Kevin came home sick today. (Vacation hangover?)
No ballroom dance class for us tonight.
I’m a little happy because I didn’t have to dance with 11 strangers. But very sad because next week I will be the remedial example student x 10!!! Ayiyi.
I thought Kevin deserved some soup. I also felt like we probably didn’t need any extra pasta after this past weekend. I Googled Paleo Chicken Soup and came up with this recipe for Chicken Tortilla(less) Soup from Paleo Comfort Foods. Perfect.
And because it’s that time of year, I thought it would be a good idea to add some squash.
Squash is hard to cut. So I cheated. I’m not ashamed.
This was an even better cheat.
And I didn’t use spices. I used the Simply Organic Fajita spice packet. Obviously, I wasn’t feeling overly ambitious tonight.
Papa Bear & Mama Bear sized bowls. Kevin had some Red Hot Blues crumbs with his, and we both had avocado! We ate dinner in bed. I could get used to that!
I’m on the fence about the addition of the squash. I really don’t like squash by itself. I think it’s gross. Super gross. But I’m okay with it when it’s spiced over. Maybe if the chunks were a little smaller? I found myself wishing the squash chunks were sweet potatoes. Maybe it’s a sign…
I just have to tell you that the dogs did not get up until after 11AM this morning!!! That’s totally unheard of. They’re typically clamoring for breakfast by 8AM whenever I’m trying to sleep in. And as soon as I made the bed, they jumped right back in.
Today’s WOD:
5k run with Pippa C. We averaged an 8:22 pace. That’s one of the fastest paces I’ve done with my little squirrel huntress — it can be a little risky!

What’s your favorite kind of soup? I like spicy tomato soups! And Panera’s Sonoma Chicken Stew. And I don’t like sancocho. Not even a little.
How do you like people to take care of you when you’re sick? I tend to just be in complete denial that I’m sick since it happens so rarely, and I’m so stubborn about it. I’m feeding Kevin Fitmixer aminos and paleo soup. Sounds about right.

I like butternut squash but almost peeled off my pinky last year while prepping one for cooking.

Chicken noodle soup is the only one I’ll eat. Just not a fan of soup :/

I hate cutting butternut squashes. If something takes that much work, it had better be REALLY good!
Yum, that soup looks great! I think I’ll have to try it out soon now that it’s definitely soup season. Also, I don’t blame you for taking a shortcut with the squash … it is kinda a pain to peel and cube. My hands always hurt after! My favorite kind of soup is a classic chicken soup minus the noodles. It always tastes good and I love the chunks of shredded chicken and big slices of carrots.
I haven’t done squash in soup yet, but I have been thinking about it. I have done red hot blues on soup though. Gosh I love those chips. I call my Mom and cry when I’m sick, which is so nice of me because I’m sure it makes her worry.

I can’t believe you don’t like squash. Oh my. Have you ever tried kabocha squash? It’s VERY similar to sweet potato. So good.
Soup/chowder….my mother in law traditionally made Salmon Chowder for Christmas Eve dinner…I loved it and now I do the same. (Probably not the healthiest with that half and half but its the holidays right?)
I needed squash for a recipe I’m making this week and I totally bought the pre-cut stuff!!!
You know what’s really ironic about this? I had a veggie stew recipe in mind to make today. But then I got lazy & didn’t feel like chopping butternut squash & opted for frozen vegetable & Grands biscuit chicken pot pie instead. I had NO IDEA you could buy pre-cut squash!!! Awesomesauce!
