Paleo Pumpkin Turkey Chili + Pumpkin Pie Brownies

Hello.

How’s your Monday (or Tuesday!) going?! I tackled some major cleaning (AKA dog hair removal) in the house and tried two amazing new pumpkin recipes.

I was definitely in winter mode when I planned the menu for this week. But then today it was in the seventies and oppressively sunny — I even got a little red when I was out running with Pippa. Oops!!!

Paleo Pumpkin Turkey Chili (adapted from here)

  • 1 lb lean ground turkey
  • 1 yellow onion, diced
  • 1 green + 1 red bell pepper, diced
  • 2 tsp coconut oil for sautéing
  • 1 can pumpkin puree
  • Simply Organic Spicy Chili seasoning packet
  • 2 cans crushed/diced tomatoes
  • Optional — add some chicken/vegetable broth for desired consistency.

Sautée onions and peppers. Add ground turkey and cook thoroughly. Add remaining ingredients and simmer!

Simple, right? We loved it. I think we’ll alternate between this recipe and PaleOMG’s Smoky Bacon Turkey all winter.

I knew Kevin would be looking for dessert.

I made this recipe for Pumpkin Pie Brownies, and they are so perfectly soft and gooey. I cut the pan into 16 so according to my calculations, they’re a bit over 100 calories a piece. By the way, I did use just regular old sugar instead of agave or other sweetener. I was worried about getting a weird consistency if I used a liquid sweetener.

Tried this brand of Greek yogurt today — because it was on sale at Target this week. It was okay. Not my Fage!! It tasted more like regular nonfat yogurt than the creamy Greek versions I’m used to now!

I tried a new flavor of Sabra hummus — Tuscan Herb. It was so good as a salad dressing. Underneath there, I had romaine, broccoli slaw, and cabbage slaw!! Doing a little damage control after the pizza & pumpkin candies!! Pepitas were another fun topping. I also had some sweet potato fries on the side (obviously).

Today’s WOD:

  • 3.15 miles walk/jogging with Pippa — part of the time spent talking on the phone to my sister, Hannah (YTB!)
  • 2 miles on arc trainer
  • 2.4 miles hills on treadmill

I did cardio machines because I saw Blonde Ponytail post that CrossFit Games would be on ESPN2. And Kevin was more than happy to alternate between football & baseball!

What’s your favorite cleaning chore? Washing dishes. There’s always an end in sight. Not so with removing dog hair from the floors!

How many pics do you take each day? I think today’s import was 84. The dogs were super cute. And I chose to take dinner pictures in really bad lighting. Lol. I think a typical day might be 50? That’s probably a modest estimate.

Apple-Raisin Bread Pudding in Ramekins + Pinhole Press

How I missed my ramekins!! I came up with the perfect compromise last night! My favorite dessert is my madre’s bread pudding. Kevin loves apple crisp. A lot. That’s right, I remixed them together.

I diced up one Honeycrisp apple (that’s where the awesome Honeybear sticker came from!) and divided it among four ramekins. On top of that I put the oldest, nastiest bread I had. I just ripped it up and stuffed it on top. A quick Google of my blog reveals that bread was from SEPTEMBER 21, the day I made some super gross French toast, but there was no mold!! However, I didn’t even have to toast the bread. It was that hard.

Next, I mixed in some raisins. I whisked together two eggs and approximately a quarter cup of skim milk and poured it over apple/bread combo. We finish by drenching the whole thing in cinnamon & brown sugar. Yum.

Ahhh… I was so happy to be in the elevator ALONE! I hate riding in elevators crowded with strangers. I’m far from claustrophobic… I’m just shy. And why don’t people have the decency to look distracted by their smartphones? Instead they make idle chatter about the weather or stopping at every floor. Blah, blah, blah! :)

Snacking at my desk wasn’t so simple. I’ve told you guys before that my desk is in an EXTREMELY VISIBLE area. In fact, someone visiting the building the other day was championing for me that they need to give me an actual cube. Being a hallway dweller is actually worse than being a cube dweller. I promise! I just needed a snack! But it was so noticeably crunchy that I had to eat it super slow. Maybe I should’ve just licked out my garlic Sabra hummus. You know I wanted to! :)

I always feel so well-behaved because I rarely give in to sweets, but salts have their consequences too! I could fit more chips than that it my little fist! Haha.

I got some VERY EXCITING MAIL. My wedding thank yous from Pinhole Press! They are stunning. I love them so much I want to thank myself. Lol. I want to show you, but 10 out of my 12 readers were at our wedding so they’ll be getting one in the mail. Later!

Last day without internet! I’ve been hanging out in the clubhouse again so I can plan recipes for all the baking I have to do this weekend. It’s LOADS of baking. Very festive fall baking. Be excited.

Also, I bought Kevin’s first gift for the Advent mini-gift chain!  Only 3 left to find! So fun!

Creamy Avocado Potato Salad + 5


Here’s one for the mayo haters!! In this recipe, plain nonfat Greek yogurt replaces any mayo/mustard. Greek yogurt is magical!  I was inspired by a recipe on the food network, but tailored it to my taste and to make it healthier.

Creamy Avocado Potato Salad

Ingredients:

  1. 5-6 medium-sized potatoes, boiled (or microwaved)
  2. 2 avocados, diced
  3. 2/3 cup Fat Free Greek yogurt
  4. Red onion, diced
  5. Cilantro
  6. Jalapeños (optional)
  7. Salt & pepper to taste

Directions: Boil & peel potatoes. Dice potatoes and avocados.  The portions on ingredients 4-7 are really based on your personal preference. Try to keep a good balance so none of the flavors is overwhelmin.

Remix ideas: If you don’t have Greek yogurt on hand you may try tossing the salad with some olive oil. Another option I’d like to try is a potato salad with hummus. You might also add some additional vegetables like French cut green beans or asparagus. I also once made a delicious potato salad with pesto.

On the side I had a flatout bread. I threw it in the oven to make it crunchy, and then cut it up with a pizza cutter. My favorite Sabra hummus for dipping!


I forced Kevin to eat the leftovers from last night’s Veggie Fried Rice. I didn’t want any more peas!

Are you a potato salad fan? Mustard? Mayo? When I was younger I would just eat the boiled potatoes with the salt & pepper before Mom or Grandma would add the nasty mayo stuff!!  The only condiment I really tolerate is BBQ sauce. Or ranch dressing –  if I’m on a foodcation.

I <3 Cooking Light + Farfalle with Spinach, Garbanzo Beans, & Feta

In case you haven’t noticed, I love to cook. However, I don’t love to cook when I’m starving. I have a serious hunger-induced anger management problem. Kevin and I are not morning people which means we put off going to the gym until the evenings. That works for us right now because we are losers without children or social lives. :) Extremly happy losers. Anyways, my point here is that we eat dinner on Dominican time – around 9PM. Even later if we have errands to run. By that time I’m totally not in the mood to start Googling recipes!

Cooking Light
to the rescue!

The 1 List, 5 Meals feature is awesome for people who are not natural-born listmakers. I struggle even with my baby iPhone by my side! I chose the Vegetarian Week mainly because I’m a picky eater. Most of the other weeks include some type of seafood (YUCK!!!!) or other red meat that I’m not fond of. Plus the huge pot of taco soup kinda wore me out on meat!

Farfalle with Spinach, Garbanzo Beans, & Feta

Ingredients

  • 8 cups coarsely chopped spinach
  • 8 cups hot cooked cavatappi (about 12 ounces uncooked spiral-shaped pasta)
  • 1 cup (4 ounces) crumbled feta cheese
  • 1/4 cup olive oil
  • 2 tablespoons fresh lemon juice
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 (19-ounce) cans chickpeas (garbanzo beans) or other white beans, drained
  • 4 garlic cloves, crushed
  • Freshly ground pepper
  • Lemon wedges (optional)

Preparation

  • Combine first 10 ingredients in a large bowl; toss well. Garnish with lemon wedges, if desired.

Don’t you love the preparation steps for this one? My tweaks: swapped for farfalle pasta, swapped lemons for limes, and I only used one can of chickpeas.

On the side: leftover foccacia with hummus.

Sabra Roasted Garlic Hummus is my FAVE! Kevin thinks it’s gross that I can eat with a spoon. But it’s sooo yummy!

Plain chickpeas? Now that’s a different story. I tried my best not to pick them out of the pasta, but I still ended up with this little pile. Kevin threatened to put it in a Ziploc bag and make me eat it later. Hehe. Lucky for me I’m the one who does the dishes! :P

By the way, I think I could deal with the realities of winter if I could get my hands on Kate’s Burberry trench. I’ve been dreaming about it for no particular reason. I’ve seen some copycats at NY&Co. and Express, but they have sold out extremely quickly in my size. Seriously. Within days. I know my online shopping. C’mon, ladies. Wait for the sale price!

What’s your favorite kind of hummus? I said it. Sabra Roasted Garlic. I don’t even like to try other kinds because I’m always disappointed.
