Cookie Friday: Cream Cheese Chocolate Chip Cookies


We apparently can’t live without it. I think this may become a biweekly thing.

Cream Cheese Chocolate Chip Cookies — NO EGGS! :)  (via This Week for Dinner)

- 1 cup butter or margarine, at room temperature
- 3/4 cup sugar
- 3/4 cup brown sugar
- 8 oz. cream cheese, at room temperature (I used 1/3 Less Fat — couldn’t help it!)
- 2 teaspoons vanilla
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups semi-sweet chocolate chips

Directions:

Preheat oven to 375ºF.

Cream together butter and sugars in a mixer – beat until light and fluffy. Add cream cheese and vanilla – mix well. Sift together flour, baking soda and salt then gradually blend dry mixture into butter mixture. Stir in chocolate chips.

Drop heaping tablespoons unto ungreased cookie sheets bout 2 inches apart. Bake at 375ºF for 9 to 11 minutes, or until golden brown

Sprinkles optional, but highly recommended!

These were a cinch to make, and they turned out great!!! Kevin loves them, and I feel he’s the better cookie critic. Although they were soft, I thought they seemed a little cake-y. I like my cookies chewy. Kevin likes any and all cookies. (My favorite chocolate chip cookies are made with vanilla pudding).

Because I am so awesome, I spent my Friday night at the gym — watch Olympics, of course!! I also got to play around with the Vipr without anyone watching me. When I first spotted it in the gym, I immediately went and watched YouTube videos on it. It’s basically a big rubber tube that you use to do sort of functional training exercises. It was fun! I believe this one was 6kg, around 13lbs. I mostly used it to do burpees tonight. I’ll have to make up a little circuit workout one of these days.I also played around with the taller box. Not there yet!

And then something weird happened.

Kevin was picking me up from the gym, but when I went to the side door that members use after business hours, I could see this guy like crouching down. (There’s kind of a ramp below the sidewalk that goes to the side door). I’m totally paranoid, so I freaked. I was so glad Kevin was coming to pick me up because I called him to just come meet me inside. It took Kevin a few minutes to get inside, and the guy was still there!!! Just lurking, and the weird part was that he was like crouched down. Facing the wall of windows. I had been in the gym by myself for about 30 minutes. But as soon as he saw Kevin, he took off. Whew! I totally felt safe in my gym because it’s locked, and there’s a lot of BUSY restaurants and whatnot around. There were tons of people around, but it still made me really nervous. I emailed the gym a little FYI because that guy was definitely on gym property, and I didn’t know how long he was there. Who knows what he was doing? It was just weird. I honestly didn’t get a good look at him because, let’s face it, I’m blind. But he wasn’t smoking or on a cellphone or anything. And he had to have seen me look at him! Weird, right? I think I need a vacation because a lot of things have made me paranoid lately. So just… watch your backs!! If you’re going to the gym late at night, go with a friend!  In the end, I’m sure it was harmless. It was just really weird. Even Kevin though so, and he’s levelheaded.

Speaking of… the opposite of vacations, I have my hopes up for a possible job prospect. I don’t even know why I get my hopes up, but I do!! I’ll keep you updated, but I think it would be a great match. I’ve been thinking, I don’t know what I want. And when I saw the description for this job, it just seems perfect. It’s teaching, but at like an alternative school. Blah, blah, blah.

  1. Ugh! I’m really glad that you emailed the gym about creeper; that’s definitely something they should know about. I’m also glad that you played it safe and waited INSIDE.

    Ugh, thats creepy! It’s a good thing your gym is locked and in a very public area!

  7. Er okay you have just combined 2 of my all time favorite desserts: cookies & cheesecakes…if you added peanut butter, I may as well just eat my screen haha! Fingers crossed for the job :D
