a Vizsla!! I’m nervous!! I hope we pass. I’m worried about Boyd being an idiot, that our yard is too small, our fence isn’t good enough etc. I don’t think they have one for me yet — this is just to get on the waiting list.

Isn’t that awesome that we have to have a home visit? We didn’t have to do that for Boyd. They were probably just so eager to get rid of him… I’m sure they do it for Vizslas because they get sent back a lot. But I WANT high energy. I want a ridiculous girl to hang out with me and pound out some miles. I can’t wait!! I’m actually a little bit excited for Saturday because they’re going to bring their Vizsla, and I’ll get to play with him!!! I want to hug him already! I’m going to study Vizsla websites so I can be a huge know-it-all. I think I already am, but just to be safe. I’ll ace the questions if the boys can just act semi-normal…

What are you an amateur at? Folding t-shirts. Using bike locks. Push ups & pull ups. Socializing. Etc.

Do you use the arc trainer? What’s up with that thing??

Any tips on our home visit? I’ll be sure NOT to tell their dog he’s adopted. Haha. I was kidding on this question.

  1. I’ve used the arc trainer at my gym several times, but I don’t really “get” it either. Definitely not my favorite cardio machine!

    I love the chalk idea for pictures. I’m going to steal it for sure.

    I’ve baked with coconut flour but I haven’t used it in anything but desserts. Sounds really fun and healthy though.

    oh man you were cracking me up with this one. Seriously that first picture I laughed out loud b/c I just totally got it. And the knee add in is priceless. HA love it. No idea whats up with the arc trainer. You are totally gonna get a Vizla…how can they resist!! Boyd doesn’t have a hearing problem does he? Seems weird that he just doesn’t respond at all? Or he is just messing with you. HA!

    Good luck with the home visit tomorrow. I need to try coconut flour. It’s expensive at our coop though. That’s all that has been holding me back.

  5. that pizza looks so good. I am all about measuring where everything is, especially when I just moved. you need to know how long everything will take so on those rushed days you know if you can make it.

  6. I think you need to go to that CrossFit ASAP!! If nothing else just to meet PaleOMG!!! I want to try out that pizza crust recipe now! Sounds really good and I am in love with anything coconut flour!

  7. Too funny! I’m right with you on the photo skills–eeek. And the arc trainer–yes I use it (great for when you’re injured and can’t do much else!). Don’t look at how far you’ve gone–or didn’t go. It’s depressing. Instead I pay attention to how much I’m sweating, and my HRM. Those indicate a pretty good workout on a good day, so I’ll stick with it. :)
