Triple Berry Cobbler & Suffering Poolside

I didn’t have a drop of coffee until 10:15 this morning! Kevin wanted to get a headstart at work today so I let him off the hook on coffee making duty (good thing our “club house” has free coffee). Since we were up early, I decided to take advantage and hit the gym a bit earlier for my morning workout. I TOTALLY HOGGED the treadmill. I think there were a couple of people lurking, and I felt a little bad. But they all had headphones on, and I didn’t want to interrupt and be like,”Hey guy, you want a turn?” So I just continued to hog. There’s no time limit on the treadmill. The out-of-order sign on the other treadmill says it will be fixed by Labor Day weekend… can’t wait! I made a little goal to run for 1 hour. I only hit 7:08 miles so that was an underwhelming pace of 8:28 overall, but I was doing intervals! Intervals are a LOT tougher than running a steady 8:28 pace. I was watching Regis & Kelly and sprinting it out during the commericals. Kelly works out tons and is famous for those rocking biceps. Definitely inspirational.

Maybe I should start racing in heels as well?*

I felt like Kevin James deserved something sweet for lunch. I really feel that his sweet tooth has been neglected since we moved to Denver because I just don’t have ingredients on hand. Well, I pulled together and created this Triple Berry Cobbler. I based the cobbler part off How Sweet Eats, but the filling was all mine. Fresh strawberries + raspberries + Blueberry Greek Yogurt. I had sway too much of the cobbler batter so I put it on the bottom as well. That’s everybody’s favorite part anyways, right?

Kevin was reallllly happy. I require copious amounts of affirmation whenver I try something new, and he complimented away! I had to steal a taste myself. I couldn’t believe I loved it! It was so good warm. If I was serving it to company, I’d pair it with vanilla ice cream, but I personally don’t like ice cream mixed with things.

I am going through a breakfast phase! I can’t stop with the English muffins, eggs, and pancakes! I threw in soggy old broccoli, black beans, and a few other leftover vegetables with 1 egg + 2 egg whites. Kevin has taught me his style of pouring on the crushed red pepper. Mmmmm!!

I also threw together a colorful little fruit plate. I was a little territorial over the oranges since I was the one begging for them in the grocery store, but I’m happy to say that I shared and it ended well.

I invented a new little game today. I hate it when Kevin looks at his watch when it’s time to go back to work after lunch. So I like to hide it with his sleeve. So mature, I know. Do you know I never kept a clock in my classroom? I don’t like people looking at the time when I’m talking away. :) Of course, that just made them want to look at their cellphones even more badly. The torture of high school!

I, however, was not being tortured this afternoon. I decided to spend the last beautiful August afternoon poolside. Nobody was there. I was so happy. But I really missed my tanning buddy and only lasted about 40 minutes!I would’ve killed for these days when I was teaching K-12 & working on my M.Ed. And now I just miss teaching! I sent my resume a few more places today, but still searching for my dream job. It’s been 8 days – what’s taking so long?!?! :)

*Kelly was blown off the line at the start by large amazon women who competed in track at the college level.  They were running like they were wearing track shoes, perfect form and all out.

The winner set a World Record in the Guiness Book doing 150 yards in just over twenty seconds.  She was awarded $25,000.

Lemon-Ricotta Pancakes

I didn’t waste any time getting to my recipe to-do list! Pancakes were the perfect dinner after running over 10 miles throughout the day yesterday.

(Recipe adapted from Sunset magazine via MyRecipes)

Ingredients

  • 1  cup all-purpose flour
  • 1/2 cup wheat flour
  • 2 tablespoons sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups skim milk
  • 2 large eggs
  • 2 TBSP lemon juice
  • 1/3 cup part-skim ricotta cheese
  • Cooking spray

The original recipe comes with some more intricate directions. For example, you are supposed to beat the egg whites with a mixer I didn’t have that option available to me so I just went with it and made pancakes in the normal way. I mean what kind of furnished apartment doesn’t come with a Kitchen-Aid???

I learned pancake frying zen from Jenn, a friend from the DR. I was so impressed with the way her pancakes turned out perfectly that I try to channel her patience whenever I make them at home!

The patience paid off! Every single pancake turned out beautifully. I NEVER remember that happening to me before! I usually have at least one horrific flip or one burnt at the end. Yay!

It turns out that the strawberries were just for show! I actually slathered on the Sugar-Free Blackberry Jam!

What’s your favorite pancake topping? Mine is probably whipped cream. And sprinkles. But if I’m trying to maintain some semblance of nutrition – definitely jam!

Stoplight Karaoke

Kevin forced me to go on another run with him after work today. I couldn’t resist snapping a photo when I noticed the killer combination our shoes make! Too bad I didn’t have my bright kicks when we had our running engagement pics taken!

Kevin James plotted out a course for us, but we somehow couldn’t find our way to the trail. We ended up running around a richie rich neighborhood instead. It was actually kinda fun because I could ooo and ahhh over the palatial homes. Which one is your favorite? Can you guess which is mine?

There were a million other gorgeous houses, but I just snapped three in a row so I wouldn’t have to take so many running breaks!

What is this? I found a perfectly lovely track only about a mile from my house! Speed workouts, here I come! Sometimes it pays to get a little lost!

The only thing about running in a city is that you have to deal with stoplights. I grew up in a town with no stoplights at all so I’m a little skittish about dealing with them. It cracks me up because I became so confident crossing the road in the DR. Americans just don’t use the cross halfway & stop method. The soccer moms start flipping out. Today at the stoplights I was in such a good mood I was belting some classics including Shania Twain’s beloved anthem Don’t Be Stupid. Kevin was looking a little winded after a long uphill, but he ran awesome today! I don’t think he enjoys running mantras as much as I do, but he’s generally so out of breath he lets me get away with it special comments like “don’t stop, make it pop” and “ATTACK!”

We covered 4.17 miles in 32:37 – that’s a 7:49 pace! To be fair, there was quite a bit of downhill. And we stopped a few times to snap pictures so we had some breaks!

We got cleaned up right away because, predictably, we had to make a run to the grocery store! Do you see that I’m wearing my name tag? He he he. We finally picked up some essentials like flour, sugar, baking powder, etc. I was really surprised how cheap those essentials are! I guess it’s really my first time living on my own as an adult in the States. I never was really good with the peso conversion, and sometimes I would buy exorbitantly priced imports just because sometimes you want some hummus!

Look who’s drinking Skinny Vanilla Lattes now! They are so nice to keep you warm in the grocery store. The produce aisles are always freezing!

After dinner tonight, we played a round of Quiddler. It’s a super fun word game Kevin’s parents introduced us to over the summer. Are you surprised my inner personal trainer came up with the word glute?

My Senior Business Analyst even created a lovely spreadsheet to keep score. I’ll save you the math. I dominated!

So which was your favorite mansion? I’m totally in love with one feature on one of them. I go b-a-n-a-n-a-s for it!

If you’re a runner, what do you do at stoplights? I also like to check text messages. And I sometimes answer phone calls during runs. One time I talked to Kevin and he didn’t even know I was running! I obviously need to up my RPE!

Hello Gorgeous: Our First Look

This is wedding recap post #4. The last recap was What We Wore: June 24, 2011 which covered all the fabulous details of what the B&G wore. You can see all wedding-related posts on the Wedding page.

When Kevin James and I started discussing the wedding plans, my little heart did not want to have a first look. I know I’m super cool, but I’m also super traditional so I was a little torn. This post Consider A First Look on Every Last Detail helped me deal and realize this would work for us. I am an efficient machine when it comes to hospitality and entertaining. It’s a skill I perfected with my BRE during our epic Thanksgiving celebrations. Because of that, I was definitely focused on keeping my guests happy, fun, and fed! Having a first look and taking photos ahead of time certainly helps with those goals. My compromise was that I wore my veil with a blusher down the aisle. I think it was a good compromise because the blusher look was incredibly romantic!

With that said, take a peek!

It was my goal to be ON TIME, and I totally was. I could not WAIT to see Kevin. I’ll always remember Deidre coming in and hyping me up about how hot he looked. I chose his suit, but I had never seen him with all the pieces together.

Okay. Let me take a break from posting so I can just stare at Kevin for a minute. He looks s-o good! It’s easy for me to see on his little face that he’s impatientn and out of sorts before he sees me. I know. I complete him. :)

An Ounce of Prevention & Healthy Recipe Plans

I did some menu planning this afternoon so hopefully we won’t end up at Taco Bell/Pizza Hut Express again. I am a stay-at home wife (SAW) so you’d think I’d be able to handle these things! I chose 5 recipes and made cute little bullet points of things I would need to pick up at the grocery store (everything). I’ll incorporate these recipes into the next two weeks or so, but I’m sure they’ll be interspersed with simple things like sandwiches. And pizza. Kevin and I can’t live without pizza!


Left: White Bean Chili With Jalapeño Bulgur

  • Bulgur wheat
  • Olive oil
  • Onions/Peppers

  • 9 oven-ready lasagna noodles (such as Barilla)
  • 1 1/2 cups (6 ounces) shredded part-skim mozzarella cheese

These Are My Confessions

Confession time. Kevin James and I ended up at the Taco Bell/Pizza Hut Express last night around 9PM. Oooops! Poor planning on my part. It’s been really hard getting a food base in our new apartment so I can whip something up last minute! When we were back in our house, I was always able to forage around in the pantry and come up with SOMETHING!

Last night we ended up being out late with my eye doctor appointment and afterwards Kevin James wanted to hit the gym. You know I can’t resist breaking a sweat again even if I already worked out in the morning! While I was there, I caught part of a reality show featuring Dallas. And you know who THAT reminded me of? Anyways, my favorite part of the show was the girls were at a salon getting their nails done and discussing the funny Texas-themed polish colors:

You know I have a weakness for names and cheesy little puns!

YUM! We actually tried to go to Panera. Sometimes a girl just wants some soup! But when we got there it was all dark & closed. So I went all out and had cheese pizza & bread sticks. It was delicious! I try not to eat it, but I love fast food! I remember thinking as a teenager that the Taco Bell/Pizza Hut Express was the coolest invention because you could get TWO types of fast food in the same place. Okay. I still think that!

I guess I could’ve tried out the Taco Bell diet. Naaah! I figured it was time for a little splurge. I’ve been running like c-rrrrazy since I got to Denver. Besides, I’d need to eat at least FOUR tacos. Probably five.

Kevin forced me to watch the most BORING MOVIE OF ALL TIME while we ate. I mean. Really. I was on my computer the whole time, and I was bored just listening to it! :) I know Kevin just wanted to watch it  because it was about airplanes! Fun fact: Kevin knows how to fly airplanes! Seriously, he briefly studied aviation in North Dakota before we went into the Chandler industry. Anyways, the movie wasn’t funny. It wasn’t dramatic. It was just. Dreadfully boring. I mean. What would I have done in a theater? I’d obviously be texting. And then some old guy would yell at me. So glad we were at home. And didn’t pay any money for it. Thank you, library!

I had a great workout this morning, mixing it up with some weight training. Unfortunately, afterwards I was super hot and feeling sick to my stomach. Wah! I was a huge baby about it when Kevin was home for lunch. I made my husband some stuffed manicotti. It turned out pretty ugly because it turns out manicotti is a LOT more difficult to stuff than shells. I stuck with an English muffin with some fancy PB. This is not me endorsing PB. I think it’s a very high calorie food and generally not a good choice. Sorry, apples + PB is not a healthy snack. You’re probably clocking in with at least 350 calories, and TONS of fat. Yuck. Anyways. I let it slide today because I figured I wouldn’t eat much else since I wasn’t feeling well.

Kevin gave me the idea to open the package the entire way so I could lick it completely clean. I married a genius!

I’m off to read Cold Sassy Tree (recommended by friend & blog reader Amy Hackert). While looking up the title, I discovered there’s an opera based on this book. Also, it was written in my favorite year, 1984, so it’s bound to be good. I’ll keep you updated.

I also have some serious menu planning to do. I’m trying to find healthy recipes with a limited number of ingredients. The problem is that healthy recipes are often made flavorful with extra seasonings/odd vegetables so it can be a challenge!

Puppy Fever

This morning started off like any ordinary morning. I ate some Marshmallow Avalanche (“healthy” Lucky Charms). I complained about my coffee not being ready in a timely manner. I kissed my husband and sent him off to win the bread. And I went for a run. When I saw that the weather was a gorgeous 69 degrees, I tearfully let go of my plans to lackadaisically watch Millionaire Matchmaker on the treadmill and took it outdoors.

Ugh. Four miles into my workout, I ran into another one of these ominous coyote signs. It was by houses. And near a rather busy road. I’d like to say that I braved it, but really I took a picture and turned right around. I had a fleeting thought that if Boyd was with me I would’ve forged ahead. Not because Boyd would protect me! Only because if we were confronted by a menacing coyote Boyd would certainly play the fool and I’d be able to run away!! Laugh all you want at my cowardice. I know I am a huge pansy. But I am extremely unlucky!

My running app says I ran 6.4 miles in 45 minutes – a 7:01 pace. Stupid app. I know that’s not true. Look at my face. I’m smiling! Sure I felt like lying on the floor when I got home, but if I can muster a grin there’s no way I ran a 10k in less than 45 minutes (I’d look more like this disgusting sweaty mess)! I think I lost signal for a while on the path and something weird happened. Unfortunately, my baby Garmin‘s resurrection was only temporary and it’s back to extreme battery failure again. I’ll have to check my routes on DailyMile.

It was this afternoon that it hit me! I WANT A PUPPY! Everyone here has a dog. To the point where I even miss the Boykin. A little. A tiny bit. I’ve been wanting a Vizsla for almost a year although I started to reconsider when I grew annoyed with Boyd’s rebellious spirit.

How could you resist a picture of a Vizsla snowshoeing? (via Fusion Vizslas) I would like to present the argument that a Vizsla would help me face winter. After all, I have done my research. Vizslas need TONS of exercise (just like me), winter months included!

I don’t actually want a puppy. I’d rather rescue a dog from a shelter. I found a 2-year-old girl nearby. I’m not going to show her to you because I don’t want you to STEAL her. Do you think I can talk Kevin into it? I mean. My birthday is coming up. SOON!

I’ve been enjoying reading the descriptions of dogs in shelters. This one was by far my fave:

She is outgoing and friendly and a body slamming party animal with other dogs.

Body slamming party animal!!!! I love that. That’s actually just how Boyd acts with my family’s Husky! I know Boyd would get along fine with another dog, and he would probably enjoy the company. And now would be a GREAT time to adopt a new dog into the family since I have a lot of free time! All of the houses/apartments we are looking into are pet friendly as well.

Maybe part of this puppy fever was inspired by a book I picked up at the library yesterday entitled Cherished: 21 Writers on Animals They Have Loved and Lost. I’ve only teared up twice so far! It’s a great, sentimental little read. I love little books like this. Plus it’s good because it’s one of those books you can put down after a chapter if you need to without being too cranky! :)

Important Question of the Day – What are some girl names you think go well with “Boyd?”  You know if we have two dogs we’ll be constantly referencing them together! Plus I love names! I’d love a “b” name, but anything that flows with Boyd! :) Of course, Girl would work. Fun fact: Boyd’s name was actually derived from the shelter workers calling him “Boy” which eventually evolved into “Boyd.”

Want to make a bet on if this is just a fleeting fancy or I will actually talk Kevin into it? You just never know. I’m all hyper and giggly about it right now. But that could pass when I remember how Boyd makes me when he won’t come when called. Not even 2 centimeters. Not even for an ice cube! I MIGHT be convinced to pass on the Vizsla crush if I got this piano for my birthday instead.
