Saturday night I made some fudge for our neighbors and my old co-workers at the office.

I used the Creamy Chocolate Fudge recipe from Our Best Bites. A recipe I did not read very carefully…. I was supposed to use a candy thermometer! I definitely do not have a candy thermometer. And then I boiled the pot over. Big time. Not just a little bit. So I had to improvise and throw some more ingredients in! I was amazed that it ended up turning out! The ingredients definitely grossed me out a little though. Now I’m inspired to try a fudge recipe with at least slightly less questionable ingredients. And my husband just shakes his head. Sometimes he really misses the days when I would come back to the States after having been in the DR and inhale chicken nuggets and french fries!

This recipe for Healthier Dark Chocolate M&M Fudge looks promising!

Speaking of less weird ingredients, I decided to try a tall nonfat cappuccino at Starbucks on the way to our hike instead of my usually skinny lattes. I’ve been feeling questionable on the sugar-free syrups…. but I don’t see myself giving them up completely.

By the way, I am happy to report that I’ve been continuing to drink considerably less Diet Coke! Hooray!!! Mostly because we aren’t keeping at home. Kevin has been keeping a 12-pack in the car because he wants to drink one at work, but I’d actually have to go out to get one. And it’s starting to get cold so that’s not going to happen!! I still drink it at restaurants and occasionally at home (especially after a long run). Unfortunately, it hasn’t really been replaced with water — mostly black coffee. But — all the studies say it’s good for you. I’m still thinking water is better. :)

Ayiyi. That 10 in lap 2 isn’t cute. I had a hard time pushing it for some reason. I need a workout buddy!! I saw a girl last night at the gym doing burpees and seriously considered asking her to be my friend. Kevin would be so thankful if I had someone else to rope into doing WODs with me.

Last night, I tried to do Saturday Rec.

50 alt DB biceps curls 15/20 ea. (1+1=2)
50 knees to shoulders
50 OH triceps french press 20/35
50 side lateral raises 10/15 ea.

Even less cute. I really don’t have the knees to shoulders skill down. I practiced it, but 50 wasn’t happening. So I had to substitute burpees. And my weights on side lateral raises kept getting lower and lower and lower. I didn’t quite make it to the 1lbers. Seriously! I saw my gym has 1lb weights! They are so tiny! I could lift them with my fat thumbs! Anyways, I feel this in my shoulders this morning. Hurts so good.

I think my outfit really helped — (knee high) compressions socks underneath capris. The compression socks really felt good though. Both of us were pretty sore after our 10 mile excursion with the elk. I’m loving my Nikes. I regret ever trying other brands. I’m going to be loyal again (for a while).

I got a lot of Facebook and IG comments saying “poor dog.” Why are people saying that!?!?!? Pippa is the princess in this house. And she gets chilly. The only thing she really objects to is “sit & stay.”  Want to see the live action of her galloping in it? Yes, my Vimeo channel is completely devoted to dog videos. I watch them frequently.

Do you have a favorite fudge recipe? I liked this one for White Chocolate Eggnog Fudge, but a lot of people really hate eggnog (weirdos) so I didn’t make it for our neighbors.

2 Ingredient Valentine Fudge

My mom sent me this recipe! She knows me so well.

It’s so genius that I hate to share, but hey, I’m a giver! I brought them into the office, and I was secretly happy that nobody asked for the recipe this time. :)

2 Ingredient Valentine Fudge (via cookies&cups)

Ingredients

  • 1 (16 oz) can of strawberry frosting
  • 1 12 oz bag of white chocolate chips

Directions

  1. Prepare a 9×9 pan by spray lightly with cooking spray.
  2. Over a double boiler, or in the microwave, melt your white chocolate chips.
  3. When chips are melted, remove from heat and stir in your strawberry frosting, evenly.
  4. Spread in your prepared pan and place in fridge to set for 30 minutes.
  5. Cut into squares (or HEARTS) to serve.

Did you see those two ingredients? Do you realize that they’re in one aisle at Target. I could almost grab one ingredient with each hand while standing in one spot.

I’m a sucker for those chocolate brown eyes so Boyd got the leftover frosting container to lick out. I had to take the paper label off first otherwise he would have eaten it. Silly Boykins!

I felt Kevin’s smile for the fudge picture was a little lackluster so I told him,”Smile like you’re me on our wedding day.” It worked.

Quick mini lunch because I’m on my way to the gym! I’m checking out the interenets for a Valentine Cookie Friday idea. I don’t really want to do anything red velvet or cutout.

Easy White Chocolate Eggnog Fudge & Treadmill Multi-Tasking!

Easy White Chocolate Eggnog Fudge (via food.com)

  • 1 3/4 cups sugar
  • 1/2 cup butter
  • 3/4 cup prepared dairy eggnog
  • 1 (12 ounce) package premium white chocolate chips
  • 1/2 teaspoon grated nutmeg
  • 1 (7 ounce) jar marshmallow creme
  • 3 tablespoons Captain Morgan’s spiced rum (or 1 teaspoon rum extract)

Directions:

  1. Bring the sugar, butter and eggnog to a full boil in a heavy medium-size saucepan.
  2. Continue to boil for 8 to 10 minutes over medium heat, stirring constantly to prevent scorching.
  3. Remove from heat and stir in the white chocolate chips and the grated nutmeg, stirring until the chocolate is melted.
  4. Add marshmallow creme and the rum or rum extract; beat until well blended.
  5. Pour into a buttered 8 or 9-inch square pan.
  6. Cool at room temperature, then cut into squares
  7. Store in an airtight container in the refrigerator. May be frozen for up to three weeks.

So festive!! I decided to make this for the treat exchange for our Young Marrieds group at church. Kevin hates eggnog, and I’ve been dying to try a few eggnog recipes. They randomly took a poll last week in class to see who liked eggnog so I knew about half the people would be excited for it!! It was really simple minus the ten minutes of stirring! I was nervous it wasn’t going to set. It did. It just took a long time!!

I decided to double-soup it at Panera for lunch today after church. I always want the black bean soup, and that’s what I always have in mind when I go to Panera. But the Sonoma Chicken Stew with Dry Jack Cheese Biscuit caught my eye!! I love trying the seasonal offerings in restaurants! Soup is probably my favorite thing at Panera, partly because the calorie count in their sandwiches/salads is pretty high. Speaking of calorie counts, love that they list them on the board right next to the prices!!! It really does help you make an informed decision instead of just feeling like you’re eating healthy because you’re at Panera!!

I loved the stew, but they tricked me by adding peas. You better believe i picked every. last. one. out.

Today’s workout: 5.22 miles on the t-mill

I spent a lot of time multi-tasking on the treadmill this weekend. I’m taking the Praxis II on Tuesday. Can’t say I’m looking forward to that. Since I’ve only taught “specials” (music, P.E.) before I hadn’t been required to take it. Now I need to brush up on my science/math. Definitely not my strong areas!!!

I was actually studying while stirring the delicious eggnog fudge. Kevin was sitting on the couch in the other room, and I was asking him questions about subtracting negative numbers. After he finished answering, he was like,”That sounds like a very complicated recipe you’re making!!” Ha. Ha. Ha. I guess he didn’t realize I had my book over there. I found that my area of strength in math is DECIMALS. It’s because I’m always doing running mileage stats!! That cracked me up. Anyways. It’s Tuesday morning. I hope I pass. I think I had a pretty decent shot of passing without studying at all, but let me tell you — that science stuff was just not in there any more!! So I’m glad I’m reviewing.

We got our Christmas tree this weekend. Isn’t it darling? Hope we get to have a big real one next year, but it’ll be fun to try to keep this one alive. Especially since we’re leaving for a week!!

I got a new pair of running tights! When I was supposed to be Christmas shopping for other people!! Oops!! To be fair, I REALLY have been needing them. I only have one pair of running pants and they are like — hyperwarm. Plus I accidentally shrunk them a little bit so they are hyperwarm highwaters!! Not an effective combo.

I’m ashamed that I wore these to the grocery store — my Dominican friends would be appalled. But I just wanted to try them out!!!!! But I actually made a LIST this week so we are so golden! I’m excited!

Kevin was feeling super helpful and prepared the baked potato bar of deliciousness while I was at the gym. Meatless chili, green onion, Greek yogurt, cottage cheese, crushed red pepper, jalapeño, and teeny bit of mozz on mine! I loved it so much. We made double so we’d have some for leftovers! Woohoo!!

I really hope you had a great weekend!! It’s almost Christmas!! As soon as I have this lame test behind me, I’ll be hyper festive!! Can’t wait!

Favorite kind of fudge? Eggnog and peanut butter.

Least favorite subject in elementary school? Math. Followed closely by science. I probably hated science more in college. Favorite? English. By a lot.

Favorite thing to order at Panera? Soups!! I also liked the BBQ chicken salad they had over the summer. Not sure if that’s year round or not since we don’t really hit Panera that often. I wish they were open later, because we’re generally not ready for dinner till 8 or 9. We’re so bad.

When’s the last time you rode on a grocery cart?  I know I can’t be the only one!

Oh yeah. And do you like my blinged out blog header for Christmas? That was a colossal waste of time, but there are glitter and sequins. It can’t be helped!
