My Mac Is Back

I’m so happy. I went almost a full 7 days without it – including a holiday weekend!!!

The dogs are always near – lol. They replaced the logic board, top case assembly with battery, and bottom case! I’m not sure exactly what all of that is, but I’m happy about it. I just got it at the end of August, and it had issues on and off. I finally took it in when the screen started flickering. But it was all free to fix so I’m a happy camper! My Macbook is so shiny!! Yay!!!!!!

I learned from this experience that I’m not a huge fan of iPads. I had Kevin’s at home during the day, but I barely touched it. I like to type too much I guess.

Pippa and I thought this tree was cute when we were out running today. :) We did the most rambling little route, but still managed to end up with about our usual morning mileage of around 3.16 miles.

I was busy teaching today so I went to the gym this evening with Kevin. I did 2 miles on the stairs, and then this little WOD:

15 Minutes AMRAP –

I made it through 8 rounds on the buzzer! :)

I turned the carrot cake muffins I made last night into cupcakes! All you do is add some cream cheese frosting. I have no recipe. For any of it. The muffins were more or less “healthy” – made with unsweetened applesauce, crushed pineapple, ww pastry flour, etc. The frosting? Well, at least the cream cheese was 1/3 less fat!

I just want to eat cupcakes and play on my new computer!

Is now a good time to mention that I joined the GPP The “Holiday Hold Em” Challenge? I convinced Kevin to do it too… it’s a really smart idea. Our half marathon coming up this Saturday has really been helping us so far with the holiday eating & exercise!

Are you lost without your computer?

Do you like to unplug? I know this does not sound cool to say, but I’m not a fan of unplugging. I’m just not. I like to run with a Garmin, sleep near my iPhone, and hang with my Macbook. I even sent a lot of emails during our 12 mile outdoor run last weekend. Some two-handed texting!  My Macbook and whatnot are material possessions, and I don’t need them to make me happy — but I enjoy them. Plus I have spent basically the last 10 (wow!) years living away family and friends so it helps me stay connected. I got enough involuntary unplugging when I lived in the DR.  Haha. And yet ANOTHER reason to never go camping. Kidding. Sort of. :) I guess maybe it’s something I need to work on. A little.

Leash Running Technique + Otter Dogs

Are Mondays the worst in your gym?

I’m a little nervous about what winter is going to bring, but so far it’s ONLY Monday nights where the gym looks like this. Kevin managed to snag a treadmill right away, but I was stuck on the arc trainer for a little bit. People actually jumped in front of me THREE times to get one. Finally, Kevin stepped in and saved one for me!! Haha. I think he just wanted to get out of the gym faster.

I had a speed workout marked on the calendar for today so we chose to run 6x400m with 90 seconds of rest in between. I jogged in between the quarters and ended up with 2.27 miles in 16:46!  Still a 7:23 pace overall.

Now I have a question for those of you who run with dogs.

Ever since I started running with Pippa Cordelia, I’ve had problems with my right shoulder and my right hip. Isn’t that ridiculous?

I have problems with my hip if I run with the leash around my waist (like the above picture), but it’s the best way to keep the little princess under control. It took me a few weeks to figure out that was why my hip was bothering me. I’m not very quick to catch on! When we ran the 10k in the park on Saturday, I held the leash only in my right hand. But then I woke up this morning feeling like I ripped my right shoulder out of place. She wears a gentle leader, but you still have to keep a pretty tight grip – especially if there are dogs or squirrels around! My arm is pretty messed up today. I don’t know if I could even do burpees!! Haha. So I need to figure out a better system!

Today seemed like a great day to make muffins! I used this recipe for Cranberry Pumpkin Oatmeal Muffins. I don’t really like putting sugar in things like that so I decided to use a banana instead. It worked out! They were also mostly devoid of cranberries, except for a raisin or two on top.

Meanwhile my dogs were sleeping like otters. Holding hands so they wouldn’t drift apart.

Okay, the truth is the peppy Pippa woke up first and wanted to play with grumpy Boyd. I made her stop pestering him, and she ended up just falling back asleep!

I made a big pot of chicken & rice soup for dinner. I didn’t use this recipe, but I was I was inspired by it to add some curry powder and dill for flavor.

So, I’m really not into iPhone/iPad games, but I love Letterpress!

Kevin and I just finished our first game. I guess we didn’t realize the rule that the game would be over when all the tiles were colored. Oops. So Kevin won. I’ll get him next time!!!!

Any leash running tips? Maybe it would help if I didn’t run with keys and iPhone in my other hand. It’s a little tricky!

Do you play Letterpress? Or another favorite iPhone game? This is the first one I’ve played in a loooong time. Little kids always ask me for a game to play, and I never have anything. Think this will work? :)

P.S. Did you see Pippa’s kitten sister, Pippa?!

Cardamon Flax Muffins!

Oh these are the best!!! They definitely deserve the exclamation point in the title!

Can you guess how many of these we’ve eaten so far? C’mon. Guess!!

Yeah. I’m not proud, but we ate a full dozen between Tuesday night and Wednesday lunch. Less than 24 hours!! Oops! Tuesday night dessert, Wednesday breakfast, and Wednesday snack while we’re waiting for lunch!! For that reason I chose not to calculate the calories in this recipe, but it’s got some pretty decent nutritional info – at least for a muffin!

Cardamon Flax Muffins (adapted from Macheesmo)

Mix together:

  • 1 Cup all-purpose flour
  • 1/2 Cup whole wheat flour
  • 1/2 Cup flax meal
  • 1 Tsp baking powder
  • 1 Tsp baking soda
  • 2 Tsp cardamon
  • 1 tsp cinnamon
  • 2 eggs
  • 1 Cup nonfat plain Greek yogurt
  • 3 Tbsp vegetable oil
  • 1/2 Cup skim milk

Fill up the muffin tins somewhere between full and 3/4 full. Bake at 375 degrees for about 15-20 minutes. Test them by inserting a toothpick in the center of a muffin, and if it comes out clean then your muffins are ready!

I love muffins. Since you can bake them in papers, it reduces the clean-up. Plus there’s no frosting or glaze business to deal with. You have to admit – that recipe is pretty wholesome. The cardamon was my little idea, and it just takes it to a whole new level!! And did you notice my favorite ingredient – the nonfat Greek yourt? So smart.

The muffin man!!!!

And the muffin girl!!

I seriously considered making these again tonight, but I get reeled into baking something for Kevin’s work pot luck tomorrow. And someone was already bringing muffins.

We served them with Melt spread and a little pool of honey for dipping. I’m so glad Kevin accidentally bought that flax meal. I’ve made more fun things with it! I think I’m going to have to keep stocking it!

Favorite muffin? I also have a certain inside-out carrot cake muffin planned for sometime in thevery near future. Though that may not even have the appearance of health! ;)

Favorite poem? Just curious if you know any beyondDo You Know the Muffin Man? Does tha qualify as a poem – or just a song?

P.S. My mom used to always make some kind of cardamon muffins! Mom, I know you’d LOVE these!!!!! I know you won’t have flax meal on hand, but it’s not that expensive. Or you could sub more ww flour in a pinch!

I’m Not A Morning Person

I find watching videos online super irritating, but this one’s only 13 seconds, and a true gem!

Kevin James was mocking me this morning over the breakfast table. Of course, my baby iPhone was right next to my cereal so I demanded an instant replay. I’m always thinking of you guys.

Are you a morning person? Let me detail my intense morning system for you.

  • First alarm: Don’t even hear it.
  • Second alarm: Don’t even hear it.
  • Third alarm: Kevin gets up, and I take the opportunity to sprawl out over the entire bed.
  • Kevin gets out of the shower: I roll over to my right side.
  • Kevin says,”Okay, I just have to iron my shirt, and then I’m going downstairs,” : I roll over to my left side.
  • Kevin says,”I’m gonna let Boyd out.”
  • I make cranky baby noises as exemplified in the video above.
  • I roll out of bed and try to get my eyes open wide enough so I won’t fall down the stairs again.
  • I get breakfast ready…

I know, right? How does Kevin even get to make fun of me when I make stellar breakfasts like these strawberry-blueberry-applesauce muffins. This recipe was inspired by Joy the Baker, and well, was quite obviously baked last night while Kevin Kreisel was doing old man work in the basement. After I sent my comedian husband on his merry way to work, I had a nice walk ‘n talk with my sister-in-law. And we bonded in the special way that on sisters-in-law can. :)

I was attempting in vain to take a picture of this lovely neon outfit I selected for today’s run. But check BOYD THE BOYKIN lurking the background. He actually started PAWING at the door because he wanted to come along. I was planning on ditching him completely because he’s been such a royal pain lately. But I thought maybe he would be GRATEFUL so I took him out for 2 miles. Not so. He was a sneaky little jerk, and I ended up pulling him half the way. I think Boyd needs the C25k program (Couch to 5k) to earn his way as my running buddy.

Here is Boyd at a stop sign. I do find the full body stretch to be adorable, but HIGHLY UNNECESSARY after running only a mile.

Fun fact: Boyd is a sweat licker. It’s pretty gross. He’s also matted with slobber again even though we just gave him a bath! Boo! That means really the only time I want to be this close to him is when I’m equally g-ross!

No thanks to Boyd, I put in 5.2 miles in 37:55 – that’s a 7:17 pace. Okay. Maybe a little thanks to Boyd. I was actually running a little faster because he was making me so mad with his bad behavior. He gets into less trouble when he can barely breathe. I’ve actually found that to be true with high school P.E. students as well. :)

Right now I’m waiting from my perch upstairs to see if my new workout dvd comes in the mail. I can’t wait to try it out, and I’m hoping it comes before 4. We’re heading over to Wabasha tonight (yay!!!), and I have to get some things ready for an EPIC FIRST BIRTHDAY PARTY that is coming up tomorrow. I can’t wait.

Are you a morning person? Well. I was when I lived in the DR. I could call Kevin at 4am his time and be all chipper. That was fun. Wait. No that was awful. LDRs are the pits!!!

What’s a good birthday gift for a 1-year-old boy? Feel free to chime in, Deidre. :)

What Gets Me Out of Bed in the Morning

I’m not a morning person. I despise alarm clocks. I don’t like putting my feet on the floor. I’m always cold and cranky. But I’ve noticed that I’ve been getting up more easily this school year. I was discussing this mundane observation with my roomate the other day and we were hypothesizing that it’s due to the fact that I now eat breakfast every single day. Ok, so maybe the iced coffee helps too. It’s a highly healthy habit! You should try it.

Here are some dreamy combos and inspiration that will make all your breakfast dreams come true!

Breakfast Pizza

Breakfast pizza: I love this idea because I generally crave more “lunchy”/salty things at all times of day.
Ultimate Breakfast Pancake

The Ultimate Breakfast Pancake. Not for me, but I would definitely make it to impress someone. Like my hottie future husband.
Oatmeal in a Jar

Oatmeal in a jar. I’m definitely into the idea of making breakfast once for the entire week. Mornings are hectic, and I need every last second of sleep. Or at least my students would prefer that I got every last second. :)
Chai Coffee Cake

Chai Coffee Cake. I imagine this one would be great for playing hostess to weekend guests.
Strawberry Oat Muffins

Strawberry Oat Muffins from FitSugar. A healthy breakfast on the go.
Cinnamon Toast the Right Way

Cinnamon Toast the Right Way. Because when I have my baby sisters sleep over, I’m sure they won’t touch anything that’s not made out of white bread and sugar!
Iced Coffee

Iced Coffee (with a how-to make it at home tutorial from Tina). Certainly the most important component of my breakfast! I just finished off my glass two seconds ago. :(

What’s your favorite breakfast?

My ultimate dream breakfast would probably be iced coffee and YogenFruz. That will probably change when I’m living somewhere that it’s not 85 degrees before 8AM.

P.S.Two more days until Spring Break!!!
