It’s about time someone besides my kid brother stepped in to finance Cookie Friday!
Thank you to my friends at Swanson Health Products for supplying some of the ingredients for today’s cookies free of charge. They must know we have another mouth to feed!
I wanted to make some cookies for Kevin since we were going to have a late dinner with all of the Pippa Cordelia business going on (yay!). So I went with the goods from Swanson + what I had in my cupboard to create this masterpiece of a recipe!
Oatmeal Sunbutter Cookies with Cacao Nibs
- 1 cup SunButter
- 1 egg
- 1 cup sugar (or your choice of sweetener)
- 1 tsp vanilla extract
- 1 tsp baking soda
- 1 cup old-fashioned oats
- Pinch of salt
- Hand full of cacao nibs
Mix all the ingredients together. Any order, people, this isn’t complicated. I used my cookie scoop to drop them on to a pan (sprayed with cooking spray). Cook @ 350 for 8-10 minutes.
They have a monster cookie feel/texture!!! That’s never a bad thing! I would have tried an alternative sweetener, but I have nothing on hand. No agave. No honey. Nada. I’m Old Mother Hubbard. I’m sure you could make some little subs. I’m sure Kevin is thrilled that I made something with a full cup of sugar to help him conquer his second-to-last weekend of MBA homework!
I also received some coconut oil from Swanson since I was able to choose what I wanted to sample with the voucher they offered me. In fact! I already used that the other day to make the cauliflower rice for the Pumpkin-Cashew Coconut Curry. I chose all Swanson brand products to get the full experience – and the most for my money, and I’m a fan of all them. Just don’t try eating those cocao nibs plain!
Even if they don’t win over any of my blog readers, I was already looking for coconut flour on there today because I’m out, and they sent me a coupon in the box. The shipping was super fast too, by the way, which always wins my heart.
Well, I’m home with these two little freaks:
I’m exhausted!!! Pippa did really well for her first night with us (in our bedroom). I didn’t want to leave her all alone. She slept on my side of the bed and Boyd slept on Kevin’s side of the bed (on the floor). But by 6AM, they were both in bed. Figures. I think it’s settled that we’re going to need a king-sized bed! I did get up and let Pippa C out at about 3AM when I happened to wake up. She’s having some issues after her surgery, and I just want to help her succeed!
Other than that… she’s a morning person. Boyd was looking like the good one this morning. He loves to linger in bed as long as possible. Not Pippa. And her cuddling methods are different from Boyd’s. Boyd generally just wants to be in the bed, hogging as much room as possible. Pippa Cordelia wants to have her chin right on your chest. It was a little intimidating since she’s a new-to-us dog and a lot bigger than I’m used to. We were fine. She has shown zero signs of any negativity or aggression. She’s even been fairly tolerant of Boyd trying to lick her stitches (gross!!!!!!!).
Maybe you shouldn’t get up so early, Pippa!!!
Yesterday’s WOD was a great one:
(Box jumps , Kettlebell sit-ups)
I like a workout I can memorize – lol. I thought I was going to die after the first round, but I love a good countdown workout! I finished it up in 27 minutes. Can you beat it? I challenged myself to add the overhead press to about half of the kettlebell sit-ups. Ow.

Do you typically buy any food products online? Click. And PB2 if I can’t find it anywhere. And I always check to see if I can get good deals with my beloved Amazon Prime.

My local Whole Foods just started carrying PB2. I’ve given iherb a try a few times for buying protein powder and a few odds and ends.

Oh heavens- two people and two dogs in bed- that would be a crowded situation!!! …..I need to buy some PB2 online here VERY soon!
I like cacoa nibs if they’re mixed into something else. I put them in my energy bites that I make, stir them into smoothies, or sprinkle them on fruit and yogurt parfaits.
I don’t do a ton of grocery shopping online, except for peanut flour, NuNaturals Stevia, and Sunwarrior protein powder. I can’t get any of those items anywhere near me, unfortunately.
