Healthy Chicken Pesto Lasagna Roll-Ups & My Stalking Habit

Isn’t this dinner just the cutest thing? I like food that’s adorable.

That’s the pretty green filling mixture I created.

Ingredients

  • Whole grain lasagna pasta
  • Shredded chicken breast (Optional)
  • Fresh pesto from your mother-in-law (or a jar)
  • Low-fat cottage cheese
  • Part-skim mozzarella cheese
  • Italian seasoning
  • Hunt’s Sugar-Free Tomato Sauce
  • Plain Greek yogurt (Optional)

Directions

  • Start boiling water for the pasta. Cook the pasta according to directions.
  • Cover the bottom of your pan with sugar-free (or your fave) red sauce.
  • Create desired amount of filling mixture using chicken, pesto, cottage cheese, and mozzarella cheese. I just used everything I had on hand and it worked out fine. I also used some Greek yogurt because the pesto was a little on the dry side.
  • Spread mixture over drained and rinsed pasta.
  • Roll up into a cute little roll and place in pasta sauce.
  • Bake @ 350 until it’s hot.
  • I would suggest covering with foil, but I had none on hand. I would also use a thicker layer of red sauce on the bottom. The outside was a little crunchy, but not too bad.
  • I used chicken only because I had some leftover from lunch. It wasn’t even noticeable that it had chicken in it.

Here’s something I learned today. I never want to write a cookbook. Writing the directions is b-oring! And I almost always just throw whatever I have lying around in the bowl. It (almost) always turns out well.

I told you I stalk Kevin in his office! I got two good pics before he knew what hit him. So busy concentrating on those spreadsheets. Go baby! Do you like seeing his new shirt in action?

I managed to pull him away for a quick hello before hitting up the Public Library. I wasn’t prepared for this library trip! I usually have a list of books in mind to guide me so I don’t get book overload. If you have a book suggestion please leave it in the comments. I dropped both Committed and American Wife – absolutely couldn’t stand American Wife. I was only interested in Committed due to my recent obsession with wedding blogs. Anyhow, I’ll be running another yard sale (praying for no rain this time!) because the neighborhood organized a community sale for this weekend, and we found tons more stuff to get rid of. That’s free reading time for Corrie Anne! I’m only interested in non-weird, non-scary books.

Here’s my 2 picks. Girls Like Us I recognized from Caitlin’s review on Healthy Tipping Point. I have a feeling that’s not a good one for Miss Nightmares Over Nothing to read before bed. BRE – Remember when we watched Taken in the DR? I’m pretty sure they took us to that movie to scare some sense into us. The Cookbook Collector I’m not overly proud of advertising on the blog, but maybe it’ll be a good-fun read? I’m going to browse them, eat my Skinny Cow, and hang with that hottie from one photo up while he does homework.

Here’s an interesting read from A Practical Wedding – Reclaiming Wife: Babies Don’t Ruin Your Marriage Nope. I’m not trying to hint at anything. :) Ignore the single usage of the non-word “preggo”, and it’s a great read. I like that she says babies are “portable.” That’s comedy. I’m curious. If you’re baby-less are you afraid a baby would mess with your marriage? Obviously a cute baby is an asset to your blog. ;)

P.S. Guess what? I’M GETTING MY WEDDING PICTURES TOMORROW. Are you ready for me to subject you to endless wedding recaps for the next three months? There should be new content on here sometime after November. Just in time for my favorite holiday – Thanksgiving. Did you know I got engaged on Thanksgiving?

Rewards

Yesterday I went to the doctor. Maybe you don’t realize how epic that is. I haven’t gone to the doctor since my pre-undergrad days. Let’s just say it’s no biggie to self-prescribe when you’re living in the Dominican Republic. :) Now I would rather go to the doctor than the dentist (I don’t even want that word on my blog), but I still did a pessimistic countdown. For example, “Kevin. Omg. I have to go to the doctor the day after tomorrow. I’m freaking out!!!” “Oh no!! I don’t want to go to bed because when I get up, I have to go to the doctor.” Kevin felt the need to explain the simple math facts of sleep hours versus waking hours, but it didn’t make me feel any better.

Anyhow! I SURVIVED! I found out that Winona Health has a coffee shop (which I was excited about until Kevin introduced the idea that they might put NEEDLES in the coffee!), and my CNP rocked. She ran the Boulder to Boulder when she was 6 months pregnant with her third children (in three years). I actually briefly considered hugging her before I left! But I still felt I deserved a reward.

Kevin and I scarfed down some strudel, but he felt he needed some “real food” so we hit up McDonald’s again. My idea of an Extra Value Meal is a vanilla ice cream cone with a Diet Coke. :)

And then we went SHOPPING!!! We hit the mall first where I scored some Gap jeans for less than $10. They’re “straight” jeans. Not skinny. Straight. My extremely muscular calves can fit in them! I tried to take a picture of them, but lost patience. I’m sure you’ll see them in… every picture from now on. I prefer to live in one pair of jeans at a time. This little shirt was a TJMaxx special. It’s a Dri-Fit shirt, but I’ve deemed it appropriate for every day wear. I’m slipping already! I also got a brown hoody with a kangaroo pocket! I feel like such a snowboarder in it. I’m preparing for the eternal winter I know is coming.

Remember when I told you to buy your honey a shirt? Well, I followed my own advice and picked two from the Charles Tyrwhitt sale for my super handsome husband. He’s extremely mature so he doesn’t really need rewards the way I do, but it’s nice to reward him from time to time for his excellent coffee making (okay, and kissing) skills.

The funny part was that the second shirt was almost the EXACT SAME PATTERN as my Hannah Banana’s little ruffly shirt she wore for the fashion shoot strudel making. I <3 madras!

Apron Fashion Show

As you know, the McMillin girls & I made homemade strudel at my house today! We had CUTE OVERLOAD in our baker girl outfits so I had to stretch the goodness out over two posts.

My name is Abigail Joy AKA A.J., reporting for duty. I have gum in my mouth. I learned how to blow bubble gum bubbles about 10 years younger than my oldest sister…That’s what!

I’m Hannah Elizabeth-Rose. Yeah. I have two middle names. And I can spot the Anthropologie arpon in a lineup any day of the week.

This picture captures the essence of my baby sisters. A.J. going in for the schnuggle, and Hannah being all like,”Back off, Barbie!!!!”

Flour Power!

I feel like we’re The Three Bears. Unfortunately, that would mean I’m the Big Bear. Or Papa Bear. Not fair.

All the girls at the party! Mom got the short end and had to wear Kevin’s decidedly not girly apron. But she was actually working rather than taking pictures so maybe she didn’t mind! :)

My breadwinner came home for lunch and to sample the strudel. We decided to stick with the – Is Corrie Pregnant? Pose. An oldie, but a goodie.

Which is your favorite apron? Do you wear an apron when you cook? My only problem is that my aprons are so cute that I don’t want to get them dirty. So I just wipe my hands on my husband’s work pants. That’s true love right there!

Oodles of Strudels!

Today my mom & baby sisters came over to make strudel! I love the strudel making process because it’s always a whole day with a kitchen full of females! It’s a time for chatting and bonding. And today was no exception. Pictured above is a “vintage” magazine clipping that my mom found for Grandma Mary Kay while she was in college! I thought it was so cute that I had to share!

Pot Luck Picks & Family Fitness Fun

Our Sunday afternoon was filled with pot lucks! I decided to do something totally unusual and make something I would ACTUALLY EAT for the church picnic. I love making cakes & cookies, but I try not to eat too much of them. This salad was totally different story. I was inspired by this recipe for Sweet Corn Salad on Two Peas & Their Pod.

Ingredients:

3 ears sweet corn, husks removed
2 medium tomatoes, chopped
1 red pepper, chopped
1/2 red onion, chopped
1/2 bunch fresh cilantro, chopped
1 small jalapeno, diced, seeds removed
Juice of 2 limes
1/3 cup feta cheese
Salt and pepper, to taste

Directions:

1. In a large pot, bring water to a boil. Gently add the sweet corn to the boiling water. Cook 2-3 minutes. Remove from water and let cool. Once cool, remove the corn kernels with a knife. Discard the ears.

2. In a large bowl, add the tomatoes, red pepper, red onion, cilantro, and jalapeno. Stir in the sweet corn. Add the lime juice and stir again. Sprinkle salad with feta cheese, salt, and pepper. Gently stir.

3. Serve cold.

Remember when you saw Kevin husking the corn? That’s what it was for. I also made the addition of a can of rinsed black beans to make it a bit more hearty.

For pot luck item #2 (a going away cookout) I attempted the Chewy Brownie Bundt Cake from How Sweet Eats. Unfortunately, my results were a little disappointing. I was nervous about the bundt cake pan, but I thought I would give it a shot.

It came out of the oven looking like this! B-lack! Yuck! I managed to salvage it by flipping it over, doing a little scrape, and plastering it with some frosting! I do what I can! I’m not sure what I did wrong since I actually cooked it for 15 minutes less than the recipe called for, but I want to try it again. I just know it would be amazing if it came out right because the very center was just chewy & fabulous!! It made me think of Aunt Dianne! I just know she would love these. And Mom and Grandma Mary Kay too. I can just imagine them all sitting around eating it. Getting crumbs all over the floor. Aren’t brownie crumbs the WORST?

Look at Kevin James up on the “stage” at church. Kevin and I did a little backup singer action for the family fun service at church today. Doesn’t he look like such a rocker??? I know his eyes are closed, but there are limits to how nerdy I can let myself look in front of people I barely know in one day. I think the singing and Zacchaeus motions put me over the top for today so I couldn’t bear to be seen taking more photos.

But here we are together. So sweet. Can you even stand it? You can’t see it, but I was sporting my Toms as well.

My lazy Boykin was hoping that I was too stuffed and sweaty after the sunny pot lucks to take him out for a jog. No such luck!

I rounded up my two best boys and went for a jog. Kevin played the role of a race biker and forged a path ahead of us. It was a little sketchy in a few places for me to be running in the dark, but we had a good time.

Did you know Kevin did the Trinona last year? What a studmuffin!! He couldn’t this year because of wedding business conflicts, but I have a SWEET PHOTO of him in a swim cap that I should definitely share sometime!

And now. For the most attractive photo of me to grace this blog to date!

You can actually see the sweat glistening on my legs, right? Ewwwwwwwwwwwwwww!!! There was a wet spot when I got up off the deck. We tried to photograph it, but that was some tricky lighting! Boydster and I ran 3.51 miles in 27:57 – that’s a 7:57 pace. Hooray! I made it to 35 miles this week! Maybe I’ll try to hit 40 next week if the weather cooperates.

What’s your favorite thing to bring to a pot luck? I always love trying new recipes! A pot luck is perfect place to dump something I want to bake for fun, but I don’t really want to actually eat! :)

Butter Boys & Nicknames

Yesterday evening, I had dinner with Kevin’s aunt and parents and was introduced to the coolest corn-on-the-cob accessories! This little green machine is the Butter Boy! Isn’t that sweet? I immediately wondered if the Crabbs have one!  If not, I’m definitely going to find one for a Christmas gift. Kevin’s mom grew up in Iowa so that explains a lot!

She also had these special corn-on-the-cob dishes on the side of each plate. A little roll control! It is a little annoying when your corn is rolling over and smashing your hamburger!

Something I love about my mother-in-law (besides her grand piano and her lending library) is that she always makes appetizers. That makes sense because she actually teaches culinary classes at a local community college. She made some of my absolutely favorites -a caprese salad and bread with pesto! Yum!

During the dinner I also found out some very fascinating information. My husband has two wonderful nicknames that I’d never heard of before. Punky-pie and Rascal-roo!  Aren’t those amazing? They’re actually kind of better than anything I’ve ever come up with. Apparently they were given by Grandma Kreisel when he was just a little kidlet! I also got to hear some highly embellished tales about cream corn wrestling and the revenge of the babysat, but I won’t get into those!

When we got home, we had to give the Boykin a bath and start whipping together some side dishes for two pot lucks we had on Sunday. I taught Kevin that it is the MAN’s job to shuck corn. Or the kids’. But we don’t have any kids yet so he hopped to it. Can you see the flip-flop tan line on his little feet? So cute. And look at that look of intense concentration. He did such a nice job!

I rewarded him with a chocolate spatula! Who doesn’t love a chocolate spatula!?!

This photo is just so you can rest assured that I always cook with my flowing locks tied back. Nobody likes hair in food. G-ross! I didn’t even plan this, but look at those three cute things behind me: cupcake cookie jar, ORANGE Fiesta knives, and avocados!

Have you ever used any fancy corn-on-the cob accessories? Perhaps these are only available in the heart of the Midwest. I actually am not really sure where I could buy a Butter Boy…. Ooo! Turns out they are available on Amazon.

Do you have any great nicknames I don’t know about? I couldn’t come up with any I found particularly embarrassing. I always liked the nickname “Porky” via “Corky.”

How to Bathe a Boyd

Here is Boyd. He smelled. I’m not going to comment on some of his questionable hygiene habits which may or may not have led to this state of affairs. I’m a delicate female. Or maybe his mama shouldn’t let him roll around in mud puddles.  Anyhow, I could smell him every time he came into the house so it was time to do something about it! Like a sheep before the slaughter…

I told Kevin it was like being at a car wash! Soapy Boyd!

Drying him off was fun! Like a big fluffy massage! I had to give it a try myself!


Kevin & his little papoose!!! Boyd’s little eyes were so serious! I wonder what he was thinking about. Maybe he doesn’t like purple towels either. Kevin chose to use the dolphin towel and the purple towel for Boyd cleaning. I was so proud!

I’m getting my Boykin a blow dryer for Christmas! He went berserk trying to dry himself off on the couch. Especially his floppy little ears! Yeah, Boyd has a couch. He used to have an entire bedroom. Just a tad bit spoiled back in the day.

This post was inspired by the children’s book How to Bathe a Boa. But I bet you knew that, Mom! By the way, congratulations to my mom on rocking the Riverboat Days 5k today - 27:51! That’s an 8:58 pace! Not too shabby!!

We had a busy, but fun Saturday. I have more to share later! But I have to make sure I am up bright & early to sing at church. I’ll let you know how that goes…
