Unremarkable + 1 Impressive Feat

I always really want to decorate for the holidays, but the time slips away. Of course, pink is one of my favorite colors so this could stay up for many months.

Today was a pretty unremarkable day for me. Still special in its own way, but fairly unremarkable. Even to me who makes a big deal out of everything! I was not in the mood to eat like an adult today so for lunch I had:

an orange


Some crispy pitas!


A huge bowl of No Sugar Added Vanilla Frozen Yogurt.

I just like to say the “no sugar added” part to make it seem slightly more forgivable. :) That was a good lunch!!

I was bumming about being at the office today because I was really hoping to be back in a school this week, but that just hasn’t happened for me (yet). The funny thing is that I can’t stop thinking of myself as unemployed, when I work 32+ hours a week!!

I was actually supposed to go to the store to get Valentine’s supplies today after work, but I just wasn’t feeling it so we went straight to the gym. Even my workout today was unremarkable. I eked out 4.25 miles while watching Jeopardy! and then I was out like a girl scout!

I turned theCaprese Quinoa leftovers into caprese pasta with broccoli! At least dinner had some actual food groups represented, right?

And I baked some bread.

I have my mom to thank for the fact that I don’t think twice about whipping up a batch of homemade bread. That’s how 6 home school kids made it through the brutal Minnesota winters. Mom’s homemade bread and Dad’s belief that “a day without ice cream is like a day without sunshine” really made childhood magical. ;)

The best part was that Kevin totally surprised me by writing a Facebook status about it. This is unusual. My husband’s not really a social network user (except for, well, when it came to wooing me — but more on that later!!). He probably updates his status every 3 or 4 months. So I thought it was so sweet that he was kinda bragging on me. Don’t you think it’s sweet when people brag on their spouses? It always makes me so happy when I hear other people doing it! So thanks, Kevi, that can count as your Valentine’s gift to me. Haha. For today.

So what was my impressive feat for the day?

After dinner, Kevin and I each had 1 thin mint. 1. That’s it. Crazy, right? True, we had fresh bread to snack on, but still. Thin mints are generally eaten in at least quads, right? :)

DIY Greek Fro Yo

I’ve always thought of myself as “Not Really A Flower Person”, but this year I’ve been loving some of the outdoor blooms. Specifically peonies, snowballs, and I believe these are some type of hydrangeas. Thank you, Lisa. I felt so happy inside when I saw her walking up to my front door with them last night. I thought for sure I wasn’t going to get them since my family came to my house straight from Whitewater Park, but I was thrilled she had them in tow!

Mom and I spotted this Hamilton Half-Pint Ice Cream Maker on clearance for $15 when we were photo scavenging for Hannah’s birthday, and I quickly snatched it up. I was disappointed because I wanted THE PINK ONE, but when I got to the register that color was more expensive. Crazy, right?

Look how cute the little freezer bowl is chilling in the freezer next to the Eggos! The ice cream maker is super simple to use! Any machine that I can assemble and use is easy. Trust me. No comments please, Kevin. He (practically) never comments on the blog, but I know he may find that comment tempting to reaffirm.

I made two flava flaves. Each time I just used a measuring cup and kept filling till I hit 12oz.

Blueberry: Nonfat Greek yogurt + skim milk + tsp honey + 2 Truvia packets + fresh blueberries

Chocolate Mocha: Nonfat Greek yogurt + brewed coffee from this morning + 1 TBSP unsweetened cocoa powder + 3 Truvias

I packed both flavors up for the freezer to test when Kevin James gets home from work today, but you can eat them straight out of the pretty green bowls. I love that I could totally have this for BREAKFAST and not feel guilty.

Of course this little project made me miss Yogenfruz something fierce!

My favorite thing to do would be to order two GRANDES to-go. I would try to pretend like one was for a friend, but really I would put it in the freezer for later. At least 20 minutes later. :) I know there are places like this in the States so I’m hoping there’s something like it in my corner of Denver.

P.S. This is what Boyd did today while I ran 6 miles, did piles of dishes, washed mounds of laundry, made Kevin’s lunch, wrote this morning’s blog post, looked at apartments in Denver, signed papers, and thought about what cookies I should bake for this week’s Cookie Friday.





What I Want to Spend the Garage Sale Money On

You can even make rainbow pops! Kevin promised me that I could spend the garage sale money on whatever I wanted. I’m obviously going to steer clear of anything that could possibly be construed as practical or useful so this seems like the perfect plan! Maybe it’s inspired by this heatwave!

I totally cheated on last night’s dinner. But after spending two hours grocery shopping, the kitchen coffers were overflowing with goodness.This pizza took about 5 minutes to make. Probably because I assigned Kevin the mundane task of chopping vegetables. I love it when he does that for me!

I’m not even going to try and pretend that we didn’t scarf that whole thing. We totally did. Sitting in the living room. On our computers. Watching the West Wing. I was reading blogs, and Kevin was like doing some Chandler nerdy business stuff. We called it a marathon, but I think we only managed to get through three episodes. Including one that Kevin accidentally started in the middle. Whoops!

At about 10pm, I decided it would be a good idea to go for a little run. Can you believe this is what the weather said?

Feels like ONE HUNDRED!!! When did I start checking the weather? Haha. Kevin’s a bad influence on me. Anyways, I took it easy at first. Joanie warned me that there was a heat advisory!! Haha. Once I got done congratulating myself for going out in the elements, I tried to speed up a litle bit but with limited success.

The “after” photo was a lot more impressive to take indoors where you can get a better view of the sweat. :) I told Kevin I was just going to run 2 miles. We all know that was a lie. I have a pretty serious rule that states “it’s not worth getting sweaty for less than a 5k.” So 5k it was. I was forced to run up and down Howard Street since it was late, I’m visually handicapped, and I have no clue where I’m going in Winona. I’m like the old lady in our neighborhood who continuously walks around the same block because she needs to stay close to home. :) I told you I was a senior citizen. I ended up with 5k in 24:45 – 7:57 pace. I’m going to have to give you fair warning. I’m totally back into running. It’s going to get annoying because that’s all I can talk about sometimes. That’s when it’s best to go home and spend some time with Dad!

What! Third sign in this post that I’m turning into MY DAD! First the weather, the running, and then finishing it off with a bowl of chocolate frozen yogurt! :)

Just when I thought the sweaty pics couldn’t get any more unattractive… we took one in the morning. I’ve been inspired by ohhealthyday’s Early Morning Workout Challenge and figured there’s no time like the present to start. Also, the heat is insane right now. Even 6AM was pretty rough. Kevin and I clocked 2.27 in 22:03 – 9:42 pace. I know I just said I won’t get sweaty for less than a 5k, but I’ll make an exception to run with my injured double h. And I was pretty proud to get some in this morning. Although I’m already pondering another late night excursion…

So here’s the question of the morning. What frivolous thing would you buy with garage sale money? This pink soft serve ice cream (or frozen yogurt) maker is really enticing as well.

Oh yeah! I made myself proud today with my food choices.

Today was my first foray into the critically acclaimed (by healthy living bloggers worldwide) breakfast food: Overnight Oats. These could more accurately be called Double Overnight Oats. They were a little warm yesterday morning after the refrigerator door debacle. But hey, it was worth the wait. I combined vanilla greek yogurt with oats + a tad bit of skim milk and blueberries. Yum!

Lunch was pretty fancy! I used the panini grill to make turkey-avocado-cheddar paninis! We had carrots & grapes on the side. A few too many carrots for Kevin James who pleaded with me to put some of them back into the bag.We used the foldit Artisan flatbread I raved about the other day.

I had a few slices of apple while I was making Kevin’s after school snack. That’s right. My not pictured food today – not chips, not pop – APPLES! I also had a small bowl of cereal before my workout. I immediately put the cereal box in the pantry so I didn’t inhale three additional bowls like I always want to! :)

Check out this cranky runner girl!?!? It’s the second time in a row I didn’t have an iPod or a Garmin when I was ready to run. That makes me a crankypants!!! But I problem solved and used an app called imapmyrun + Jennifer Lopez Pandora Station to power me through. The result? 5.01 miles in 36 minutes – that’s a 7:11 pace. Holla! My hunger was a little subdued after that burst of activity so I was able to wait for dinner to cook.

Dinner was lunch’s twin! I had the panini grill out, and I didn’t want to clean it. Gross, right? But that thing is a pain to clean. And it weighs about 50 pounds. I like to make use of it when I bring it out! Turkey-cheddar-avoado panini with broccoli + oven fries. I couldn’t finish the broccoli and potatoes. I do not know why. Odd.

A little chocolate frozen yogurt to keep it real. Unbelievably small portion size for a McMillin, but I’ll take it!

I just want you to notice some absences. NO POP and NO ICED COFFEE. Good for my health, and good for Kevin’s wallet. I’m wiped. That run really did me in. So I’m calling it a night! :)

P.S. What kind of workout did you fit in today? I want to try some more outdoorsy stuff (like canoeing – haha) this summer. Kevin, please don’t take that too seriously. It was an innocent comment. And you know I will try to back out last minute!
