The answer is always cookies. Always.
Kevin is going to be so disappointed when he sees these on my blog at work. I promise you’ll like them, Mr. Kreisel! Even if they do have sweet potatoes in them. We had all the ingredients at home. I couldn’t resist.
Sweet Potato Oatmeal Raisin Cookies (adapted from Carrots ‘n’ Cake)
- 1 cup old fashioned oats
- 1/4 cup whole wheat flour
- 1/3 cup packed brown sugar
- 1/2 cup shredded unsweetened coconut
- 1/2 cup raisins
- 1 cup mashed sweet potato
- 1/4 cup canola oil
- Pre-heat oven to 350*F.
- Combine all ingredients in large mixing bowl. Blend well.
- Spray baking sheet with non-stick cooking spray.
- Use a tablespoon to portion cookie onto baking sheet. Flatten cookies with back of spoon.
- Bake for 18-20 minutes.
- Remove from oven. Cool on wire rack.
- Eat and enjoy!
I was so tempted to make subs for the flour & brown sugar, but I thought I’d give the actual recipe a try. They turned out soooo good. I’d love to see them with coconut flour and/or Truvia, but I’ll let it slide this time. It is Cookie Friday after all!

I predict my water consumption will triple. For at least a day or two!! I’ve been needing a new water bottle for the gym. The one I’ve been using was a freebie from our old gym that got distorted in the dishwasher.

I ate a lot of Lucky Charms in college. I’m sure if Kevin was here, he’d be all like,”WHAT HAPPENED?!” Haha.
