I tried my first recipe from PaleOMG tonight, and it was a huge success!!!
This, my friends, is the Pumpkin Cashew Coconut Curry. Here are some things you should know about it:
- Most exciting? The cauliflower is the rice. This is genius! When I read it, I had a feeling it would work! And it did!!! As long as you cover that stuff up with the chicken and sauce, you totally feel like you are carbing it up!!!!! 26 calories in a cup of cauliflower. 242 calories for a cup of cooked rice. (Also Vitamin C, other benefits - stop drinking the orange juice!!!!!).
- You can make it in the slower cooker. This is especially handy for people who are not fond of touching raw meat. I just slow cooked up the chicken in the coconut milk and pumpkin before adding the rest.
- It doesn’t taste like pumpkin. At all. I only remembered later to tell Kevin that it had pumpkin in it. He guessed “pineapple” and “coconut flower”, but was never going to guess pumpkin.
- I added extra spices like Garam Masala and Tumeric. Why not?

So. I had a VERY exciting day. My thrice daily compulsive search of Petfinder led me to discover a beautiful chocolate lab/Vizlsa mix currently named Remmy! Here’s the only photo I have of her:
Awwwa… my poor baby is underweight! Of course, I called the shelter ASAP, and they passed me on to her foster mom (who is practically my neighbor, by the way!). The lady told me that there was another family ahead of me — booo!!! How could they have possibly beat me? You have no clue how often I look at Petfinder, people!! I tried not to get my hopes up. But I did. I was bouncing around the house, talking to Boyd like crazy about his new friend!!! Sure enough, the family decided to pass on her since she’s a wily 1.5 year old, and they have two small children. HOORAY!
We’re going to see her tomorrow, and I’m confident I’ll be bringing her home soon. Our family will be complete!! Haha. I seriously can’t wait to start spoiling that girl. And she WILL be wearing little outfits!! She’ll get cold in the winter!
Of course, I’ve been thinking about her name all afternoon. I just stopped writing this post for probably 15 minutes to look at lists of names. Ask my mom. I have always been fascinated by names.
My breakfast looks a LOT like yesterday’s panini. But I have to put avocado on everything when I have it at home. And I am on a huge fried egg kick with no end in sight!
This is seriously what Boyd does while I’m doing yoga. I have to kick him (sorry!) out of the way. He ignores me all morning, but the second I try yoga – he’s all over me!! And he adores the yoga mats. I would lock him out, but I don’t trust him!! He’s been so naughty lately.

I let him borrow the piano bench so he could lounge more comfortably. So spoiled. So so spoiled. He needs a sibling!!!
Look what I found this morning on the way out to the gym!! A hole in our front gate.
I have two suspects:
- Me kicking it and not noticing (the gate is hard to open)
- The neighbor kittehz!
We heard some nose in our back yard last night (and Boyd was freaking out) so I think some of the alley cats were back there. We have REAL live alley cats in our neighborhood. We seriously see one every time we pull into our garage.
Or perhaps it was Boyd’s feline nemesis.
Can you believe Kevin already fixed it? He’s such a handyman. We didn’t have any nails so he pulled one out the wall that the previous inhabitants used for a picture or something. I’m so proud.
I know I’ve asked before, but it could be your last chance! What should I name our new baby girl dog?! Pippa is a possibility. As well as anything beginning with a “B.” Perhaps I should name her after an Olympian?
Have you ever used cauliflower to sub for anything? I also used it to make Skinny Baked Potato Soup. That was pretty amazing too!

That cauliflower rice dish looks delish! I’ve been looking for a new curry recipe…can’t seem to find one I like:P And I know you probably aren’t open to this idea, but I love the name Remy! I had a chocolate lab and his name was Remington…Remy for short:) Either that or Taco…which actually sounds more like a boy name, but I love it anyway!
Ooh, I’ve made mashed cauliflower + used cauliflower in pizza crust, but have yet to try it as ‘rice,’ even though i’ve seen it all over the blogosphere. yours looks awesome (as does that whole recipe), so i gotta try it soon!

Cute dog-love that you are rescuing one. We have two rescues. My heart cries every time I go into the humane society. I use cauliflower to make mash potatoes. I can’t tell the difference.

I’m very intrigued by your recipe. I’d love to start following a paleo diet (loosely at first) but my husband is a meat and potatoes kind of guy who rolls his eyes whenever i mention a new fad diet. This is one of those recipes that would probably satisfy him and he wouldn’t need to know that it’s paleo.

I actually like Remmy too!! Gonna have to try that recipe. I never buy cauliflower so that’ll give me a reason to. How do you make your eggs? They always look so good. Do you add any flavor or spices or anything?
Kevin makes them so much better, but I try! I just crack them into the pan and then mix it up — I don’t like runny yolk (ewwww!!!!!!). I put hot sauce and crushed red pepper on them before I flip them! That’s it!
YAY!!!! I am so excited that you might get another dog. I was just like you, on petfinder at all times of the day looking for Milo. Milo is just like Boyd when I work out in the apartment — I have to kick him a little too

A vet told my family that, when changing an animal’s name, they respond better if the names share the same first letter. My family adopted a dog that was named “Putter,” but they changed it to “Pip.”
HOORAY FOR RESCUES! I volunteer for an animal shelter and it breaks my heart to hear about people buying from breeders when there are so many wonderful, loveable pups waiting in shelters.
That makes sense, but I think she’s only had that name for like a week. She was rescued by a shelter right before she was about to get killed!! Isn’t that insane!!!!! I really wanted to rescue a dog for that reason. There are so many poor homeless puppies. I better stop looking at Petfinder or we will have a house full!!!
Ha, yeah, she definitely wouldn’t know her name after only a week in a shelter. Sometimes euthanizing is the right thing (like if a dog is really sick), but it makes me so sad to hear about euthanizations for space. Have you heard about this guy who photographs pets before they’re put down? He hopes it’ll encourage responsibility in pet owners. That meal looks amazing! I’ve always wanted to try cauliflower rice but a little intimidated and worried I’ll mess it up!
It was really easy. I don’t think you could mess it up. I am such a slacker and it turned out fine. All I really did was food process it, then steam it with some coconut milk & coconut oil.

Isn’t cauliflower rice the best?!? I love it, too. Otherwise, my favorite thing to do w/ cauliflower is make cauliflower crust pizza (it’s on my blog if you want to see). It’s delicious!!! I know I tend to like “healthy” stuff”, but I’ve even made it as an appetizer to serve at a party, and everyone else liked it, too. My husband and I have it for dinner on a regular basis. Yum!
