Started the day off right by setting off the smoke alarm!
I managed to roll myself out of bed to make Kevin’s favorite French toast before he went to work. With pumpkin cream cheese topping! Unfortunately, it was too early to take a picture of that.
But! The good news is I had waffles for lunch with some of the leftover pumpkin puree.
Pumpkin Flax Molasses Waffles
- 2/3 cup Atkins baking mix
- 2 tbsp ground flax
- 1 tsp baking powder
- 1 egg
- 1 tsp vanilla
- 1/2 cup pumpkin
- 3/4 cup unsweetened almond milk
- 1 tbsp molasses
- 1/2 tsp coconut oil
- Generous pinches cinnamon, nutmeg, and cloves
Makes 2 servings of 3 – 316 calories and 26 grams of protein (details).
I had had them with a little tiny drizzle of honey.

I ran 3 miles with Pippa, and then remembered a conversation I had with Kevin the other day about how I loved living at the top of a hill… great training for finishing off a race!
The total hill is about .27 miles!!! I did 3 repeats of the whole thing, and 2 of about .15 miles.

My Garmin is lost… I had it… very recently. I’m sure it’s under my bed or in a laundry basket somewhere. Maybe it will stay lost until I buy the shiny new pink one!
I tried to do some strength training when I got home. I made it through 2 rounds of the GPP Step Downs workout on my back stairs. It was a fun one… I’ll have to try it again when my legs aren’t shot so I can give it 100%!
I taught a few students. Made some dinner. And then I saw this on Menchie’s Facebook page…

We hung out for a while and played the Biography Who Am I game. Can you guess this one? My students better be able to!!!!

Answer the Who Am I Question? The first one Kevin gave me was Yasser Arafat! I got it. The game was a little tricky because it was so dated.

Soooo I just got the iPhone 5 and am IN LOVE. I have the Kindle too and since real books > electronic books, I don’t love it as much as I should. A pink Garmin is tempting though…

Beethoven!! When I took piano lessons growing up, his “Ode to Joy” was my FAVORITE! I played it all the time. Pretty sure I played it at every recital too, haha!

I would pick the I phone 5 or any Iphone for that matter! I still have a blackberry and feel so out of the loop! Just waiting for my upgrade! I wouldn’t mind a garmin either though
