I am so proud of this one because I thought of it myself. That’s a new thing ever since the internet came into my life. And it was amazing!!!! Also great for lazy people and/or people who don’t like to touch raw meat. I definitely fall into both of those categories.
The only part that was a little grueling was julienning the zucchini. But I had a new tool to help me!! We just got it from Bed, Bath, & Beyond with a gift card leftover from our wedding!!
It worked like a charm!!! Much better than the last time when I tried to do it by hand with a knife!!!!
I put frozen chicken tenders in a crockpot with Frank’s Buffalo Sauce. The only mistake I made was that this was the ONE TIME we chose to buy the extra hot version so it was really spicy. Like I definitely had tears in my eyes spicy. I’m sure the regular version would have been no problem.
I cooked the chicken in the crockpot for a few hours, and then just threw in the zucchini for about 10 minutes. I topped it with green onions. That’s it!! Four ingredients!!! You could also bake the chicken and simply prepare the zucchini on the stove top, but the slacker way definitely worked for me!
We decided to enjoy our dinner out on the porch.
But, when Kevin went inside for some badly-needed drink refills (SPICY!!!), Boyd the Boykin escaped!!!!! In case you couldn’t tell, Boyd had zero recall skills. He just looks the other way when you call him. He ran across the street the other day! Scared me to death.
He made it two doors down to the neighbor cat lion. They got into a tangle!! Kitty cat was not amused by the way Boyd was sniffing her out and she POUNCED. Twice. It was hilarious. Boyd got beat down by a kitty cat. I will NEVER let him live that down. Cats rule, dogs drool. Haha.
Just kidding. We all know that I only like pictures of cats.
For lunch today, we had leftover buffalo chicken with zucchini on wraps!! It toned down the spice, a little. Again, I know it will be fine next time when I use the regular buffalo sauce. It still had nothin’ on the Super Bowl Sunday chili I made. We rate everything against that standard now.
We ended up watching OLYMPICS on date night, so tonight we revisited the Highlands Asian Grill. I didn’t take any pictures because I ordered the exact same thing – Spicy Basil Chicken. So good. They gave me like three entire bell peppers so I didn’t end finishing my entire plate, but it was amazing.
Kevin broke in his new bright orange Toms… I bought them for him, and he’s not so sure about the bright color. We meant to exchange them, but never got around to it with the move whatnot. Oops! Now he has to wear them. I love them! Why wouldn’t you want to wear neon pumpkin orange shoes!??! Plus we live in Northwest Denver. We’re not in the Midwest any more!! Lol.
Have you made anything with zucchini lately? We need more friends with gardens!!!
Do you have any unusually-colored shoes? I have some hot pink sneaks from Target. Hot pink heels. And various leopard print shoes. Not to mention workout shoes which are generally all pink and/or neon.
Could a kitty cat beat up your dog? Somebody make Boyd feel better!! Haha.

I made zucchini “pasta” last week- but I DEFINITELY need to get one of the julienne gizmos from BB&B!! I have a mandolin slicer with a julienne blade but I am horrible at using it!

We used just plain chicken breast tenders from Target. I’m not sure what brand they are, but they’re like the super all-natural, blah, blah, blah kind.

making zucchini/veggie tacos this week! wahoo. for a second i thought you had an orange plate covered in cheese or milk or something at the bottom, then i realized your plate was white. anyways other than that, what is up with these red hot and blues?! i swear everyone is eating them. i am afraid to get hooked if i try.
This looks pretty darn tasty. And since my husband has been obsessing over both zucchini “pasta” & Frank’s Red Hot as of late, I think we might just have to have this some time this week.

The husband likes things spicy- he’ll never admit that something is just right so I have to dump in the hot stuff just for him to be satisfied AKA- too hot to handle. You did a great job with the recipe, 4 ingredients = WIN!

Both my parents and my grandparents had gardens and grew zucchini this year…we had so much we didn’t know what to do with it! One of my favorite things to make with it is lemon zucchini bread, but I also made zucchini cake that was delicious and it’s hard to beat fried zucchini!
I’m starting the process of baking zucchini bread this morning!
