Saturday night I made some fudge for our neighbors and my old co-workers at the office.
I used the Creamy Chocolate Fudge recipe from Our Best Bites. A recipe I did not read very carefully…. I was supposed to use a candy thermometer! I definitely do not have a candy thermometer. And then I boiled the pot over. Big time. Not just a little bit. So I had to improvise and throw some more ingredients in! I was amazed that it ended up turning out! The ingredients definitely grossed me out a little though. Now I’m inspired to try a fudge recipe with at least slightly less questionable ingredients. And my husband just shakes his head. Sometimes he really misses the days when I would come back to the States after having been in the DR and inhale chicken nuggets and french fries!

Speaking of less weird ingredients, I decided to try a tall nonfat cappuccino at Starbucks on the way to our hike instead of my usually skinny lattes. I’ve been feeling questionable on the sugar-free syrups…. but I don’t see myself giving them up completely.
By the way, I am happy to report that I’ve been continuing to drink considerably less Diet Coke! Hooray!!! Mostly because we aren’t keeping at home. Kevin has been keeping a 12-pack in the car because he wants to drink one at work, but I’d actually have to go out to get one. And it’s starting to get cold so that’s not going to happen!! I still drink it at restaurants and occasionally at home (especially after a long run). Unfortunately, it hasn’t really been replaced with water — mostly black coffee. But — all the studies say it’s good for you. I’m still thinking water is better. :)

I have to do a sub for rowing since we don’t have a rowing machine at our gym.
Ayiyi. That 10 in lap 2 isn’t cute. I had a hard time pushing it for some reason. I need a workout buddy!! I saw a girl last night at the gym doing burpees and seriously considered asking her to be my friend. Kevin would be so thankful if I had someone else to rope into doing WODs with me.
Last night, I tried to do Saturday Rec.
Even less cute. I really don’t have the knees to shoulders skill down. I practiced it, but 50 wasn’t happening. So I had to substitute burpees. And my weights on side lateral raises kept getting lower and lower and lower. I didn’t quite make it to the 1lbers. Seriously! I saw my gym has 1lb weights! They are so tiny! I could lift them with my fat thumbs! Anyways, I feel this in my shoulders this morning. Hurts so good.

I think my outfit really helped — (knee high) compressions socks underneath capris. The compression socks really felt good though. Both of us were pretty sore after our 10 mile excursion with the elk. I’m loving my Nikes. I regret ever trying other brands. I’m going to be loyal again (for a while).

I got a lot of Facebook and IG comments saying “poor dog.” Why are people saying that!?!?!? Pippa is the princess in this house. And she gets chilly. The only thing she really objects to is “sit & stay.” Want to see the live action of her galloping in it? Yes, my Vimeo channel is completely devoted to dog videos. I watch them frequently.

Do you have a favorite fudge recipe? I liked this one for White Chocolate Eggnog Fudge, but a lot of people really hate eggnog (weirdos) so I didn’t make it for our neighbors.
