Skinny French Toast Cups + Hard Core

I promised Kevin I’d make French toast this morning, and I think the first thing out of his mouth this morning was,”Are you still making French toast?!”

Skinny French Toast Cups (via Run Eat Repeat)

First mix the following in a bowl:

2 eggs or 1/2 cup egg beaters

1 packet of Truvia and a dash of each: cinnamon, salt, vanilla

Dip 2 slices of bread into the egg mixture soaking thoroughly.I used UDI’s Sourdough.

Spray a two cups in a muffin tin with non-stick spray. Then, gently stuffy one piece of bread into each cup. Press down to make sure they are touching down. Remove from the muffin pan carefully so the “cup” stays together.

In a separate bowl mix – 1/4 c ricotta and 1/4 c cottage cheese (or all of one) with 1 packet of Truvia and dash of cinnamon. Divide the mixture between the French toast cups.

Done! So delicious. I used cottage cheese, but I put it in the blender so Kevin wouldn’t notice. He’s not a fan of cottage cheese. Weirdo. I tweaked Monica’s recipe a bit, switching sugar to Truvia.

Boyd always manages to find a perch right underneath the food I’m taking photos of… just hoping something will drop! He has no life. Lol.

My kitchen had a life today…

Oh yeah. I did some cooking & baking today. I have double refreshments tomorrow! One for church in the morning, and one for our marriage class in the afternoon. I always end up cooking eleven things at once and today was no exception. Totally ready for a bigger kitchen!! :)

Hard Core

5 rounds for time -

Um. Those overhead dumbbell runs were no joke. I had to do them on the treadmill. 4.3 was the highest I got, and even then I was starting to get a little nervous!! I wouldn’t recommend doing them on the treadmill. THe plank snatches were pretty awful too. I had to take some breaks and do jumping jacks because I couldn’t hold myself up any longer. I actually wanted to quit! That’s really not normal for me so it was definitely a lot tougher then I expected. All that arms & abs. Awesome.

I did 15lbs on the dumbbell runs and 10 lbs for about half the snatches. Then I broke down and did 5′s. 8′s would probably have been manageable, but I didn’t have them over at the apartment gym. And it was still really tough!  I finished in 29:20.

It was super hot today so we were nice to the Boykin and took him for a little swim. He’s such a high-maintenance dog. All the other dog owners stand in the shade and look at their smartphones. Not us! We have to chase Boyd from side of the fountain to the other. If we don’t catch him when he gets out, he’s always shaking off on a stranger (so annoying) or being a little overly friendly with other dogs.

Basil Spaghetti with Cheesy Broiled Tomatoes. Amazing.

Heard over dinner: “Meat is so overrated.” “This is like adult spaghetti.” So adult that it was too complicated for Kevin to put together a second helping. Lol. We also had some little homemade whole wheat bread sticks because I had some leftover dough from another project. Can I even TELL you how good our apartment smells tonight!? I love it.

Clean or messy in the kitchen? I make sure it’s clean every night after dinner, but I will admit that I like to have everything out at once. And then to clean the whole mess up later. None of this cleaning as you go along business.

Have you been swimming yet this summer? We got in the pool for at least a full ten minutes tonight. Kevin: “Are you going to swim with our kids!?!” I didn’t get my hair wet. Lol. And it was tempting to bring my iPhone into the pool. It did make a brief appearance in the hot tub. I think next time we go, we need some pool toys. I can make Kevin dive for those little sticks!

 

2 Ingredient Valentine Fudge

My mom sent me this recipe! She knows me so well.

It’s so genius that I hate to share, but hey, I’m a giver! I brought them into the office, and I was secretly happy that nobody asked for the recipe this time. :)

2 Ingredient Valentine Fudge (via cookies&cups)

Ingredients

  • 1 (16 oz) can of strawberry frosting
  • 1 12 oz bag of white chocolate chips

Directions

  1. Prepare a 9×9 pan by spray lightly with cooking spray.
  2. Over a double boiler, or in the microwave, melt your white chocolate chips.
  3. When chips are melted, remove from heat and stir in your strawberry frosting, evenly.
  4. Spread in your prepared pan and place in fridge to set for 30 minutes.
  5. Cut into squares (or HEARTS) to serve.

Did you see those two ingredients? Do you realize that they’re in one aisle at Target. I could almost grab one ingredient with each hand while standing in one spot.

I’m a sucker for those chocolate brown eyes so Boyd got the leftover frosting container to lick out. I had to take the paper label off first otherwise he would have eaten it. Silly Boykins!

I felt Kevin’s smile for the fudge picture was a little lackluster so I told him,”Smile like you’re me on our wedding day.” It worked.

Quick mini lunch because I’m on my way to the gym! I’m checking out the interenets for a Valentine Cookie Friday idea. I don’t really want to do anything red velvet or cutout.

Chunky Monkey Pancakes with Peanut Butter Syrup

Chunky Monkey Pancakes
{Banana Chocolate Chip Pancakes with Peanut Butter Syrup}
Recipe by Our Best Bites

1 1/2 C flour
3 Tbs sugar
2 tsp baking powder
1 1/2 tsp baking soda
1/4 tsp salt
1 1/2 C buttermilk *
1 tsp vanilla extract
1 Tbs canola oil
1 large or extra large egg
2 small-med ripe bananas
1/4 C mini chocolate chips (or reg. chips roughly chopped) tossed with 2 tsp flour
Cooking Spray or butter for pan

1 C maple syrup
1/2 C peanut butter

*As a substitute for buttermilk, place 1 1/2 Tbs lemon juice or vinegar in a 1 1/2 C measuring cup and then fill the remainder with milk.

Combine flours, sugar, baking powder, baking soda, and salt in a mixing bowl and whisk together. In a separate bowl combine buttermilk, eggs, oil, and vanilla and whisk well. Add the wet ingredients into the dry and mix just until moistened and combined. Place bananas in a bowl and roughly mash with a fork. Fold into batter. Add the chocolate chips that have been tossed with flour and stir.

For syrup, heat peanut butter in the microwave for 30 seconds. Add maple syrup and gently whisk to combine. Heat in the microwave for another 30 seconds, whisk, and then set aside.

Heat a nonstick griddle or skillet to medium heat. Coat pan with little butter and then pour on pancake batter. Use1/4 C batter for large pancakes (4-6″) and 2 T for kid-sized ones (2-3″). Wait until bubbles form and edges are set and then flip.

Reheat syrup if necessary and pour over warm pancakes.

My syrup was a little thick, but I didn’t want to start the disastrous cycle of adding more syrup and then more peanut butter and then more syrup.. The flavor of the syrup reminded me so much of my Grandma Mary Kay’s Nut Goody bars that she always made at Christmas. I guess the peanut + maple flavor is a little unusual so it hit me immediately. Awwwwa….

Kevin is so precious & sweet, but he has a special talent for getting ready EXTRA FAST when I am making something special for breakfast. Today he was ready a full 20 minutes earlier than usual. He just sauntered out into the kitchen like everything was normal! So then I don’t have time to finish what I’m making! It happens every time! It’s like when he can smell something good wafting into the bedroom he combs his hair 80% faster! I taught him a lesson by making him do some chores  like making me coffee and taking out the trash. Haha.

Kevin only ate 4!! That’s ridiculous. I ate only two, but that’s only because I don’t want to sugar load myself this early in the morning. My husband has no such qualms. I guess that means I don’t have to cook a thing today because we have a barrel of taco soup, about a dozen pancakes, and Cookie Friday coming up!!! I’m dying to go and run about 15 miles, but my legs are already sore and I want to be relatively “fresh” tomorrow morning.

So I’m going to go drink about 5 more of these and clean the apartment top to bottom. The kitchen floor is a little bit sticky. I miss my cute coffee mugs. I seriously considered packing one in my suitcase, but I didn’t want to break it. I also miss spilling my coffee while teaching my middle school class every day. That was fun.

Our New Crib

By popular demand. Here’s a little mini-tour of our private resort temporary apartment. We’ll be staying here for 60 days or as long as we can trick Kevin’s company into footing the bill while we hunt for housing. It was tricky to take pictures because, you know, it’s a one-bedroom, but I did my best for you.

Obviously I’m going to lead with the kitchen! The appliances are gorgeous and the countertop definitely rivals our old house in Winona! I just wish I had all my dishes and baking supplies here!

I was happy to find that it definitely has adequate kitchen supplies. The only SERIOUS thing it’s missing is a cookie sheet. I guess most high-powered executives don’t make chocolate chip cookies on Friday mornings!

Aren’t they cute? A little pasta basket + some Starbucks coffee! My ever-so-wise husband said,”Oh well, it’s not whole wheat pasta, but at least we can use the sauce sometime!”

I couldn’t believe there were two tvs in a one-bedroom apartment! More bathrooms than bedrooms = awesome!! More tvs? Not so much!

Sweet closet! I couldn’t show the whole thing, but let’s just say it’s almost as big as the second bedroom upstairs in our old house because it goes deeper both directions. Hooray!

I’m thrilled we have a washer/drier because workout clothes get smelly FAST!

And now for my FAVORITE amenity!

A night light! I love it. The apartment also offers a lovely pool and more importantly, A GYM! I’ll share some of those details with you later, but I’ve had so many request for photos I thought I’d share. It’s a HUGE complex, but it’s super silent. In fact, I said to Kevin today that I thought it might be haunted since we’ve hardly seen anybody in the hallways! We agreed that’s impossible because it’s too new. Haha. The location is absolutely fabulous within easy walking distance to Kevin’s office. We totally feel like we’re on vacation. Probably moreso me than Kevin since he has to go to work!!

Time to start applying for jobs! :)



Kevin’s First Cookie Friday

Here’s a quote from my poor, deprived husband (yay), “Nobody has everrrr made me monster cookies before!” So tragic. So we decided to jump start our Cookie Friday tradition (borrowed from Tina at Carrots ‘n’ Cakes) with these Monster Cookies with a recipe from Brown Eyed Baker. I used both white and chocolate chips, regular and PB M&Ms. The PB M&Ms were, of course, far to large for this sort of endeavor and split at the seams. But who can resist using them anyways?

This is what our sister-in-law, Lisa, has dubbed Kevin’s elf face. I love it to pieces! He just gets so excited about yummy cookies!

While I was whipping up the cookies, Kevin James was preparing a late luncheon for us. Check out these awesome mini pizzas we made using 100-calorie flat bread. Hello, portion control! One side is pesto sauce and the other is red sauce! They were amazing!

I’m off to relax with my super cute husband. Do you know that when I was editing the photo of the monster cookies he suggested I use the “red eye reduction” feature? So hilarious. I bet that would’ve gone over really well with the M&M’s!
