Home Alone + Homemade Whole Wheat Flax Tortilas


So I’ve been Home Alone this week. Yeah, it deserves the capital letters. I hate being Home Alone. I realize that I’m 27, but I’ve never lived alone. And I have this insane imagination that refused to be quenched, particularly when I’m alone in a house with a Boykin Spaniel who won’t stop barking at the cars across the street.

Kevin had a business trip (back to Minnesota!!!) so I was fending for myself for a few days. Was it obvious from my blog? Haha. The mini pancakes? Coconut flour pizza! And even healthy cookies. Ha! I can’t believe I didn’t blow throw all the chips in the pantry while Kevin was gone, but I guess paranoia staves off the munchies!

For Kevin’s Homecoming last night, I knew I needed to make one of The Boring 3. I knew Kevin had pizza for lunch (like that makes a difference) so I decided to go with tacos.

Uh oh. No taco shells. Time for a little DIY action.

Homemade Whole Wheat Flax Tortillas (adapted from Aprons & Apples)

  • 1 & 3/4 cup whole wheat flour
  • 1/4 cup ground flaxseed
  • 1 teaspoon salt
  • 1.5 teaspoons baking powder
  • 2 tablespoons olive oil
  • 3/4 cup warm water

Directions: Mix your dry ingredients together till well blended.  Next combine olive oil and warm water.  Gradually add the liquid in a slow steady stream to your dry ingredients.  Knead it all together till you have a ball and continue kneading once it has come together for about 1 minute.  Now let it rest covered with at damp towel for about 10 minutes

Split the dough up into 12 even pieces, and roll them into small balls. Once they have been shaped into balls let them rest for 10 more minutes. Cook on hot, dry skillet. Once the bubbles start to form  flip them over and cook until both sides are done.

Easy. Why haven’t I done that before again???

Boyd was not a fan of his bed last night after a few nights in our bed. Sorry, Boyd!!!

Good news — The Vizsla rescue rep was here tonight for our home visit. We passed with flying colors!! We are so excited. I think Kevin even got more excited about owning a Vizsla (although that baby girl is going to be ALL MINE!!). The Vizsla people brought their dog along for the visit. It was so fun!! We’re planning to go to the next local Vizsla club meeting even if we don’t have our own yet. I can’t wait!!! Oh. What reminded me of that was that the lady said their Vizlsa slept in bed with them. He’s HUGE!!!!! He literally almost knocked me over when he jumped up on me. I think we’re going to be needing a king-sized bed for sure!!!

If you have pets, do you let them on the furniture? Things have just gone downhill with the Boykin lately. Lol. And I know my Vizsla will be the princess.

What are your Home Alone habits? Sleeping with the lights on. Extra gym time. Playing music loudly so I don’t hear bumps in the night. Not going in the scary basement to do laundry. Assessing the security features of my house. :)

    Wait, these are that easy to make?
    I love them, but I had always thought (now that I see it’s not so, I can’t explain why) that they required something special, either in the way of ingredients or skills.
    Now I have no excuse to not make the deliciousness that flax-crackers are ^_^ !

    I’ve been home alone a lot recently, too, while my husband trains for his new job. I’m not a big fan. :) I ate a lot of chips for dinner and watched a LOT of Netflix…

  3. I have never even thought to make my own tortillas, but those sound super easy! A new doggie is super exciting! I sleep with the lights on too when I’m home alone. I also never ever keeps the windows open once it gets dark out. That is obviously when someone would climb in and wait for me!

  5. Oh gracious, girl, I am with you. I have never lived alone and really couldn’t. The very rare times that Christopher and I have spent nights apart, I am convinced that I am absolutely going to die. My imagination is crazy active already, but having him around makes me feel much better, haha! So yeah, I hear ya. :)

    I was “home alone” last weekend. I also had to fend for myself. So what did I do?? Went to my parents for dinner.. haha.

  7. Our Fielder sleeps with us & is allowed on all furniture. He is ridiculously spoiled. I honestly take a glass of water to bed every night just for him. He drinks out of a glass wayyyy more than out of his dish.
    I’ve spent a lot of time home alone with the hubby working away.
    My home alone habits include locking, re-locking & triple-locking the doors, sleeping with the windows closed no matter how hot it is outside, sleeping with the hallway light on & bedroom door closed so I can see any “foot shadows” if someone is trying to get into our room. Yep. Paranoid.

  8. Ha the picture of your dog’s butt sticking out from the covers, so adorable. I love that you take advantage of your time alone by cooking. I wish I would get more creative in the kitchen.

  9. I didn’t know Vizsla was a dog breed–I had to google it. Anyways, beautiful! That’s so exciting!!

  10. I’m so impressed with the homemade tortillas! I think something may go terribly wrong if I tried to make them! They always look so challenging! So exciting about the vizsla too!

  11. I lovee having the home to myself sometimes…especially if I put something in the oven while I’m showering, I can just run and check on it in my towel as opposed to be properly dressed! Oh and it’s nice to pee with the door opened too ;) !

  12. I had no idea it could be so easy to make homemade tortillas! I definitely want to try that.

    And yes, our pug is ALL OVER the furniture. I adopted him from a shelter & planned on never letting him on my stuff. As soon as he walked in the door of my apartment, he hopped right on the couch. lol Oh well, he’s too cute to tell him no!

    So I totally convinced myself this morning that there was an alligator living in our shower drain… this was with my fiance home, so as you can imagine, I don’t do well when I’m home alone. YAY about the Vizsla!! Sounds like such a cool dog!! We let our cats on our couches and bed, but not the counter even though I’m sure they jump on everything when we aren’t here. Hah.
